This is a holiday drink that my family enjoys in the winter. The batter makes an excellent topping for both alcoholic beverages as well as hot cocoa, eggnog, or warm milk for the kids.

12 eggs, separated
½ teaspoon salt
1 pound butter, room temperature
3 pounds confectioners' sugar
1 teaspoon vanilla extract
1 teaspoon ground nutmeg
1 teaspoon ground cloves
1 teaspoon ground allspice

Steps:

  • Beat egg whites and salt until foamy in a large glass or metal mixing bowl until stiff peaks form. Lift your beater or whisk straight up: the egg whites should form a sharp peak that holds its shape.
  • Beat the egg yolks to soft peaks in a separate bowl. Beat the butter and confectioners' sugar in a large bowl until light and fluffy. Add the egg yolks and vanilla to the butter mixture; mix. Stir in the nutmeg, cloves, allspice, and the egg whites; beat until well blended. Batter can be frozen or kept in refrigerator for several weeks.
  • To make a Tom and Jerry, fill a cup of hot water with spiced rum or brandy, warm milk, hot cocoa, or eggnog and stir in 1 heaping tablespoon of batter.

Winter's coming and there's nothing better on a cold snowy night than a good Tom & Jerry! After trying several other batters we have determined this one is the best - the marshmallow cream is what makes it. The batter will last for several days. Some separation will happen but you can mix it up and it will be fine.

6 eggs, separated
1/2 teaspoon cream of tartar
1 lb powdered sugar
1 (7 ounce) jar marshmallow cream
hot water
rum
brandy
nutmeg

Steps:

  • Separate the 6 eggs Beat the egg whites with cream of tartar until stiff.
  • Mix in the powdered sugar and set aside.
  • Beat egg yolks until thick and light colored.
  • Stir in the marshmallow cream with a wooden spoon.
  • Fold egg white mixture into egg yolks.
  • Refridgerate all leftovers.
  • To make a Tom& Jerry.
  • Boil water.
  • Spoon several heaping tablespoons of batter into a mug.
  • Pour a shot of R&B (rum/brandy mix) or about 1/2 a shot each of rum and brandy.
  • (Or whatever amount you care for.) Pour hot water into the mug until fill.
  • The batter will rise to the top.
  • Sprinkle with nutmeg.

A cold-weather favorite! Make this batch and keep it in the freezer for up to six months. Add a heaping tablespoon to a coffee mug of hot water, as well as 3/4 ounce of dark rum and 3/4 ounce of brandy: stir. Perfection!

This recipe came from my mom and we have found it very close to what you find in the stores at Christmas time.

6 eggs, separated
2 1/2 cups powdered sugar (divided)
1/2 teaspoon cream of tartar
1 teaspoon vanilla
brandy, as desired
rum, as desired

Steps:

  • Beat egg whites with cream of tartar until very very stiff. Add 1 1/2 C of powdered sugar gradually. Remove bowl and beat egg yolks with dirty beaters until lemon colored. Add 1 cup powdered sugar gradually then add vanilla. When thick add to whites and continue beating for a few minutes. Put in several containers and freeze until ready to use. Take out 15-20 minutes before using. Fill cup 1/3 full add brandy /rum and fill with boiling water Top with nutmeg. You can use brandy and/or rum extract for a non alcolic drink.

GRAMMA NICKY'S TOM AND JERRY BATTER

This recipe has been in my family for 3 generations. I've been making it for 40 years. It makes a wonderful fluffy batter that keeps in the refrigerator for about week, but it never lasts that long at my house. For health reasons, make sure you add the egg yolks while the mixture is still very warm. Enjoy!

3 cups sugar
1 1/2 cups cold water
2 tablespoons Karo syrup
6 eggs, separated
1 teaspoon vanilla
1 teaspoon baking powder
rum, Brandy or cognac
grated nutmeg

Steps:

