This Traditional Tortellini in Brodo (in broth) is a delicious way to serve your favourite tortellini.This easy soup will become one of your favourites.

10 ½ ounces beef (stewing) ((300 grams))
1-2 beef bones with marrow
1 large carrot (quartered)
1 medium onion (halved)
1 stalk celery (halved)
1 bay leaf
3-4 black whole peppercorns
¼-½ teaspoon salt (or to taste)
12 cups water ((3 litres))
1 pound tortellini (I used the smaller type with meat) ((500 grams))

Steps:

  • In a large pot add the beef, bone with marrow, the carrot, onion, celery, spices and water. Bring to a boil on medium high heat, then lower the heat and simmer for about three hours half covered, stirring occasionally, remove any foam that appears on the top of the broth.
  • Pour the broth through a sieve, then place the liquid back in the pot (taste for salt), bring to a boil and add the tortellini, cook until cooked through. Serve immediately with a sprinkling of parmesan cheese.

1 ounce dried porcini mushrooms
1 cup hot water
1 pound cheese tortellini
1 tablespoon olive oil
1/4 cup shallots, chopped
3 cloves garlic, minced
1 teaspoon dried oregano
2 bay leaves
1/2 cup heavy cream
1/4 cup grated Pecorino Romano or Parmesan
2 tablespoons chopped fresh parsley leaves

Steps:

  • Soak dried mushrooms in hot water for 15 minutes. Strain mushrooms through a sieve, reserving liquid. While the mushrooms are soaking, cook tortellini according to package directions.
  • While the tortellini is cooking, heat oil in a large skillet over medium-high heat. Add shallots and garlic and cook 3 minutes, stirring with spoon until soft. Add oregano and bay leaves and cook 1 minute, until fragrant. Add porcini mushrooms and reserved mushroom soaking liquid and bring to a simmer, for 5 minutes. Reduce heat to medium, add heavy cream and simmer 2 minutes to heat through. Remove bay leaves with tongs, add tortellini to the mushrooms and cook 1 minute, to heat through. Remove from heat and stir in cheese and parsley. Serve immediately.

2 tablespoons extra-virgin olive oil
2 leeks (white and light green parts only), halved lengthwise, thinly sliced and rinsed
2 carrots, halved lengthwise and thinly sliced
2 small celery stalks, thinly sliced
4 cloves garlic, smashed
4 cups low-sodium chicken broth
1 small piece parmesan rind
2 wide strips lemon zest (removed with a vegetable peeler)
1 12-ounce bone-in smoked pork chop, diced (bone reserved)
1 9-ounce package refrigerated cheese or meat tortellini
1 small head escarole, chopped
Freshly ground pepper

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the leeks, carrots, celery and garlic and cook, stirring occasionally, until the leeks wilt, about 5 minutes. Add 2 cups water, the chicken broth, parmesan rind, lemon zest and pork bone. Bring to a simmer and cook until the vegetables are almost tender, about 15 minutes.
  • Remove the parmesan rind, lemon zest and pork bone from the pot with a slotted spoon. Bring the broth to a boil over medium heat. Add the tortellini, escarole and diced pork; season with pepper. Cook until the tortellini and escarole are tender, 4 to 5 minutes.

8 cups low-salt chicken broth
Freshly ground black pepper
Two 9-ounce packages refrigerated cheese tortellini
2 tablespoons chopped fresh Italian parsley leaves
Parmesan Crisps, recipe follows
1/2 cup grated Parmesan

Steps:

  • Pour the broth into a heavy large saucepan. Cover and bring to a boil over high heat. Season the broth with pepper, to taste. Add the tortellini. Simmer over medium heat until al dente, about 7 minutes.
  • Ladle the broth and tortellini into soup bowls. Top with parsley and Parmesan Crisps and serve.
  • Preheat oven to 400 degrees F.
  • Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2 inch apart.
  • Bake for 3 to 5 minutes or until golden and crisp. Cool.

2 cups low-sodium chicken broth
⅔ cup water
½ (16 ounce) package frozen cheese tortellini
1 cup chopped watercress
2 scallions, sliced
3 drops hot red pepper sauce
2 tablespoons grated Romano cheese

Steps:

  • Stir broth and water together in a pot; bring to a boil. Stir frozen tortellini into broth mixture and cook, stirring occasionally, until tortellini float to the top and the filling is hot, 6 to 8 minutes. 2-inch piece Pecorino Romano rind (optional), plus 1/4 cup shaved cheese for serving
1 package (8.8 ounces) cheese tortellini
1 bunch Swiss chard, ribs and stems removed, cut into 1-inch pieces
Lemon wedges (optional), for serving

Steps:

  • In a medium pot, bring broth, rind (if using), and 3 cups water to a boil. Add tortellini and cook according to package instructions. During last minute of cooking, add chard and cook until tender. Remove rind; serve soup with shaved cheese and lemon wedges if desired.

Swiss chard is a wonderful green that often gets overlooked. It has a slightly sweet flavor and a firm texture. The combination of Swiss chard, mushrooms and tortellini makes for a hearty and delicious soup. Serve this with garlic rubbed croutons for a filling and comforting meal. The better than bouillon makes for a nice flavor but you could always use chicken broth for this soup if you're not vegetarian:-)

3 tablespoons olive oil
1/2 teaspoon red pepper flakes
3 tablespoons fresh rosemary, minced
1 teaspoon kosher salt
1 medium vidalia onion, diced
1 red bell pepper, diced
2 garlic cloves, minced
8 ounces cremini mushrooms, thinly sliced
1 lb swiss chard, sliced in ribbons (red, yellow, or white)
1 tablespoon better than bouillon vegetable stock base
10 cups vegetable broth
1 lb tortellini (fresh or frozen cheese or mushroom filled)
1 (15 ounce) can diced tomatoes with juice
2 tablespoons red wine vinegar
1/2 cup grated pecorino romano cheese (optional)

Steps:

  • Heat a stockpot with the olive oil. Add the pepper flakes, rosemary, salt, onion, bell pepper and garlic. Saute until the onions are just beginning to color and add the mushrooms. Saute for about five minutes or until the mushrooms are losing their liquid.
  • Add the Swiss chard and the better than bouillon and cook until the swiss chard is starting to wilt, about three or four minutes.
  • Add the vegetable broth and bring to a gentle boil.
  • When the soup is gently boiling add the tortellini.
  • If using frozen tortellini allow them to cook for about 5 minutes before adding the tomatoes.
  • If using fresh let them cook for about 2 minutes before adding the tomatoes.
  • Once you've added the tomatoes stir, reduce heat to medium and allow to simmer for about 8 minutes.
  • Turn off the heat and add the vinegar, stirring thoroughly.
  • Serve in deep bowls sprinkled with the Romano.
