1 can red beans, drained and rinsed
1 can black beans, drained and rinsed
1 can white beans, drained and rinsed
2 bunches scallions, sliced
1 red bell pepper, diced
1 green bell pepper, diced
1 jalapeno, minced and seeded
2 large tomatoes, seeded and diced
2 limes
5 cloves garlic, minced
1/4 cup olive oil
1 teaspoon cayenne pepper
1 teaspoon chili powder
Tabasco
Salt
Cilantro

Steps:

  • In a large bowl add beans, scallions, red and green peppers, jalapenos, and tomatoes. Toss to combine. In small bowl whisk together juice of limes, garlic, olive oil, cayenne, chili powder, a dash of Tabasco and salt. Pour over bean mixture and toss to combine. Top with cilantro and serve.

1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can cannellini beans, rinsed and drained
1 (15 ounce) can kidney beans, rinsed and drained
4 green onions, chopped
1 celery, thinnly sliced
1 tomatoes, chopped
2 tablespoons green chilies, canned and chopped
1 cup salsa
1 tablespoon lime juice
1 teaspoon chili powder

Steps:

  • Combine beans, onions, celery, tomatoes and chilies in a large bowl. Place the salsa in a small bowl or jar. Add the lime juice and chili powder. Mix well.
  • Pour the salsa mixture over beans. Toss to mix well. Cover and refrigerate for at least 1 hour to allow flavors to blend.
  • HINT: Use different kinds of beans to vary the taste of this delicious salad.

2 Tbsp chopped green chilies
1 Tbsp lime juice
1 15 oz can cannellini beans, rinsed and drained
4 sprig(s) chopped green onions
1 medium chopped tomato
1 c mexican salsa, mild or medium
1 tsp chili powder

Steps:

  • 1. Combine the beans, onions, celery, tomato, and chilies, in a large bowl.
  • 2. Place the salsa in a small bowl or jar.
  • 3. Add the lime juice and chili powder.
  • 4. Mix well.
  • 5. Pour the salsa mixture over beans.
  • 6. Toss to mix well.
  • 7. Cover and refrigerate for at least an hour to allow flavors to blend.
