Steps:
- Arrange cake slices in bottom of rectangular baking dish, 11x7x1 1/2 inches, cutting cake slices if necessary to cover bottom of dish. Drizzle coffee over cake.
- Beat sugar, chocolate syrup and mascarpone cheese in large bowl with electric mixer on medium speed until smooth. Add whipping cream. Beat on medium speed until light and fluffy. Spread over cake. Sprinkle with candy.
- Cover and refrigerate at least 1 hour but no longer than 24 hours to set dessert and blend flavors.

- Preheat oven to 325°. Layer half of the wafers in a greased 13x9-in. baking dish. In a small bowl, dissolve 2 teaspoons coffee granules in 2 tablespoons hot water; brush 1 tablespoon mixture over wafers. Set remaining mixture aside., In a large bowl, beat cream cheese and sugar until smooth. Beat in sour cream. Add eggs; beat on low speed just until blended. Remove half of the filling to another bowl. Dissolve the remaining 3 teaspoons coffee granules in the remaining 1 tablespoon hot water; stir into 1 portion of filling. Spread over wafers., Layer remaining wafers over top; brush with reserved coffee mixture. Spread with remaining filling., Bake 40-45 minutes or until center is almost set. Cool on a wire rack 10 minutes. Loosen sides from dish with a knife. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., To serve, spread with whipped topping. Dust with cocoa.

- Dissolve coffee granules in hot water. Cool to room temperature; set aside., Meanwhile, line the bottom and sides of a 9-in. springform pan with ladyfingers. Set aside 1/4 cup crushed candy for topping. Stir coffee mixture and remaining crushed candy into ice cream. Spoon into prepared pan. Freeze for 30 minutes., In a large bowl, beat cream until it begins to thicken. Add confectioners' sugar; beat until stiff peaks form. Fold in creme de cacao if desired. Spread over ice cream. ITALIAN LIGHT TIRAMISU MY SIGNATURE DESSERT
If you have viewed my other recipes, you might have picked up that I favor low fat, low sugar recipes. Some people might think ---why? Where is all the fun of eating gone? If you try this recipe, you will quickly discover that flavor and low calories, low fat can go together. This is becoming my signature dessert. My family raved about it and yours will, too! The majority of the ingredients and technique came from a Nilla Wafers cookie box but I have modified it to the "light" side.

- Beat cream cheese in large bowl with electric mixer until creamy. Gradually beat in milk. Add dry pudding mixes; mix well (about 2 minutes). Stir in 2 cups of whipped topping.
- Place 24 of the wafers in 2 1/2-qt. bowl; drizzle with half of the coffee. Top with half each of the pudding mixture and choclate . Repeat all layers.

- Combine 3 egg yolks, 1 Tbsp. espresso, sugar and cognac into large bowl. Beat 2-3 minutes. Add BelGioioso Mascarpone and beat 3 to 5 minutes until smooth.

- Combine espresso, 1/2 cup sugar, and 1/4 cup coffee liqueur in a heavy saucepan over medium-high heat. Whisk and simmer until sugar dissolves, 3 to 4 minutes. Remove from heat and let syrup cool.
- Combine remaining 1/2 cup sugar, mascarpone cheese, egg yolks, Marsala, and remaining 1 tablespoon coffee liqueur in the bowl of a stand mixer fitted with the whisk attachment; whip on medium speed until light and airy, about 7 minutes. Transfer to another bowl and clean mixer bowl and whisk attachment.
- Put heavy cream in the mixer bowl and whisk until stiff peaks form. Gently fold cream into the mascarpone-Marsala mixture.
- Remove 40 ladyfingers from the package and reserve any extra for another use. Dip ladyfingers, one by one, into the cooled espresso syrup and arrange in a single layer in the bottom of an 8x12-inch pan. Spoon 1/2 of the cream mixture over top. Dip more ladyfingers and arrange another layer perpendicular. Spoon remaining cream mixture over top.
- Dust tiramisu with cocoa powder. Refrigerate for 2 hours before serving.

- Heat oven to 350°F. Line 13x9-inch pan with foil; spray with cooking spray. In small bowl, mix crushed cookies and melted butter with fork. Press mixture in bottom of pan. Refrigerate while continuing with recipe.
- In small bowl, mix whipping cream and coffee granules with fork until coffee is dissolved; set aside.
- In large bowl, beat cream cheese with electric mixer on medium speed 2 to 3 minutes, scraping bowl occasionally, until smooth and creamy. On low speed, beat in sugar, eggs and coffee mixture, about 30 seconds. Beat on medium speed about 2 minutes longer or until ingredients are well blended. Using rubber spatula, spread cream cheese filling over crust. Bake 25 to 35 minutes or until center is set.
- Cool 30 minutes. Sprinkle with grated chocolate or top with espresso beans. Refrigerate about 1 hour or until completely chilled. For servings, cut into 6 rows by 4 rows, using sharp knife dipped in water.

