2 tomatoes, cored
1 avocado, peeled and pitted
2 tablespoons lemon juice
1 red onion, sliced
Salt and pepper

Steps:

  • Slice tomato in half and squeeze seeds into a bowl. Dice tomato into pieces. Transfer to medium bowl. Chop avocado and combine with tomato. Pour in lemon juice. Add onion. Season with salt and pepper. Serve.

1 teaspoon Dijon mustard
¼ cup extra-virgin olive oil
½ cup balsamic vinegar
1 pinch ground black pepper
1 avocado - peeled, pitted and sliced
2 small tomatoes, each cut into 8 wedges

Steps:

  • In a small bowl, whisk together the mustard, olive oil, balsamic vinegar and pepper. Arrange the slices of avocado and tomato alternately like the spokes of a wheel on one big serving plate, or individual plates. Drizzle lightly with the dressing, and serve immediately.

1 large ripe tomatoes, finely chopped
1 ripe avocado, peeled, and cut into 1/2 inch pieces
1/4 cup thinly sliced green onion
2 tablespoons orange juice
1 1/2 teaspoons red wine vinegar
1 large garlic clove, crushed
1 dash salt and pepper

Steps:

  • In a medium bowl, combine tomato, avocado, and green onions. Toss gently.
  • In a small bowl, combine remaining ingredients. Mix well and add to tomato mixture. Mix gently until thoroughly blended.
  • Chill several hours to blend flavors.
