This yummy side dish is a wonderful way to use those homegrown vegetables in the summer. This is great for a cookout served along side grilled steak, chicken, hamburgers, etc..

1 zucchini, thinly sliced
1 large tomato, thinly sliced
1 onion, thinly sliced
½ cup unsalted butter
¼ cup red wine vinegar
1 teaspoon garlic salt
1 teaspoon dried basil
½ teaspoon dry mustard
2 cups grated Parmesan cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish.
  • Arrange the zucchini slices, tomato slices, and onion slices in alternating layers in the prepared baking dish. Melt the butter in a saucepan over medium-low heat; stir the vinegar, garlic salt, basil, and mustard into the melted butter. Pour the butter mixture over the vegetables; sprinkle the Parmesan cheese over the dish.
  • Bake in the preheated oven until thoroughly heated, about 30 minutes.

4 large tomatoes (about 2 pounds), cut crosswise into 1/2-inch slices
1 large or 2 medium red onions (about 1 pound), cut crosswise into 1/4-inch rounds
2 tablespoons extra-virgin olive oil
Coarse salt and ground pepper

Steps:

  • Preheat oven to 450 degrees. In a 9-by-13-inch baking dish, arrange tomatoes and onions in rows, overlapping slightly. Drizzle with oil and season with salt and pepper. Bake until tomatoes are lightly browned and onions are tender, about 45 minutes. Serve warm or at room temperature.

This is a very attractive dish to bring to the table! If you want your cauliflower cooked a little more steam it for 5 min prior to putting it in the casserole. I like it crisp so I do it raw.

2 large cauliflower, separated into flowerets
1/4 teaspoon nutmeg
2 cups cheddar cheese, grated
3 tablespoons melted butter
3 tomatoes, cut into 8 wedges each
1 large onion, chopped
salt and pepper
2 tablespoons fresh parsley, chopped

Steps:

  • Preheat oven to 375°F.
  • Lightly grease a 9x13-inch casserole dish.
  • Arrange flowerets in the dish.
  • Sprinkle with salt, pepper and nutmeg.
  • Sprinkle the onion over the cauliflower.
  • Cover with 1 cup of cheese.
  • Drizzle with the melted butter.
  • Tuck in the Tomatoes wedges.
  • Sprinkle with remaining cheese.
  • Bake uncovered for about 10 minutes.
  • Garnish with parsley.

An easy and low calorie side dish that could be served with any meat dish. I found this in Everyday Food magazine and have use Vidalia onions and added garlic for our taste. The Vidalia's are soooo sweet!

GREEN TOMATO AND ONION CASSEROLE

our garden is over flowing with tomato's but some have been stung by a bug and so we harvested many of the tomato's while still green and I have frozen some and today I made this casserole for our supper. I happen to like green tomatoes and thats a good thing seeing that the bowl is overflowing with them! LOL

green tomatoes
1 large onion. sliced
2 english muffines
sea salt
pepper
3 Tbsp margarine

Steps:

  • 1. I used the smaller green tomotoes and sliced enough for making two layers.
  • 2. After slicing the onion I cooked it in a sauce pan with the butter until transparent. remove from the stove and remove the onions to a small bowl.
  • 3. crumble up the engish muffins ( or whatever bread you want to use) I used english muffins as I had only 2 left and wanted to use them up. Anyway, crumble them into the pan you cooked the onions in as there should be enough butter in there to coat the bread and brown a little. Remove from pan and get ready to put together the casserole.
  • 4. Take your sliced tomatoes and line them in the bottom of the dish you are going to bake them in.
  • 5. Add a layer of onion over first row of tomatoes.
  • 6. Add salt and pepper
  • 7. add another layer of tomato and another layer of onion.
  • 8. add some salt and pepper
  • 9. place the toasted bread over all
  • 10. Bake 350 degrees for 45-60 minutes