- Combine coffee granules, 2 Tbsp. sugar and 1/2 tsp. vanilla in small bowl. Add warm milk; stir until coffee is completely dissolved and mixture is well blended. Arrange half the ladyfingers, cut sides up, on bottom of 13x9-inch dish, cutting if necessary to fit; brush with half the coffee mixture.
- Mix cream cheese, 2 Tbsp. cold milk, remaining sugar and remaining vanilla in medium bowl until blended. Stir in 1-1/4 cups COOL WHIP; spread over ladyfingers in dish.

- In a medium bowl, use electric mixer set on medium speed beat the mascarpone cheese, 1 cup confectioners' sugar and marsala until well blended. Add the creme and beat until fluffy, about 1 minute. Set aside.
- In a small saucepan over high heat combine water, remaining 1/2 cup of confectioners' sugar and espresso powder. Bring to a boil. Stir occasionally. Remove from heat and cool. Slice pound cake 1/4-inch thick. Have a 2 quart oval or rectangular glass or ceramic dish. Arrange slices of cake in a single layer over bottom of dish. Trimming to fit. Brush half of the cooled espresso mixture over cake. Spread half of the mascarpone mixture evenly over the top. Then repeat and do the second layer.
- Brush espresso over cake slices and top with remaining cheese. Cover with plastic and refrigerate until firm. Before serving sift cocoa evenly on top. Use a large scoop to serve on plates.
TIRAMISU TOFFEE DESSERT
I made this cake for a co-worker's birthday and it got rave reviews. It's so easy a cave man could do it.

- Bake and cool cake as directed on box. Cut the cake into about 1 inch pieces and place in oblong baking dish. Dish will be full.
- Drizzle cooled coffee over that
- Beat sugar, chocolate syrup and cream cheese in a large bowl til smooth. Add whipping cream.
- Beat until light and fluffy.
- Spread over cake. Sprinkle with crushed Heath bars.
- Cover and refrigerate at least one hour but no longer than 24 to set dessert and blend flavors
STRAWBERRY TIRAMISU DESSERT
Better make two pans of this, when you taste this you will know why ;-) Plan ahead this needs to chill a minimum of 4 hours or up to 24 hours before serving. Three cups whipped cream may be used in place of the Cool whip, if you are preparing this 24 hours in advance I would suggest to use the Cool Whip it will hold up better with the refrigeration time.

- Prepare an 8 x 8-inch glass pan.
- In a large bowl beat cream cheese with the powdered sugar and vanilla until smooth and well blended.
- Gradually fold in the thawed Cool Whip (or 3 cups whipped cream if using) until completely blended.
- In a small bowl combine coffee and coffee-flavored liqueur (if using).
- Line the pan with enough ladyfinger halves to cover the bottom (place rounded sides down) if necessary cut ladyfingers to fit the dish.
- Spoon 1/3 cup of the coffee mixture over the ladyfingers.
- Top with 1/3 of the cheese mixture (about 1 cup) then spread out evenly.
- Layer 1/3 of the slices strawberries over the cheese.
- Repeat two more times ending with the cheese mixture (reserve the remaining strawberries to place on top before serving, place berries into a bowl, cover and refrigerate).
- Cover with plastic wrap and refrigerate the tiramisu for a minimum of 4 hours or up to 24 hours.
- BEFORE SERVING; remove the plastic wrap, then sift the cocoa powder over the top, then arrange the reserved strawberry slices over the cocoa.
- Serve immediately.

MASCARPONE TIRAMISU DESSERT
Since this has quite a bit of booze in it is not suitable for the children but I have adapted it to a kids version or even to alcohol alergic people (if such thing exists) so here are my tips.

- Start by making the the coffee with 1/2 l boiling water and 90g sugar. Set aside for 5-10 min until it cools slightly. Strain in a bowl and add 3-4 tbsp Marsala or the brandy. Sometimes I use Irish cream liqueur or amaretti. It really depends on what you have in your bar.
- In a bowl, beat the mascarpone cheese and the remainder of the sugar (30g) the remainder of the marsala/brandy/liqueur together. Pour in the double cream and beat further until all becomes nice and firm. Fold in the chopped dark and white chocolate and mix a little more.
- Deep 3-4 biscuits at the time into the coffee and line them along the base of the plate/dish you chose to put the desert on/into.
- Spoon in some creamy mixture and arrange into as many layers as you wish by alternating the coffee soaked biscuits with the cream. Finish by decorating with some of the chopped chocolate or some cocoa powder or even cinamon if you like.
- Best is to leave for few hours before serving so that all biscuits become nicely soaked and soft.

- Prepare 1 T DISC in mug; use same mug to prepare remaining T DISC. Refrigerate 15 min. or until cooled.
