This is a holiday drink that my family enjoys in the winter. The batter makes an excellent topping for both alcoholic beverages as well as hot cocoa, eggnog, or warm milk for the kids.

- Beat egg whites and salt until foamy in a large glass or metal mixing bowl until stiff peaks form. Lift your beater or whisk straight up: the egg whites should form a sharp peak that holds its shape.
- Beat the egg yolks to soft peaks in a separate bowl. Beat the butter and confectioners' sugar in a large bowl until light and fluffy. Add the egg yolks and vanilla to the butter mixture; mix. Stir in the nutmeg, cloves, allspice, and the egg whites; beat until well blended. Batter can be frozen or kept in refrigerator for several weeks.
- To make a Tom and Jerry, fill a cup of hot water with spiced rum or brandy, warm milk, hot cocoa, or eggnog and stir in 1 heaping tablespoon of batter.

THE BEST TOM AND JERRY BATTER!
Winter's coming and there's nothing better on a cold snowy night than a good Tom & Jerry! After trying several other batters we have determined this one is the best - the marshmallow cream is what makes it. The batter will last for several days. Some separation will happen but you can mix it up and it will be fine.

Steps:
- Separate the 6 eggs Beat the egg whites with cream of tartar until stiff.
- Mix in the powdered sugar and set aside.
- Beat egg yolks until thick and light colored.
- Stir in the marshmallow cream with a wooden spoon.
- Fold egg white mixture into egg yolks.
- Refridgerate all leftovers.
- To make a Tom& Jerry.
- Boil water.
- Spoon several heaping tablespoons of batter into a mug.
- Pour a shot of R&B (rum/brandy mix) or about 1/2 a shot each of rum and brandy.
- (Or whatever amount you care for.) Pour hot water into the mug until fill.
- The batter will rise to the top.
- Sprinkle with nutmeg.
TOM AND JERRY
Almost like eggnog, but warm and creamy. We have an annual Christmas Tom & Jerry Party and this is the recipe we've perfected.

- Separate the eggs. In a large bowl beat the egg whites until frothy. Whisk in 3/4 cup of the confectioners' sugar and beat until stiff peaks are formed.
- Beat the egg yolks with the remaining 1/2 cup of confectioners' sugar and about 4 to 5 tablespoons of the brandy until light and lemon colored. Fold the egg whites into the egg yolks and refrigerate.
- In a large stock pot heat the milk until hot but do not boil. Reduce heat and keep milk hot.
- To each mug add 2 tablespoons brandy (or more to taste) and 1 large heaping tablespoon of egg mixture. Stir and fill mug with hot milk. Place another tablespoon of egg mixture on top and sprinkle with nutmeg.

- In small mixing bowl, whisk yolks briefly. Add sugar, 1 tablespoon rum, vanilla extract, allspice, cloves, and cinnamon, and whisk again. Set aside. Using electric mixer, beat egg whites in another large bowl until stiff and glossy. Fold whites into yolk mixture, and set aside.
- In medium saucepan over low heat, bring milk to simmer and remove from heat. While milk is warming, briefly stir egg batter, then add 1 1/2 tablespoons to mug. Slowly add 4 tablespoons of remaining rum, stirring constantly to prevent curdling. Fill mug with hot milk, stir, sprinkle with nutmeg, and serve.
EASY TOM AND JERRY BATTER
A cold-weather favorite! Make this batch and keep it in the freezer for up to six months. Add a heaping tablespoon to a coffee mug of hot water, as well as 3/4 ounce of dark rum and 3/4 ounce of brandy: stir. Perfection!

- Beat the butter and sugar with an electric mixer in a large bowl until smooth. Add the egg yolks one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat egg whites until foamy in a large glass or metal mixing bowl, continuing to beat until soft peaks form. - Beat egg whites with cream of tartar until very very stiff. Add 1 1/2 C of powdered sugar gradually. Remove bowl and beat egg yolks with dirty beaters until lemon colored. Add 1 cup powdered sugar gradually then add vanilla. When thick add to whites and continue beating for a few minutes. Put in several containers and freeze until ready to use. Take out 15-20 minutes before using. Fill cup 1/3 full add brandy /rum and fill with boiling water Top with nutmeg. You can use brandy and/or rum extract for a non alcolic drink.

GRAMMA NICKY'S TOM AND JERRY BATTER
This recipe has been in my family for 3 generations. I've been making it for 40 years. It makes a wonderful fluffy batter that keeps in the refrigerator for about week, but it never lasts that long at my house. For health reasons, make sure you add the egg yolks while the mixture is still very warm. Enjoy!

- Mix the sugar, water and syrup in a medium pan. Boil on medium high heat until mixture forms a thread (230 to 233 Degrees F).
- While mixture is boiling, beat 6 egg whites until stiff peaks form, saving beaten yolks in a separate bowl.
- In a Kitchen Aid Mixer on 2 to 4 speed, slowly pour hot syrup mixture over the stiffly beaten egg whites. Do not scrape the hot pan. Beat mixture on high until it cools slightly -- 2 to 3 minutes. Then SLOWLY add beaten egg yolks. Beat a few more minutes more, then add vanilla and baking powder. Beat until mixture is cool.
- (Note: Before adding beaten egg yolks, make sure the mixture is very warm, BUT NOT HOT. You don't want the eggs to scramble, but you do want to kill any bacteria. You more experienced cooks can also temper the yolks with about 1/4 cup of the hot mixture, before adding to the mixer.).
- Store in refrigerator in a covered container for about a week.
- To make Tom & Jerry drink:.
- Pour a shot of Rum or Brandy or Cognac into a coffee mug.*.
- Fill mug about 2/3's full with boiling water.
- Top with 2 to 3 heaping tablespoons of batter.
- Sprinkle top with grated nutmeg.
- *Can also use about 1/4 tsp rum extract for non-alcoholic drink.

TOM AND JERRY
This drink has nothing to do with the cartoon cat and mouse, or Jerry Thomas, the celebrated New York barman of the 1800s, who often boasted of inventing it. It is a rich holiday elixir, a relative of eggnog that flourished in America in the 19th and early 20th centuries, and is frequently (though not definitively) credited to Pierce Egan, the English chronicler of sports and popular culture. Robert Simonson brought this version of the drink, which is especially popular in Wisconsin and is bordering states, to The Times in 2012. It is adapted from Audrey Saunders, the owner of the Manhattan cocktail bar Pegu Club. She decreased the sugar and added Angostura bitters and vanilla. "It makes a huge difference," she said. It's best on snowy days, when it can warm and comfort from within.
