This is my favorite way to make garlic bread. It doesn't take any extra time and it looks really impressive on the table. This recipe is for garlic bread, but use it as a jumping off point to fill with any combination of cheese, onion... anything that you like! I have made one stuffed with provolone, asiago and pepperoni slices...

1 loaf of round, italian bread or sourdough
1/4-1/2 c melted butter or olive oil, depending on the size of the loaf of bread
3 clove garlic, finely chopped
1 1/2 c mozzarella, provolone or italian blend cheese
1/2 c parmesan cheese
1/2 tsp garlic powder
freshly chopped or dried parsley
pinch salt

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Slice round loaf 3/4 of the way through being careful not to cut all of the way through, vertically and horizontally, forming 1" squares.
  • 3. Add olive oil or butter to a small pan and saute garlic for 1-2 minutes, just to soften.
  • 4. Brush onto loaf being sure to get in into all of the cracks.
  • 5. Stuff cheese inside all of the cracks. (If you like pepperoni, you could add that, too.)
  • 6. Sprinkle with a pinch of coarse salt, garlic powder and parsley.
  • 7. Wrap in greased or oiled foil and bake for 15 minutes at 350 degrees. *** Can serve with marinara sauce as an appetizer.

To-Die-For Stuffed Garlic Bread image

This is one of my most requested recipes. Not low-calorie, but absolutely delish! I've also used steamed broccoli in place of spinach.

1 loaf French bread, halved lengthwise
1 pound Monterey Jack cheese, cut into 1-inch cubes
1 (16 ounce) container sour cream
1 (10 ounce) box frozen chopped spinach, thawed and drained
1 (4.5 ounce) can sliced mushrooms, drained
1 tablespoon seasoned salt
½ cup butter
4 garlic cloves, minced

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
  • Pull the soft middle section out of each side of French bread and tear middle sections into pieces.
  • Stir Monterey Jack cheese cubes, sour cream, spinach, mushrooms, and seasoned salt together in a large bowl.
  • Melt butter in a large skillet over medium heat. Cook and stir garlic in hot butter until fragrant, 1 to 2 minutes. Stir bread pieces into garlic mixture; cook and stir until bread soaks up butter and begins to toast, 3 to 5 minutes. Remove from heat and add bread mixture to sour cream mixture; stir.
  • Stuff each bread crust with sour cream-spinach mixture and place loaves crust-side down on the prepared baking sheet.
  • Bake in the preheated oven until cheese is melted and tops begin to brown, about 30 minutes. Let sit for 10 minutes before slicing.
