- Drain tomatoes, reserving 2 teaspoons oil. In a small food processor, combine the garlic, basil and parsley. Cover and process until blended., Add the goat cheese and reserved sun-dried tomatoes and oil. Cover and process until smooth. Chill until serving.

- Drain tomatoes, reserving 3 tablespoons of oil., In a small skillet, heat reserved oil, tomatoes and garlic over medium-high heat. Cook and stir 5 minutes or until garlic is golden and tomatoes are heated through. To serve, place cheese on a serving plate. Pour tomato mixture over cheese. If desired, sprinkle with parsley. Serve with crackers.

TOMATO AND BASIL GOAT CHEESE SPREAD
A tasty spread to serve with assorted crackers. Do not use oil-packed sun dried tomatoes. Cook time is chill time.

Steps:
- In a small bowl, cover tomatoes with boiling water. Let stand 10 minutes. Drain and discard liquid. Finely chop tomatoes.
- In a medium bowl, stir together tomatoes, cheeses, basil, garlic and pepper. Stir in enough milk to reach a spreading consistency.
- Cover and chill for at least 2 hours (up to 8 hours).
- Serve with assorted crackers.
MARINATED GOAT CHEESE SPREAD / DIP
A decedent spread that wins raves at potlucks and dinner parties. Rich and flavourful, it's perfect served with whole grain crackers or grilled bread. - Arrange cheese in a shallow dish in a single layer. Scatter olives, sundried tomatoes and basil over and around it.
- In a small bowl, combine vinegar, oil, garlic, rosemary, thyme, and pepper. Pour over cheese.
- Marinate a few hours in the fridge or overnight. Serve at room temperature with grilled or fresh bread.
