SWEET AND SPICY CANNED ONION MARMALADE



Sweet and Spicy Canned Onion Marmalade image

Canned* sweet & spicy onion marmalade is perfect for meat glazes, toppings and great for appetizer platters with or without cream cheese.

Number Of Ingredients 12

2 pounds onions (preferably sweet or a mix of sweet and regular)
1 cup apple juice
1/2 cup cider vinegar
2 teaspoons fresh (minced garlic)
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon ground mustard
1 teaspoon crushed red pepper flakes
3 tablespoons Low or No Sugar Needed pectin - flex batch (equals 1 box)
1/2 teaspoon butter or oil (optional to reduce foaming, but I always use it)
1 cup honey
1/2 cup brown sugar

Steps:

  • Prepare waterbath canner, 6 half pint jars & lids, keeping warm until needed.
  • Cut ends off onions and peel; slice in half and cut each in half again, lengthwise (or in thirds if onions are big). Turn halves and cut into 1/4 inch slices widthwise (as pictured in tutorial). Place slices in an 8 quart measuring cup - you should have 6 cups of onion slices.
  • Add prepared onions, apple juice, vinegar, garlic, salt, pepper, mustard and red pepper flakes to an 8 quart stockpot. Gradually stir in pectin and then add butter if using. Bring to a boil that can't be stirred down over high heat, stirring constantly.
  • Add honey and sugar; return to a full boil and let boil for 1 minute, stirring constantly. Remove from heat (skim foam if needed).
  • Ladle hot marmalade into prepared half pint jars one at a time, leaving 1/4-inch headspace. Wipe rims, attach lids, and place in canner.
  • Place lid on canner and bring to a gentle, steady boil - process for 10 minutes, maintaining steady boil the entire time. Turn off heat, and let jars cool in canner 5 minutes before removing jars to a towel lined surface to cool for 24 hours. Check lids for seal before labeling and storing in a cool, dark place (with rings removed).

1 large vidalia onion, thinly sliced
1 tablespoon extra virgin olive oil
1 teaspoon balsamic vinegar
1/3 cup apple jelly
1/3 cup canned diced tomato
1/8 teaspoon curry powder
1/8 teaspoon cinnamon
1/4 teaspoon nu salt salt substitute
1 tablespoon tomato paste

Steps:

  • Saute onion in oil until slight;y browned.
  • add vinegar and cook for 2 minutes stirring constantly
  • in a small saucepan combine jelly,tomatoes, tomato paste, curry, cinnamon and salt.
  • cook for five minutes.
  • add onion mixture.
  • You can serve right away or jar and serve later. it keeps in the fridge for a month.

3/4 pounds yellow onions (about 2 medium), finely sliced
1 tablespoon butter
1 1/2 pounds roma tomatoes (about 6 medium), peeled, cored, seeded, and finely chopped
1/2 cup white sugar
1/4 cup light brown sugar
2 tablespoons juice from 1 lemon
2 tablespoon apple cider vinegar
1 teaspoon kosher salt
1/2 teaspoon red pepper flakes

Steps:

  • Melt butter in a 3-quart stainless-steel saucepan or saucier or a 4- or 5-quart enameled Dutch oven over high heat. Add onions and cook, stirring frequently, until bottom of saucepan is glazed in a pale brown fond, about 5 minutes. Add 2 tablespoons water and scrape up fond with wooden spoon. Continue to cook, stirring frequently, until fond has built up again, about 2 minutes longer. Add 2 more tablespoons water and scrape up browned bits. Repeat cooking, adding water, and scraping until onions are completely softened and a deep, dark brown, about 15 minutes total.
  • Add tomatoes, white sugar, brown sugar, lemon juice, vinegar, salt, and red pepper flakes in with the onions; stir to combine. Bring mixture to a boil, then reduce heat and simmer, stirring occasionally, until tomatoes have broken down and jam has thickened and developed a jammy consistency, 1 to 1 1/2 hours. Remove from heat. Transfer jam to an airtight container and store in refrigerator for up to 2 weeks.

This is a nice way to show off your garden tomatoes and makes a nice Holiday food gift as well! A break from the traditional orange marmalade.

Number Of Ingredients 6

3 quarts tomatoes (12 cups, after cutting)
2 oranges
2 lemons
10 cups sugar
2 tablespoons whole cloves
6 tablespoons broken cinnamon sticks

Steps:

  • REMOVE peel from tomatoes and cut in small pieces.
  • Slice oranges and lemons very thin and quarter the slices.
  • Pour off juice from the tomatoes.
  • Add sugar.
  • Stir until the sugar is dissolved.
  • Add oranges, lemons, and spices which have been tied loosely in cheesecloth bag.
  • Place mixture over high heat and boil rapidly, stirring often.
  • Cook until clear and thick (about 50 minutes).
  • Pour into sterilized jars to within 1/2 inch of top.
  • Put on cap, screw band firmly tight.
  • Process in Boiling Water Bath 10 minutes.

TOMATO MARMALADE

The marmalade is truly the star of this meal. If you want it more kickier leave the seeds and veins in. I truly like this more on the sweet side {kinda like ketchup}. Grill up some beer brats and you are good to go! I served this today with grilled blue cheese burgers on toasted buns!

Number Of Ingredients 8

3 tablespoon unsalted butter
1 - 10 ounce package grape tomatoes { cut in 1/4s }
1 medium yellow onion { sliced }
3 jalapenos { seeded and deveined }
1 tablespoon turbinado sugar
1 - 6 ounce can tomato paste
1 teaspoon coarse kosher salt
1 tablespoon fresh ground pepper

Steps:

  • 1. Slice the onions thin.
  • 2. Mince the jalapeno pepper after you've seeded and deveined it.
  • 3. Cut the cherry tomatoes into ¼ pieces { the small ones I cut in ½ }
  • 4. In a non stick pan melt the butter; add the onions, jalapeno peppers and the tomatoes. Sprinkle the sugar over the top and cook on low till everything is soft and caramelized, at this point add the salt. Continue to cook for a few more minutes. You'll really want to do this on a low heat, otherwise the onions will burn, this will take some time but oh so worth it.
  • 5. Add the tomato paste & pepper and continue to cook on low till the paste is super thick and all the vegetables' are grooving in it. You'll want to cook out the raw taste of the paste, once it has achieved this, it's done. This could take from 20 to30 minutes.
  • 6. Put into a bowl and let it sit out, if you are using this right away or put it in the refrigerator.
