RASPBERRY TREASURE DREAM BARS



Raspberry Treasure Dream Bars image

This is a delicious bar cookie with a raspberry and chocolate layer between a shortbread bottom layer and a crumb topping top layer. These are Christmas tradition at our house.

2 1/2 cups flour
1 cup sugar
1 cup butter, chilled and cut into chunks
1 -2 cup raspberry jam
1 -2 cup milk chocolate chips
1 1/3 cups flour
1 cup butter, chilled and cut into chunks
1 cup sugar
1 cup pecans, chopped super fine

Steps:

  • Combine shortbread layer ingredients with a fork or food processor until crumbly.
  • Press into the bottom of a buttered 9x13 baking dish.
  • Bake for 20-25 minutes at 350*, until lightly browned. Remove and let cool for 10 -15 minutes.
  • Then spread the jam over the baked shortbread layer.
  • Sprinkle chocolate chips over jam layer.
  • Combine Crumb topping ingredients with a fork or food processor until crumbly then sprinkle over chocolate chip layer.
  • Bake at 350* for 15-20 minutes. Until top layer is lightly browned.

A co-worker gave me this recipe about 28 years ago. I think she found it in a magazine around the holidays. My kids like having them on the Christmas Cookie Tray. It wouldn't be Christmas without them for my oldest. (The other kids have their favorites.) This is a bar cookie with cherries, nuts and chocolate chips

1/2 cup butter, room temperature
1/2 cup sugar
1/2 cup brown sugar
2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 teaspoon vanilla
2 eggs
6 ounces chocolate chips (I like semisweet.)
1 cup maraschino cherry, drained and chopped
1 cup chopped nuts (I like walnuts or pecans.)
2 cups powdered sugar
2 tablespoons soft butter
2 -3 tablespoons milk
1/2 teaspoon vanilla
1/2 unsweetened chocolate square

Steps:

  • Preheat oven 350 Grease and flour 15x10x1" jelly roll pan.
  • Cream butter, white sugar and brown sugar.
  • Add flour, baking powder, salt, milk, vanilla and eggs.
  • Blend at medium speed until smooth.
  • Stir in cherries, chocolate chips and nuts.
  • Spread in pan.
  • Bake 25-30 minutes until lightly browned.
  • Icing: combine powdered sugar, butter, milk and vanilla.
  • Spread on warm bars.
  • Drizzle 1/2 square melted unsweetened chocolate over bars.
  • Cool and cut.

2 cups all-purpose flour
1/2 cup sugar
1/2 cup firmly packed brown sugar
1 1/2 teaspoons baking powder
dash salt
1/2 cup margarine or butter, softened
3/4 cup milk
1 teaspoon vanilla extract
2 eggs
3 bars (1.45-oz) milk chocolate candy, cut into small pieces
1 cup maraschino cherry, drained, halved
1 cup coarsely chopped mixed nuts
ICING
1/4 cup butter
2 cups powdered sugar
1/2 teaspoon vanilla extract
2 to 3 tablespoons milk

Steps:

  • Heat oven to 350°F. Grease and flour 15 x 10 x 1-inch baking pan. In large bowl, combine all bar ingredients except chocolate, cherries and nuts. Blend at medium speed until smooth, about 2 minutes. By hand, stir in chocolate, cherries and nuts spread in greased and floured pan. Bake at 350°F. for 25 to 30 minutes or until light golden brown.In small heavy saucepan over medium heat, brown butter until light golden brown, stirring constantly. Remove from heat. Stir in powdered sugar and 1/2 teaspoon vanilla. Add 2 to 3 tablespoons milk blend until smooth and of desired spreading consistency. Spread over warm bars. 1st layer:
1 C. flour
1/2 C. butter
1/4 C. sugar
2nd layer:
2 C. graham cracker crumbs
1 t. baking powder
1/2 t. salt
1/2 C. chocolate chips
1/2 C. pecans, chopped
1 can sweetened condensed milk
3rd layer:
1 C. butter
3 C. powdered sugar
2 t. vanilla

Steps:

  • Mix 1st layer ingredients together well. Pat into well-greased 9 x 13 pan. Bake at 350 degrees for 30 minutes. Mix 2nd layer ingredients together well. It is very thick. Spread over 1st layer using wet hands. Bake at 350 degrees for 25 minutes. Beat 3rd layer ingredients together. Spread over cooled bars. Refrigerate. Allow to warm to room temperature when serving.

1 cup all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
4 eggs
1 ½ cups white sugar
¼ cup milk
1 teaspoon vanilla extract
1 cup wheat bran
1 ½ cups dates, pitted and chopped
1 cup chopped walnuts
⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 inch square baking pan.
  • Combine flour, baking powder and salt and set aside. Separate eggs and beat together egg yolks and sugar until thick. Beat in milk and vanilla extract. Gradually blend in flour mixture. Fold in bran flakes, dates and nuts. In a large bowl, beat egg whites until stiff but not dry and fold into date mixture.
  • Spread batter evenly in prepared pan. Bake for 15-20 minutes until top is lightly colored. Leave in pan and cool on wire rack. Cut cooled dough into 1 inch strips and sprinkle with confectioners' sugar.
