Kosher salt
Two 9-ounce packages cheese tortellini
1 tablespoon unsalted butter
1 small shallot, finely chopped
1/2 cup canned pure pumpkin
Pinch of freshly grated nutmeg
1 1/4 cups heavy cream
1/4 cup grated Parmesan cheese, plus more for topping
Freshly ground pepper
Chopped fresh parsley, for topping (optional)

Steps:

  • Bring a large pot of salted water to a boil. Add the tortellini and cook as the label directs. Reserve 1/2 cup cooking water, then drain the pasta.
  • Meanwhile, heat the butter in a skillet over medium-high heat. Add the shallot and cook, stirring, until slightly soft, about 2 minutes. Add the pumpkin and nutmeg and cook, stirring, 1 minute. Stir in the cream and bring to a low boil. Reduce the heat to medium low; simmer, stirring, until slightly thickened, about 5 minutes. Stir in the cheese and cook until thick, about 1 more minute. Season with salt and pepper.
  • Add the tortellini to the skillet and toss with the sauce, adding some of the reserved cooking water to loosen, if needed. Divide among bowls and top with more cheese and parsley.

2 packages (9 ounces each) refrigerated cheese tortellini
1 tablespoon butter
3 tablespoons finely chopped onion
1 cup canned pumpkin
Pinch ground nutmeg
1 cup half-and-half cream
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon minced fresh parsley
Additional grated or shredded Parmesan, optional

Steps:

  • Cook tortellini according to package directions; drain, reserving 1/2 cup cooking liquid. Meanwhile, in a large nonstick skillet, heat butter over medium heat. Add onion; cook and stir 1-2 minutes or until tender. Add pumpkin and nutmeg; cook and stir 1 minute. Stir in cream; bring to a boil. Reduce heat to medium-low; simmer, uncovered, 4-5 minutes or until thickened, stirring occasionally. Remove from heat; stir in cheese, salt and pepper., Add tortellini; toss with sauce, adding enough reserved pasta water to coat pasta. Sprinkle with parsley and, if desired, additional cheese.

1 tablespoon butter
Freshly ground black pepper
1 tablespoon fresh chopped sage leaves
3 tablespoons mascarpone
1/2 cup heavy cream
1 bag pumpkin or butternut squash filled pasta
1/4 cup or less grated Pecorino Romano
Salt and pepper

Steps:

  • In saute pan, melt the butter with a pinch of pepper, the sage, and mascarpone. Add heavy cream and reduce to a thick sauce, about 10 minutes. While the sauce is reducing, boil the pasta. Drain and add to the sauce. Toss the pasta in the sauce over low heat until the pasta is well coated. Add the cheese and salt and pepper, to taste.

We love my Recipe #138786, BUT the pumpkin ravioli that I like to use from Whole Foods are SO EXPENSIVE!! Here's a simple and affordable alternative! This recipe was adapted from an online cookbook put out by Barilla pasta.

1/2 lb sweet butter
8 fresh sage leaves or 1 teaspoon ground sage
1/2 cup pumpkin pie filling
1 lb cheese tortellini
1/2 cup parmigiano-reggiano cheese, grated
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon light brown sugar
salt and pepper

Steps:

  • Place butter and sage leaves (or ground sage) in a sauté pan over medium high heat and cook until butter just turns golden brown.
  • Add the pumpkin pie filling, cinnamon, nutmeg, brown sugar and remove from heat.
  • Whisk gently until combined.
  • Add salt and pepper to taste.
  • Cook tortellini in boiling salted water according to package directions, drain, and toss into sauté pan with warm sauce.
  • Place pasta and sauce over medium heat and toss until well coated.
  • Remove from heat, toss with Parmesan cheese and serve.
