SIMPLE BROILED HADDOCK
Steps:
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil and spray with cooking spray.
- Arrange haddock fillets on the prepared baking sheet. Mix onion powder, paprika, garlic powder, salt, black pepper, and cayenne pepper in a small bowl; sprinkle seasoning over haddock. Dot haddock with pieces of butter.
- Broil in the preheated oven until fish is easily flaked with a fork, 6 to 8 minutes. Serve with lemon wedges.

BAKED HADDOCK WITH CRUMB TOPPING
This is a traditional New England classic made with the perfect combination of fresh bread crumbs and Ritz crackers for the topping. A little bit of Parmesan adds a great flavor and you wouldn't even be able to guess that it's there........it just doesn't get any better than this. The Ritz keep the topping crunchy and the fish is sweet, savory and oh, soooo delicious. This recipe is the secret combination of how it's done in the restaurants.....In New England that is. Enjoy!

- Preheat the oven to 400 degrees.
- Mix all ingredients together in a bowl except for the butter and fish. Use a food processor or your hands to make an evenly consistent bowl of crumbs.
- Place the fish in a cooking dish(es), cover with a good handful of crumbs and sprinkle with drawn butter.
- Place two tablespoons of water around the bottom of the fish.
- Bake for 10 to 14 minutes, until the breadcrumbs become brown. Serve immediately with a lemon wedge and your favorite vegetable.

- Brush fillets lightly with oil.
- Combine mayonnaise, mustard, and parmesan cheese.
- Spread on fillets.
- Broil 4" from heat approximately 10 minutes.

GRANDMA'S BOILED HADDOCK WITH BROWN BUTTER
My grandmother use to make this wonderful fish dish. It's was soooooooooo good! The recipe is well over 100 years old.

Steps:
- 1. Melt the butter and let it brown, but not burnt. Boil the Haddock with the onion slowly until tender. I simmer it as in poaching.
- 2. Drain. Save the fish broth for making Seafood chowder or Clam chowder. Place the fish and onions on a hot serving dish and drizzle melted not brown butter over it. Garnish with chopped parsley or chopped dill or capones.
- 3. Serve with mashed potatoes amd a green salad. This is an old German dish.
BEEF AND BACON TOURNEDOS
This doesn't really use tournedos or filet mignon, just plain old flank steak. It's a relatively easy recipe for grilled roll-ups that are less expensive than steak. I have trouble finding flank steak anymore, but a great substitution I've found at Wal-Mart is a Latin American cut called milanesa.

- Cook bacon until almost done but not crisp.
- Pound steak until it is less than 1/2 inch thick. Sprinkle with meat tenderizer.
- Sprinkle meat with pepper and two salts. Score diagonally (making shallow, diamond-shaped cuts).
- Flip steak. Place bacon strips lengthwise on steak. Sprinkle with parsley.
- Roll up and skewer with 8-10 sticks. Cut into slices.
- Grill 15 minutes on medium-high heat, turning once.

- rinse fillets and sprinkle both sides with salt and pepper. place fillets skin side down on well greased broiler pan. top fillets with pats of butter. broil at 500 for approx 10 minutes. baste once and turn around 5 minutes into cooking time. serve with lemon wedges. enjoy!
