2 Tbsp. extra virgin olive oil
1/2 cup chopped onions
1-1/2 cups orzo pasta, uncooked
3 cups fat-free reduced-sodium chicken broth
1 cup frozen peas
1/4 cup PHILADELPHIA Chive & Onion 1/3 Less Fat than Cream Cheese
6 slices OSCAR MAYER Bacon, cooked, crumbled
1/2 cup KRAFT Grated Parmesan Cheese, divided

Steps:

  • Heat oil in large saucepan on medium heat. Add onions; cook 2 to 3 min. or until crisp-tender, stirring frequently. Add pasta; cook and stir 2 min. or until lightly browned.
  • Stir in chicken broth. Bring just to boil; cover. Simmer on medium-low heat 8 to 10 min. or until pasta is tender and broth is absorbed, adding peas for the last minute. Remove from heat.
  • Add reduced-fat cream cheese, bacon and 1/4 cup Parmesan; stir until cream cheese is completely melted.
  • Serve topped with remaining Parmesan.

1 1/4 cups chopped onions
5 slices bacon, chopped
3 1/4 cups chicken broth (or more)
1 1/2 cups frozen peas, thawed

Steps:

  • Heat large nonstick skillet over medium heat.
  • Add orzo and stir until beginning to color, about 10 minutes.
  • Transfer orzo to small bowl.
  • Add onion and bacon to same skillet.
  • Sauté until bacon browns and onion is tender, about 15 minutes.
  • Add 3 1/4 cups broth and orzo and bring to boil.
  • Reduce heat to medium-low, cover and simmer until broth is absorbed and orzo is tender, about 18 minutes.
  • Mix in peas.
  • Add more broth if mixture is dry.
  • Cover and cook until peas are just warmed through, about 2 minutes.

2 tablespoons unsalted butter, divided
5 slices (5 oz) bacon, diced
1 medium yellow onion, finely chopped
2 cloves garlic, minced
1½ cups orzo
4 cups chicken broth
Heaping ½ teaspoon salt
¼ teaspoon freshly ground black pepper
1¼ teaspoons Cajun or Creole seasoning, such as Emeril's Essence
2 pounds extra-large (21/25) shrimp, peeled and deveined
1 cup frozen green peas (no need to thaw)
2 tablespoons fresh lemon juice (from 1 lemon)
3 tablespoons chopped fresh chives

Steps:

  • Melt one tablespoon of the butter in a Dutch oven or large pot over medium-high heat. Add the bacon and cook, stirring frequently, until crisp, 6 to 8 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate and set aside.
  • Reduce the heat to medium and add the onion. Cook, stirring frequently, until softened, about 3 minutes. Add the garlic and cook 1 minute more. Do not brown. Stir in the orzo and cook, stirring frequently, until lightly toasted, 2 to 3 minutes. Stir in the broth, salt, pepper, and Cajun/Creole seasoning and bring to a boil. Reduce the heat to low, cover, and simmer, stirring once midway through, until the orzo is nearly tender, about 10 minutes.
  • Stir the shrimp and peas into the orzo (it will be quite creamy/brothy at this point; that's normal). Cover and cook over low heat until the shrimp are opaque throughout and the orzo is tender, about 5 minutes.
  • Off the heat, stir in the remaining tablespoon of butter, the lemon juice, and chives. Right before serving, stir in the crispy bacon. Taste and adjust seasoning, if necessary, then spoon into bowls and serve.

1 can light coconut milk
One 2-inch piece ginger, sliced
Kosher salt
2 cups orzo pasta
1/4 cup olive oil
1 cup frozen peas, thawed
1 bunch scallions, sliced thin (about 1/2 cup)
1 tablespoon lemon juice

Steps:

  • In a medium saucepan, add the coconut milk, ginger, 1 tablespoon salt and 2 cups water. Bring to a boil over medium-high heat. Add the orzo and stir. Cook, stirring to prevent sticking, until the pasta is al dente, 6 to 7 minutes. Drain well. Remove and discard the ginger.
  • Heat a large skillet over medium-high heat. Add 2 tablespoons of the oil and heat for 1 minute more. Add the drained orzo and spread out evenly in the skillet. Cook, undisturbed, until the bottom of the pasta is starting to get browned and crispy, about 4 minutes. Flip the pasta, add the remaining 2 tablespoons oil and continue to cook, undisturbed, until the other side is browned, about 4 minutes more. Flip again and brown another 3 minutes. Season with 1/4 teaspoon salt and stir in the peas and scallions. Cook another 2 minutes to warm through. Finish with the lemon juice. Serve warm.

