These rollups are always a HUGE hit with the kids as well as the adults. A creamy, cheesy salsa mixture provides the filling. They are easy to make and may be prepared in advance.

1 (8 ounce) package cream cheese, softened
1 cup sour cream
1 (1 ounce) package dry fiesta-style ranch dressing mix
1 cup chunky salsa
1 ½ cups shredded Cheddar cheese
10 (10 inch) flour tortillas

Steps:

  • In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa and Cheddar cheese. Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve.
  • To serve, slice the chilled, rolled tortillas into 3/4 inch slices and arrange on a large serving platter.

2 (8 ounce) packages cream cheese, softened
½ cup sour cream
4 green onions, chopped
1 (1 ounce) package taco seasoning mix
14 (10 inch) flour tortillas

Steps:

  • Mix cream cheese, sour cream, green onions, and taco seasoning in a bowl until well blended. Spread a thin layer of the cream cheese mixture onto each tortilla. Roll each tortilla tightly to create a long tube. Spread more of the cream cheese mixture on the edges of the tortilla to seal. Freeze rolls on a baking sheet for 20 minutes for easier slicing. Cut each roll into 1-inch pieces and thaw before serving.

Two 8-ounce blocks cream cheese, softened
1/4 cup jarred pesto
2 burrito-size spinach tortillas
2 burrito-size whole wheat tortillas
2 burrito-size jalapeno-Cheddar tortillas
1 cup spinach leaves, chopped
One 6-ounce jar marinated artichoke hearts, chopped
1/4 cup sliced green olives
1/4 cup sliced sun-dried tomatoes
4 slices Swiss cheese
8 large slices pepperoni
8 large slices salami
8 large slices spicy capicola
4 slices pepper jack cheese
1 cup arugula
6 mini sweet peppers, slice thin
1/2 cup chopped hot cherry peppers

Steps:

  • For the base spread and tortillas: Mix together the cream cheese and pesto until well combined. Lay out the spinach, whole wheat and jalapeno-Cheddar tortillas and divide the cream cheese mixture among them. Using a spoon or offset spatula, spread the mixture all the way to the edges of each tortilla.
  • For the veggie pinwheels: Evenly distribute the spinach over the top of the base spread on the spinach tortillas. Arrange the artichokes, green olives and sun-dried tomatoes over the spinach. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
  • For the meaty pinwheels: Shingle the cheese, pepperoni, salami and capicola onto the base spread on the whole wheat tortillas, slightly favoring one side. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
  • For the spicy pinwheels: Divide the pepper jack between the jalapeno-Cheddar tortillas topped with the base spread. Divide the arugula, sliced peppers and chopped cherry peppers between the tortillas. Roll up the tortillas tightly and individually wrap in plastic. Refrigerate the rolled tortillas for at least 2 hours and up to 12 hours.
  • Unwrap and slice each tortilla into 1-inch segments/pinwheels. Arrange on a platter and serve.

Everyone has their own take on Tortilla Roll-ups and each one looks good. This is mine, have made it for many years. Hope you try and enjoy.

1 lb good sausage
2 pkg 8 oz cream cheese, softened
1 can(s) chopped green chilies (flat can)
1 small onion, minced (about 1 1/2 tbsp)
1 jar(s) chopped pimentos (small jar)
1 c grated cheddar cheese
1-2 dozen flour tortillas
salt and pepper to taste

Steps:

  • 1. Cook sausage, mashing into very small pieces. Drain. Combine with cream cheese until well mixed. Add all other ingredients and mix well. Warm tortillas a couple at a time in the microwave (don't leave long, they will be hard). Spread a heaping tablespoon of mixture on the warm tortilla and spread all over, roll up like jelly roll and place in pan, seam side down. Continue until all are rolled. I like to cover mine and refrigerate over night, they cut better. But if you don't have time that is ok. Slice into 3/4 inch slices and place on plate. Continue until all are sliced.

This is a recipe I've been making for years and my family really enjoys it. I got the recipe from my mother-in-law.

1 1/2 lbs sweet Italian sausage
2 cups cottage cheese
2 tablespoons flour
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon garlic powder
3 cups spaghetti sauce
10 (8 inch) white flour tortillas
2 cups mozzarella cheese, shredded

Steps:

  • Remove casing from sausage; cook sausage in skillet and drain off grease.
  • Stir in cottage cheese and add the flour.
  • Add the oregano, basil and garlic powder and 1/2 of the spaghetti sauce.
  • Divide the meat sauce mixture evenly among the 10 tortillas.
  • Roll up tortillas, seam-side down, and place in a 13x9 inch baking dish.
  • Pour remaining meat sauce over the tortillas.
  • Bake covered for 35 minutes at 350 degrees.
  • Uncover, sprinkle cheese on top and bake about 5 or 10 minutes more until the cheese melts.
