Beet, Tomato, and Strawberry Salad image

2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/3 cup extra-virgin olive oil
1 pound strawberries, hulled and sliced
1 pint grape or cherry tomatoes, halved
12 ounces Campari tomatoes, quartered
4 small roasted and peeled beets, sliced

Steps:

  • Whisk the vinegar, mustard, salt, and pepper in a large bowl. Continue whisking while adding the oil in a slow, steady stream, until the vinaigrette is smooth. Add the strawberries, tomatoes, and beets. Gently toss with your hands until everything is evenly coated. Serve immediately.

1 cup diced ripe strawberries
1 cup diced grape tomatoes
1 small clove garlic, minced
3 tablespoons thinly sliced fresh basil
2 tablespoons extra-virgin olive oil, plus more for brushing
2 teaspoons balsamic vinegar
Kosher salt and freshly ground pepper
1 baguette, sliced on the diagonal 1/2 inch thick

Steps:

  • In a medium bowl, combine the strawberries, tomatoes, garlic, basil, olive oil, balsamic vinegar, 1/2 teaspoon salt and 1/4 teaspoon pepper. Let rest for 30 minutes, stirring now and then.
  • Heat a grill or grill pan to medium high. Spread out the bread on a baking sheet and brush with olive oil. Transfer to the grill and toast the bread until golden all over, 2 to 3 minutes per side. Arrange on a platter.
  • Cover the warm grilled bread slices with a generous layer of the strawberry-tomato salad. Serve immediately.

This one is a salad that has a great combination of sweet and sour. It is great with chicken or any simple entree. I am always trying to make up new, crazy, salads and this one has been a work in process for 10 years. The fresh dill is not a necessity if you have a hard time finding it but if you do care to splurge on fresh herbs, it adds a great flavor!

1 teaspoon honey mustard
2 tablespoons balsamic vinegar
¼ cup olive oil
1 (10 ounce) bag mixed salad greens
1 pint grape tomatoes, halved
1 pint strawberries, sliced
½ cup candied walnuts
1 (4 ounce) container crumbled feta cheese
3 sprigs fresh dill

Steps:

  • Whisk the honey mustard, and balsamic vinegar together in a small bowl until combined. Drizzle in the olive oil while whisking to make the dressing; set aside.
  • Place the salad greens, tomatoes, strawberries, walnuts, and feta cheese into a large salad bowl. Tear off the dill fronds and add to the salad. Toss gently to mix, then pour on the dressing, and toss to coat.

1 cup (about 1/2 pound whole berries) small strawberries, trimmed and halved

1 tablespoon finely grated lemon zest (about 1 lemon)
1/2 teaspoon table salt
1/4 teaspoon freshly ground pepper
2 heads Boston lettuce, halved and cores removed