2 tablespoons extra-virgin olive oil
1 onion, diced
1 1/2 cups orzo or pearl barley
1/4 cup dry white wine (or chicken stock)
3 cups chicken stock or low-sodium broth
1/2 cup frozen petite green peas, thawed
1/3 cup grated parmesan cheese, plus more for topping
2 tablespoons thinly sliced fresh basil
1/4 cup heavy cream
1 teaspoon grated lemon zest, plus the juice of 1 lemon
Salt and freshly ground pepper

Steps:

  • Heat the olive oil in a heavy-bottomed medium saucepan over medium-high heat. Add the onion and saute until fragrant and translucent, about 2 minutes. Add the orzo and toast for 2 minutes, stirring occasionally. Add the wine (or stock) and cook until absorbed, about 1 minute.
  • Gradually add 3 cups chicken stock, stirring frequently. Bring to a simmer, then lower the heat and cover. Cook until the liquid is almost absorbed and the orzo is tender, 8 to 10 minutes. Remove from the heat.
  • Stir in the peas, parmesan, basil, heavy cream and lemon zest and juice. Season with salt and pepper. Top each serving with more parmesan.

One 3-inch strip lemon zest
1 cup quartered grape tomatoes, optional
1/2 cup crumbled feta cheese (about 2 1/2 ounces)
1/4 cup chopped fresh parsley leaves
2 tablespoons small capers, rinsed and drained
1 tablespoon finely chopped fresh dill
1 tablespoon fresh lemon juice

Steps:

  • 1. Heat 1 tablespoon of the oil in a medium saucepan over medium-high heat. Add the orzo and cook, stirring, until golden, about 3 minutes. Add 3 cups water, 1 1/2 teaspoons salt and the lemon zest and bring to a boil. Reduce the heat to medium, cover and cook, stirring occasionally, 10 minutes. Uncover and continue cooking, stirring frequently, until the orzo is tender and the liquid is absorbed, 2 to 3 minutes. Remove from the heat.

1 cup onion, finely chopped
3/4 teaspoon salt
2 garlic cloves, minced (2 teaspoons)
1 lb uncooked orzo pasta
3 1/2 cups low sodium chicken broth (or vegetable)
3/4 cup dry vermouth or 3/4 cup dry white wine
1 3/4 cups frozen peas
1 cup parmesan cheese, grated
ground nutmeg, to taste
ground black pepper, to taste

Steps:

  • Heat butter in 12-inch nonstick skillet over medium-high heat; add onion and salt and cook, stirring frequently, until onion has softened and is beginning to brown, about 5 minutes.
  • Add garlic and cook until fragrant, about 30 seconds.
  • Add orzo and cook, stirring frequently, until most of orzo is lightly browned and golden, 5 to 6 minutes.
  • Turn off heat and add vermouth and chicken broth.
  • Go back to medium-high heat and bring to boil; reduce heat to medium-low and simmer, stirring occasionally, until all liquid has been absorbed and orzo is tender, 10 to 15 minutes.
  • Gently stir in peas, cheese, nutmeg, and pepper to taste.

8 ounces bacon, diced

2 tablespoons all-purpose flour
2 1/2 cups milk
8 ounces Gruyere cheese, shredded
1/2 teaspoon salt

1 pound orzo
1 1/2 cups frozen peas, thawed
1/4 cup Parmesan, grated

Steps:

  • Heat oven to 400 degrees. Heat a large skillet over medium heat. Add bacon; cook 8 minutes, until crispy. Remove to a plate with a slotted spoon. Pour off all but 3 tablespoons of the bacon fat. Stir in garlic; cook 1 minute. Whisk in flour; cook 1 minute. Whisk in milk, bring to a simmer and cook 5 minutes. Stir in Gruyere, salt and pepper until smooth. Set aside. Meanwhile, bring a large pot of salted water to a boil. Add orzo; cook 2 minutes less than package directions. Drain. Stir into sauce with peas and cooked bacon.