  • Mix the sugar, water and syrup in a medium pan. Boil on medium high heat until mixture forms a thread (230 to 233 Degrees F).
  • While mixture is boiling, beat 6 egg whites until stiff peaks form, saving beaten yolks in a separate bowl.
  • In a Kitchen Aid Mixer on 2 to 4 speed, slowly pour hot syrup mixture over the stiffly beaten egg whites. Do not scrape the hot pan. Beat mixture on high until it cools slightly -- 2 to 3 minutes. Then SLOWLY add beaten egg yolks. Beat a few more minutes more, then add vanilla and baking powder. Beat until mixture is cool.
  • (Note: Before adding beaten egg yolks, make sure the mixture is very warm, BUT NOT HOT. You don't want the eggs to scramble, but you do want to kill any bacteria. You more experienced cooks can also temper the yolks with about 1/4 cup of the hot mixture, before adding to the mixer.).
  • Store in refrigerator in a covered container for about a week.
  • To make Tom & Jerry drink:.
  • Pour a shot of Rum or Brandy or Cognac into a coffee mug.*.
  • Fill mug about 2/3's full with boiling water.
  • Top with 2 to 3 heaping tablespoons of batter.
  • Sprinkle top with grated nutmeg.
  • *Can also use about 1/4 tsp rum extract for non-alcoholic drink.

1 bottle dark rum

Steps:

  • Instructions Separate the eggs. Beat the whites until they form a stiff froth, and the yolks -- to which you have added the sugar -- "until they are as thin as water," as the professor advises, gradually adding 4 ounces brandy (spiceaholics will also add a pinch each of ground allspice, cinnamon, and cloves). Fold the whites into the yolks. When ready to serve, give it another stir and then put 1 tablespoon of this batter in a small mug or tumbler. Now add 1 ounce brandy (although some die-hard Dixiecrats prefer bourbon) and 1 ounce Jamaican rum, stirring constantly to avoid curdling. Fill to the top with hot milk and stir until you get foam. Sprinkle a little grated nutmeg on top. This one may require practice and a certain amount of fiddling, but it's well worth the effort. 3# powdered sugar
1 t. vanilla, rum or brandy flavoring
1 t. nutmeg
1 t. cloves
1 t. allspice

  • Beat egg whites until stiff; add salt. Beat egg yolks until light. Cream butter and powdered sugar; mix until crumbly. Add egg yolks and vanilla; mix well. Add spices. Add egg whites; beat until well blended. Will keep several weeks in refrigerator. May be frozen, if covered. Use 1 heaping tablespoon of batter for each Tom and Jerry, 1/2 jigger rum and 1/2 jigger brandy. Fill with hot water. Sprinkle spices on top.

1.5 lbs Powered sugar
3 eggs
pinch of salt
pinch of baking soda
1/4 tsp cinnamon
1/4 tsp nutmeg (to taste)

Steps:

  • Separate 3 eggs - whip white until stiff. In a separate bowl, mix yolks with fork and add in pinch of salt, baking soda, cinnamon & nutmeg. Fold yolks into whites. SLOWLY add powered sugar until batter will barely roll off spoon. Keep refrigerated until ready for use (or freeze for long storage). Mix with hot milk alone or add brandy, rum or peppermint schnapps.

This is a family favorite. We have this every Christmas! It is rich and creamy, and very delicious. There is a rum/brandy mix called Gaetano that we always use.

  • In a second bowl beat yolks until light in color.
  • In a third bowl cream together butter and sugar. Add in yolks, vanilla, and nutmeg. Beat well.
  • Fold egg whites into butter mixture. Refrigerate in covered container.
  • To serve: Heat mugs of milk, stir in one heaping tablespoon of batter, add 1/2 ounce each of brandy and rum, or 1 oz of whiskey (if desired), top with a sprinkle of nutmeg.

We always love Tom & Jerry's around the holidays but didn't care for the frozen stuff we found at the grocery store. So I started making up my own version. It's definitely not for the diet conscious though!

1 pound(s) butter, room temperature
3 pound(s) powdered sugar
1 teaspoon(s) vanilla, rum, brandy or other favorite extract
1 teaspoon(s) nutmeg
1 teaspoon(s) allspice, ground
1 teaspoon(s) cloves

Steps:

  • Beat egg whites until stiff. Set aside. Beat egg yolks until light yellow and thickened.
  • Whip butter, adding powdered sugar a cup at a time until well incorporated. Add egg yolks, extract and spices. Mix well. Mix in egg whites until well combined.
  • To serve: fill large mug 1/3-1/2 full of batter, add brandy and rum (to taste). Fill to top with hot water. Mix well. Sprinkle with nutmeg. Can use different types of alcohol. Malibu Rum or Captain Morgan Rum is really good.
  • Keeps well in refrigerator for a couple weeks and can also be frozen.
