1 lb pecan halves
1 tablespoon seasoning salt
1/4 cup butter

Steps:

  • Melt butter in microwave oven.
  • Add salt and toss with pecans.
  • Place on a cookie sheet for 15 to 20 minutes and bake at 300°F degrees.

1/2 Granny Smith apple
1/2 small head cabbage
1 tablespoon fresh lemon juice
1/4 cup pecans
1 tablespoon unsalted butter
2 teaspoons sugar
1 tablespoon chopped fresh chives

Steps:

  • Cut apple into 1/2-inch cubes and very thinly slice enough cabbage to measure 3 cups. In a bowl toss together apple, cabbage, lemon juice, and salt to taste.
  • Chop pecans. In a small skillet toast pecans in butter over moderate heat, stirring occasionally, until fragrant. Sprinkle sugar and salt to taste over pecans and cook, stirring frequently, until pecans are coated, about 1 minute. Remove skillet from heat and cool pecans slightly. Add pecans with butter in skillet and chives to cabbage mixture and toss to combine well. Season slaw with salt.

This recipe comes from the cookbook that accompanied my first microwave, in 1974. These salty, crunchy pecans are good for snacking. They also go well with drinks. You may want to adjust the amount of seasoned salt to your taste, particularly if you use salted butter.

1 lb pecan halves (about 4 cups)
1 tablespoon seasoning salt (I use Lawry's)
1/4 cup butter, cut into four pieces

Steps:

  • Put pecans in a 1½-quart microwave-safe casserole. Sprinkle with seasoned salt and arrange the four pieces of butter evenly.
  • Microwave on HIGH for 5-6 minutes or until pecans are crunchy.
  • Stir to distribute seasoned salt and butter. Serve warm or cold.

Butter Lettuce Salad with Pickled Grapes, Toasted Pecans and Soft Goat Cheese image

Number Of Ingredients 9

1/2 cup pecan halves
1 cup pickled grapes
2 teaspoon Dijon mustard
1 tablespoons Juice of half a lemon
1/2 cup pickled grape brine
1/2 cup olive oil
1/2 teaspoon Freshly ground black pepper
2 heads large butter lettuce
4 ounces soft goat cheese

Steps:

  • Preheat oven to 250 degrees. Spread pecans on a baking sheet and toast until fragrant, 15-20 minutes. Set aside to cool.
  • Add mustard and lemon juice to measuring cup containing brine leftover from making pickled grapes (recipe above), and whisk to combine. Add olive oil, whisk again to thoroughly emulsify, and season to taste with salt and pepper.
  • Strain pickled grapes, reserving brine. Halve 1 cup grapes, return remaining brine and grapes to container, and reserve for another use. Divide lettuce among six bowls or plates, and scatter some halved grapes, pecans cheese over each portion. Whisk vinaigrette again and drizzle over salad. Grind pepper over each salad and serve.

4 Tbsp butter melted
1 tsp salt
16 oz bag, pecan halves
~OR~
***ADJUSTED AMOUNTS FOR A 12 OUNCE BAG OF PECAN HALVES***
only 3 tablespoons of butter, and 3/4 teaspoon of salt

Steps:

  • 1. Preheat oven to 320 degrees. Line a baking sheet with parchment paper.
  • 2. Melt butter, and stir in the salt. Place the pecans in a bowl. Pour the butter mixture over the pecans and toss lightly.
  • 3. Place the buttered pecans on the baking sheet and bake for 25 minutes. Stirring half way through. Remove from the oven and cool.
  • 4. Enjoy!

Pastry
1 ¼ cups (300 mL) all-purpose flour
¼ tsp (1 mL) salt
¼ cup (50 mL) cold butter
2 tbsp (25 mL) cold lard or shortening
½ tsp (2 mL) lemon juice
2 to 3 tbsp (20 to 45 mL) ice cold water
Filling
1 egg ½ cup (125 mL) brown sugar
¼ cup (50 mL) corn syrup
2 tbsp (25 mL) dark rum
½ tsp (2 mL) pure vanilla extract
¼ cup (50 mL) melted butter
¼ to ½ cup (50 to 125 mL) coarsely chopped toasted
pecans or walnuts

Steps:

  • 1. Combine flour and salt in a medium bowl. Cut in butter and lard until butter pieces are about the size of small peas. Stir lemon juice into 2 tbsp (25 mL) water. Stir into flour mixture, adding up to 1 tbsp (15 mL) more water if needed to just moisten. Press together to form a ball of dough; then flatten, wrap and chill for 30 minutes. 2. Coat cups of a standard 12-cup muffin pan generously with cooking spray or lightly butter. Roll out pastry until thinner than usual for pie crust, about 1/8-inch (0.5-cm) thick. Use a 3-inch (8- cm) cookie cutter (or upturned glass) to cut into rounds. Press into cups forcing dough two-thirds to three-quarters up sides. Use scraps to fill in any breaks, low sides or thin parts. Freeze 10 minutes while making filling. 3. Preheat oven to 400ºF (200ºC). 4. Beat egg lightly with a fork. Gradually add brown sugar, corn syrup, rum, vanilla and melted butter. Stir until smooth. Divide ¼ cup (50 mL) nuts among homemade shells or ½ cup (125 mL) among frozen purchased shells; spoon in filling. Bake 15 minutes or until filling is bubbly and browned. Cool in pans on racks; then run a knife around edges of tarts. Remove tarts from pans. Covered tarts keep for a day or 2 at room temperature and freeze well.
