ROASTED TOMATO, ARUGULA AND MOZZARELLA SALAD



Roasted Tomato, Arugula and Mozzarella Salad image

Number Of Ingredients 7

4 plum tomatoes, cut in 1/2 and seeded
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
One 5-ounce box baby arugula
One 8-ounce package baby mozzarella balls, drained
1/4 cup chiffonade basil leaves
Balsamic vinegar

Steps:

  • Preheat the oven to 450 degrees F.
  • Add the tomatoes to a shallow 2-quart casserole dish in a single layer.
  • Toss the tomatoes with the oil, and salt and pepper, to taste. Make sure the tomatoes are cut side up after tossing. Roast until the tomatoes are extremely tender, about 35 to 40 minutes. Remove them from the oven and keep warm.
  • In a large salad bowl, toss the arugula, mozzarella balls, basil and the warm tomatoes along with any juices from the dish. Drizzle with some good balsamic and season with salt and pepper, to taste.

GARGANELLI PASTA & TOMATO SAUCE WITH FRESH MOZZARELLA & ARUGULA-ORANGE SALAD



Garganelli Pasta & Tomato Sauce with Fresh Mozzarella & Arugula-Orange Salad image

3/4 pound Garganelli Pasta
28 ounce Whole toms, can
1/2 pound Mozzarella, fresh
3 ounce Arugula
4 clove Garlic
2 Orange, Navel
1 Onion, yellow
1 bunch Parsley
2 tablespoon butter
2 tablespoon Vinegar, red wine
1/3 cup Parmesan cheese, grated

Steps:

  • Wash and dry the fresh produce. Heat a medium pot of salted water to boiling on high. Peel and mince the garlic. Peel and small dice the onion. Place the tomatoes in a bowl; gently break apart with your hands. Pick the parsley leaves off the stems; discard the stems and roughly chop the leaves. Tear the mozzarella cheese into bite-sized pieces. Cut off and discard the tops and bottoms of the oranges so they sit flat on the cutting board. Cut off and discard the orange rinds and piths; halve the oranges, then thinly slice.
  • In a large, high-sided pan, heat 1 tablespoon of olive oil on medium until hot. Add the garlic and onion; season with salt and pepper. Cook, stirring occasionally, 2 to 4 minutes, or until softened and fragrant. Add the tomatoes. Simmer, stirring occasionally and breaking the tomatoes apart with a spoon, 12 to 14 minutes, or until the liquid is slightly reduced in volume; season with salt and pepper to taste.
  • While the sauce simmers, in a bowl, combine the vinegar and a pinch of the Parmesan cheese; season with salt and pepper to taste. Slowly whisk in 2 tablespoons of olive oil until well combined.
  • While the sauce continues to simmer, add the pasta to the pot of boiling water. Cook 8 to 10 minutes, or until just shy of al dente (still slightly firm to the bite). Reserving 1 cup of the pasta cooking water, thoroughly drain the cooked pasta.
  • Add the cooked pasta and half the pasta cooking water to the pan of sauce. Increase the heat to medium-high and cook, stirring occasionally, 2 to 3 minutes, or until the pasta is thoroughly coated. (If the sauce seems dry, gradually add the remaining pasta cooking water to achieve your desired consistency.) Turn off the heat. Add the butter, half the parsley and half the mozzarella cheese. Stir until thoroughly combined; season with salt and pepper to taste. Transfer to a serving dish.
  • Just before serving, in a large bowl, combine the arugula and oranges; season with salt and pepper. Add enough of the vinaigrette to coat the salad (you may have extra vinaigrette). Toss to combine; season with salt and pepper to taste. Transfer to a serving dish. Garnish the finished pasta with the remaining Parmesan cheese, parsley and mozzarella cheese.

Really simple, easy to prepare salad. Just a tad different from the basic tomato, mozzarella and basil salad. I wanted something colorful and easy and this was it.

1 medium tomatoes, thinly sliced
4 ounces fresh mozzarella balls, sliced
3 baby yellow bell peppers, sliced
12 large arugula leaves, coarsely chopped
sea salt
fresh fresh coarse ground black pepper
1 teaspoon balsamic vinegar
2 tablespoons extra virgin olive oil
1/4 teaspoon dried basil

Steps:

  • Whisk balsamic vinegar, olive oil and dried basil together in small bowl.
  • Arrange alternating slices of tomato, cheese and bell pepper slices on platter.
  • Scatter chopped arugula over tomatoes.
  • Drizzle olive oil mixture over salad and season with salt and pepper.

2 Bunches of Arugula washed.
1 Large ball of Mozzarella di Bufala sliced.
2 Large vine riped or beefsteak tomatoes sliced.
Extra Virgin Olive Oil.
Balsamic Vinegar.
Fresh Basil.
A couple pinches of salt and pepper.

Steps:

  • Wash and dry the arugula and place in a large bowl for mixing. Drizzle with Olive Oil and Balsamic Vinager and season with the salt and pepper. Toss gently with hands then place on a large platter. Arrange the sliced tomatoes on top of the arugula and the sliced mozarella on top of the tomatoes. Top a few of the mozarella slices with a sprig of fresh basil. Dizzle a little more oil on the mozarella and serve.
