4 firm tomatoes
2 tablespoons unsalted butter
1 garlic clove, crushed
1/2 cup fresh white breadcrumbs
1 tablespoon fresh parsley, chopped
1/4 teaspoon cayenne pepper
1/2 teaspoon paprika
1/4 teaspoon dry mustard
1 tablespoon parmesan cheese, grated
salt
fresh parsley sprig

Steps:

  • Preheat oven to 350°F/175°C.
  • Grease a 9-inch square baking pan.
  • Cut 1/3 slice off top of each tomato.
  • Reserve tops for "lids".
  • Remove seeds from each tomato.
  • Melt butter in a saucepan.
  • Add garlic, breadcrumbs and chopped parsley; mix well.
  • Remove from heat.
  • Add cayenne pepper, paprika, mustard, cheese and salt; mix well.
  • Spoon mixture into tomatoes and form in neat mounds, pressing gently in shape with fingertips.
  • Put reserved "lids" on top.
  • Arrange tomatoes, cut sides up, in greased pan, and bake for 15 minutes.
  • Garnish with parsley sprigs and serve hot.

6 slices bacon, cut into 1/2-inch pieces
1 cup chopped red onion
1 cup chopped green bell pepper
2 cloves garlic, minced
2 jalapeno peppers, seeded and diced
3 large tomatoes, halved
1 tablespoon chopped fresh oregano
Salt and freshly ground black pepper
6 slices sourdough bread, toasted
3/4 cup shredded pepper jack cheese

Steps:

  • In a large skillet over medium heat, cook the bacon until crisp, about 6 minutes. Transfer the bacon to paper towels and reserve the drippings in the skillet. Add the onions, bell peppers, garlic and jalapenos to the skillet. Cook, stirring occasionally, for 5 minutes.
  • Meanwhile, scoop the flesh out of the center of the tomatoes and chop, reserving the shells. Add the chopped tomatoes to the skillet and stir in the oregano. Season with salt and pepper and cook for 2 minutes.
  • Position an oven rack in the center of the oven and heat the broiler.
  • Put the bread slices in a 9-by-13-inch baking dish. Top each slice of bread with a tomato half. Divide the vegetable mixture evenly among the tomato halves. Top the tomatoes with the bacon and cheese. Broil until the cheese is melted, about 3 minutes.

25 small bread rounds or 25 slices rye cocktail bread
1 cup grated cheddar cheese, Jarlsberg or 1 cup monterey jack cheese
2 bunches green onions, finely chopped
1/2 green pepper, finely chopped
1 cup mayonnaise
1/2 teaspoon garlic salt
1/8 teaspoon cayenne pepper
1 pint cherry tomatoes, sliced
8 slices cooked bacon, crumbled

Steps:

  • Toast only one side of bread slices under broiler. Cover to keep fresh and set aside.
  • Combine cheese, onions, and green pepper with 2/3 cup of the mayonnaise. Season with garlic salt and cayenne pepper. Refrigerate if making ahead.
  • Shortly before serving time, preheat oven to 350*F.
  • Spread untoasted sides of bread with remaining 1/3 cup mayonnaise. Top with tomato slices, and then cheese mixture. Sprinkle with bacon.
  • Bake 3 to 5 minutes, until bubbly and lightly browned. Serve immediately.

Standard deviled eggs are undeniably good, but adding a touch of tomato paste and a generous pinch of smoked paprika makes them a bit more sophisticated. The flavor is gently sweet, forcefully spicy and perfectly smoky.

12 large eggs
1 fat garlic clove, minced
1/4 teaspoon kosher salt, more to taste
1/2 cup mayonnaise
2 tablespoons tomato paste
2 teaspoons red wine vinegar, more to taste
1/4 teaspoon freshly ground black pepper
1/4 teaspoon hot smoked paprika, more to taste and for garnish

Steps:

  • Place eggs in a medium saucepan and cover with cold water. Bring water to a full boil, let cook for 1 minute, then turn off heat and cover pan. Allow eggs to stand for at least 15 minutes.
  • Once eggs are cool enough to handle, peel and cut in half lengthwise. Scoop yolks into a bowl; place whites on a serving platter.
  • Using a sharp knife or mortar and pestle, chop or smash garlic with salt to make a paste. Add paste to yolks and mash together with a fork. Add mayonnaise, tomato paste, red wine vinegar, pepper and paprika and continue to mash until mixture is smooth. Taste and add more vinegar, salt and paprika if desired.
  • Spoon yolk mixture into whites and dust with paprika.
