This quick and easy tomato salad recipe is the best way to highlight the natural flavor and sweetness of fresh summer tomatoes!

4 cups halved cherry tomatoes (or chopped larger tomatoes)
¼ cup finely diced red onion
2 tablespoons snipped fresh basil (or more to taste)
2 tablespoons olive oil
2 tablespoons balsamic vinegar
Kosher salt and freshly-ground black pepper, to taste

Steps:

  • Combine tomatoes, onion and basil in a bowl.
  • In a separate bowl or jar, whisk or shake together olive oil and vinegar. Pour over tomatoes and toss to coat. Season with salt and pepper, to taste.
  • Serve immediately, or allow the salad to marinate for about 30 minutes - 1 hour at room temperature or in the fridge (if you prefer a cold salad).

2 Tbsp finely chopped Fresh Herbs ((like parsley, basil, green onions / scallions, or cilantro))
2 cloves Garlic, minced
1/4 cup Extra Virgin Olive Oil
2 Tbsp Balsamic Vinegar
1/2 tsp Kosher Salt ((see note))
1/2 tsp Honey
1 lb Tomatoes, any variety, sliced or chopped ((see note))
Fresh Black Pepper, for serving

Steps:

  • In a mixing bowl, whisk together fresh herbs, garlic, olive oil, balsamic vinegar, salt and honey.
  • Gently fold in tomatoes. Refrigerate for at least 2 hours and up to 8 hours.
  • Just before serving, gently stir the tomatoes to coat in dressing. Top with some fresh cracked black pepper.

If you love tomatoes like I do, then you may enjoy this recipe. It's a quick side dish/plate filler that doesn't have too many ingredients, it's healthy and tastes nice. Original recipe calls for Roma and Plum tomatoes but I use what is in season. This recipe comes from a book called "Purely Golden Door" by The Golden Door Health Retreats.

6 roma tomatoes or 6 plum tomatoes, halved
1 tablespoon balsamic vinegar
2 tablespoons fresh basil, chopped
salt (to taste)
black pepper, freshly cracked (to taste)

Steps:

  • Preheat the oven at 180oC/350oF/Gas 4.
  • Place tomatoes on oven tray with the cut side facing down.
  • Dash over the balsamic vinegar, basil, salt, black pepper to taste.
  • Bake for about 15 minutes for semi firm (still holding shape) and 30 minutes for well done (extra soft).
