1 large garnet yam
1 tablespoon butter
1/4 yellow onion, chopped (about 1/2 cup)
3 tablespoons finely chopped pecans
3 tablespoons maple syrup
1/4 teaspoon cinnamon

Steps:

  • Bake yam for 40-45 minutes at 400.
  • (This will leave the yam baked nearly all the way through, but firm enough to slice when cool).
  • Remove yam from oven and allow to cool enough so that you can handle it.
  • When cool, remove skin and slice into 1-inch bite-size pieces.
  • Melt 1 TBSP of butter in large skillet.
  • Add chopped onion and pecans.
  • Saute for a couple of minutes until onions pieces begin to turn brown.
  • Add yam slices, maple syrup, and cinnamon and saute for 3-5 minutes, stirring often, or until yam pieces are hot and tender.

16 ounces 100% grade aaa pure maple syrup
1 pint orange juice
6 -8 organic sweet potatoes
1/2 pint heavy whipping cream
1 orange, peeled
marshmallows
1/2 cup fresh mint sprig

Steps:

  • Wash/run the sweet potatoes under cool water using colander, then pat dry with towels.
  • Next, thoroughly peel each sweet potato with a potato peeler.
  • Soak the peeled sweet potatoes in hot water overnight: (Sweet Potatoes are very fragile, boiling them causes bruising, and baking them dries them out. Letting them sit in hot water keeps them moist and is the most gentle way to get them to soften).
  • Remove softened sweet potatoes from the water and thoroughly pat dry with towels.
  • In a large mixing bowl, use a potato masher or fork to mash them gently.
  • Use an orange grater on the orange and add grated orange rind to the mixture.
  • Add the Maple, orange juice and whipping creme. Then, using an electric mixer on a low setting, gently mix till everything is a fluffy and whipped consistency -- no lumps!
  • Pour into an oblong baking dish and cover with foil, then bake at 325F for 20-25 minute.
  • Remove from the oven and add marshmallows to completely cover the top, then resume baking uncovered for about 5 minutes more, but be careful -- marshmallows burn very quickly and you only want them to be lightly golden brown, so keep checking.
  • Once the sweet potatoes are finally removed from the oven, add the fresh mint all around the perimeter of the sweet potatoes, and they will take on a slight mint flavor as they cool.

4 medium sweet potatoes, peeled, sliced 1 1/2-inch thick (3 lbs)
1/2 teaspoon salt
3/4 teaspoon fresh ground pepper
3 tablespoons unsalted butter, cut into 1/2-inch pieces
1/3 cup pure maple syrup
1/3 cup water

Steps:

  • Preheat oven to 400 degrees. In a large saucepan, cover the sweet potato slices with water and bring to a boil. Reduce heat to moderate and cook until just tender. About 5 minutes. Drain well.
  • Arrange potato slices in a large casserole. Season with salt and pepper and then dot with butter pieces. Drizzle potatoes with maple syrup, sprinkle with water and bake for 25 minutes or until tender and lightly browned. If necessary, you can broil the casserole for a minute or two before serving.

1 lb coarsely chopped peeled sweet potato
2 tablespoons maple syrup
2 tablespoons milk (soy milk for gluten free)
1 tablespoon butter
1 1/2 teaspoons adobo sauce
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 drained canned chipotle chile in adobo, minced

Steps:

  • Note: Chipotle chile peppers come packed in adobo sauce and are available in seven-ounce cans.
  • Because you need such a small amount in this recipe, you can freeze what's left over in a heavy duty freezer bag for another use.
  • Place sweet potato in saucepan and cover with water; bring to a boil.
  • Reduce heat, and simmer 15 minutes or until tender; drain.
  • Return potatoes to pan.
  • Add remaining ingredients; beat with a mixer at medium speed until smooth.

Maple Sweet Potatoes With Apple and Bacon image

This was in an email from Trader Joe's for the holidays. (Best little store ever!) I made it today for Thanksgiving and it's delicious! Putting on here to share and for safe keeping. One note: My sweet potatoes took quite a bit longer to roast and be tender so just check them and cook until they are done. I might have used too small a pan because I had to stir them and keep cooking past the time.

4 sweet potatoes, peeled and diced
1/4 cup olive oil
1/4 teaspoon salt
4 ounces bacon, large diced
1 medium yellow onion, chopped
2 gala apples, diced
1/4 cup maple syrup

Steps:

  • Toss potatoes with oil and salt. Roast at 400' about 20 minutes or until tender.
  • Cook bacon over medium heat in a large pot. Add onions once fat starts to render. Cook until bacon is crisp and onions are translucent.
  • Add apples to pot and cook 2 more minutes (I cooked longer to caramelize the apples a bit).
  • Add potatoes and cook approximately 5 minutes, or until soft (Again, I cooked longer to get a bit of caramelizing on the potatoes).
  • Toss with maple syrup and serve.
  • Note: I roasted the potatoes the night before and just put them in the fridge so I wouldn't tie up the oven for Thanksgiving dinner.
