Roasted Butternut Squash with Brown Sugar image

Roasted butternut squash with brown sugar is the perfect side dish kids love. Easy to make in just 35 minutes. Gluten-free.

1 medium butternut squash
3 tablespoons melted butter (✅)
2 tablespoons brown sugar (✅)
1 teaspoon cinnamon (✅)
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat the oven. Preheat oven to 400 degrees.
  • ⭐️Prep the squash. Peel squash using a vegetable peeler. Cut in half and remove seeds. Cut squash into similar-sized cubes. Place onto the baking sheet.
  • Blend the sugar mixture. Blend brown sugar, cinnamon, salt, and pepper into melted butter. Pour over squash, and mix.
  • ⭐️Bake. Bake for 25-30 minutes, flipping squash with a spatula halfway through.

I discovered this slightly sweet and crunchy-topped casserole at a church dinner about 10 years ago, and now I take it to potluck dinners and come home with an empty dish! -Julie Jahn, Decatur, Indiana

1/3 cup butter, softened
3/4 cup sugar
2 eggs
1 can (5 ounces) evaporated milk
1 teaspoon vanilla extract
2 cups mashed cooked butternut squash
TOPPING:
1/2 cup crisp rice cereal
1/4 cup packed brown sugar
1/4 cup chopped pecans
2 tablespoons butter, melted

Steps:

  • In a large bowl, cream butter and sugar until fluffy. Beat in the eggs, milk and vanilla. Stir in squash (mixture will be thin). , Pour into a greased 11-in. x 7-in. baking pan. Bake, uncovered, at 350° for 45 minutes or until almost set. , In a small bowl, combine topping ingredients; sprinkle over casserole. Return to the oven for 5-10 minutes or until bubbly. Freeze option: Bake casserole as directed without adding topping. Cool; cover and freeze. Freeze topping mixture in a resealable plastic freezer bag. To use, partially thaw casserole and topping in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Sprinkle topping over casserole and bake until bubbly.

Roasted Baby Butternut Squash image

Baby butternut is super intense in flavor but much more tender. I find mine at our farmer's market. You'll love the way this recipe melds the sweet and savory.

3 or 4 baby butternut squash
thyme, dried and ground, to taste
sage, dried, dried and ground, to taste
salt and pepper to taste
drizzle olive oil

Steps:

  • 1. Cut tops and bottom stem area of squash and half lengthwise
  • 2. Place in small 9x9 casserole skin side down.
  • 3. Drizzle with olive oil and sprinkle sage, thyme, salt and pepper over the top.
  • 4. Bake at 375 for 45 minutes.
  • 5. Eat flesh out with a spoon (that's how I do it anyway!)
