CHICKEN EN PAPILOTTE MANY WAYS

Provided by Food Network

Time 45m

Yield 4 servings

Number Of Ingredients 7

4 skinless, boneless chicken breast halves, tenderloins removed
3 tablespoons green or black olive paste
1 tablespoon vegetable oil
3 (12 ounces) new potatoes, washed
2 ripe tomatoes
Salt and freshly ground black pepper
4 small tomatoes, washed and cored and sliced

Steps:

  • Preheat the oven to 450 degrees. Rub the olive paste on both sides of each chicken breast half.
  • Cut the potatoes into 1/16th-inch slices and thinly slice the tomatoes. Set 4 12-inch squares of foil on the counter. Lightly oil the center of each piece of foil and spread some potato slices in the middle; season them with salt and pepper. Cover the potatoes with a chicken breast half, then cover with more potato slices, salt and pepper and the tomato slices. Wrap the chicken airtight, in a deli sandwich wrap, and set the packages on a baking sheet. Bake for 30 minutes.
  • When the chicken is done unwrap the packages carefully (be careful the steam which will escape when you open the packages does not burn your hands.) Transfer the chicken, potatoes, tomatoes and the natural juices to deep plates.
  • Variations: Instead of the potatoes spread 1/2 cup drained canned white beans, a couple of slivers of fresh garlic, a leaf or two of fresh sage and a teaspoon of extra virgin olive oil underneath the chicken. Top the chicken with the tomatoes. Or spread each chicken breast half with 1 teaspoon each of oriental sesame oil, soy sauce and rice vinegar. Top each chicken breast half with 1/2 cup sliced jicama; 1 cup raw fresh spinach and 1 sliced scallion. Open and garnish with sesame seeds. Or, instead of the green olive paste and tomatoes, season each chicken breast half with barbecue sauce or ketchup and top with 1/2 cup of frozen corn kernels; leave the potatoes in (especially good for kids)

4 tablespoons white wine
4 tablespoons finely chopped parsley
Salt and freshly ground white pepper to taste

Yield Makes 4 servings

Number Of Ingredients 12

8 sheets aluminum foil, each 18 inches long
4 tsp grapeseed oil
2 cups watercress leaves
4 boneless chicken breast halves (1 lb)
Freshly ground black pepper
1 cup diced mango (about 2 mangoes)
8 shiitake mushroom caps
1/4 cup soy sauce
1/4 cup ketchup
1/4 cup red wine vinegar
1 tbsp grated ginger
2 cloves garlic, peeled and minced

Steps:

  • Preheat the oven to 500°F. To prepare foil packets, place a sheet of foil directly on top of another; make 4 of these 2-sheet sets. Smear 1 tsp grapeseed oil to the size of a chicken breast in the center of each top sheet. Place 1/2 cup watercress over oil, then place a chicken breast on top of watercress. Sprinkle with pepper. Arrange mangoes and 2 mushroom caps on top of and around each piece of chicken. Crimp the packet edges up slightly. Bring soy sauce, ketchup and vinegar to a boil, then stir in ginger and garlic. Remove the pan from heat and pour 1/4 sauce over each chicken breast. Fold foil over each chicken breast in half and tightly crimp the edges to close the packets. Heat a baking sheet in the oven 1 minute and place the 4 packets on the sheet. Bake 12 minutes, then remove from oven. Slit the top of the packets to serve (be careful; steam will come out), or let diners open their own packets.

ROASTED CHICKEN THIGHS WITH LEMON, THYME AND ROSEMARY

Roasted Chicken Thighs With Lemon, Thyme and Rosemary image

The ease and deliciousness of this recipe, from the chef Nancy Silverton's cookbook "Mozza at Home," deserves to be emphasized. Though you need several hours of refrigeration to allow the chicken skin to dry out, which makes it crisp, you can be flexible about it; do what's convenient. No matter what, just be sure to pat the skin dry with paper towels. You may also find the final run under the broiler unnecessary. Use your judgment. And also consider swirling in a good splash of white wine or chicken stock to the juices in the baking dish before spooning them on the chicken.

Time 1h15m

Yield 6 to 8 servings

Number Of Ingredients 8

12 chicken thighs, bone in and skin on
1 medium onion, peeled, quartered vertically and sliced 1/4-inch thick vertically
1 cup peeled garlic cloves (about 40)
1 lemon cut in 1/4-inch-thick slices, seeded
15 fresh thyme sprigs
4 (3-inch) rosemary sprigs
2 tablespoons kosher salt, or to taste
2 teaspoons ground black pepper

Steps:

  • Pat chicken thighs dry and place, skin side up, in a single layer on a baking sheet. Place in refrigerator, uncovered, for 8 hours or overnight to dry skin. Remove chicken from refrigerator at least 45 minutes before cooking.
  • Heat oven to 500 degrees. Spread onion slices and garlic cloves in a baking dish that can hold the chicken snugly in a single layer. Scatter lemon on the onion-garlic mixture and strew with thyme and rosemary sprigs.
  • Remove chicken from baking sheet and place on several layers of paper towels, skin side down. Sprinkle with half the salt and pepper. Turn thighs over and season with remaining salt and pepper. Transfer to the baking dish skin side up. Use your hands to arrange the bed of onions and garlic so they're completely under the chicken.
  • Bake for 40 to 50 minutes, until juices run clear when chicken is pierced with a knife point. If skin is not a deep golden brown and crispy, turn on broiler and broil chicken close to heat a few minutes to crisp and brown it.
  • To serve, move chicken off the bed of onions, garlic, lemon and herbs. Discard lemon and spoon the rest of the ingredients, along with pan juices, onto a serving platter. Place chicken on top and serve.

TINA'S CHICKEN THIGHS EN PAPILLOTE

Tina's Chicken Thighs en Papillote image

I think this makes such good and moist chicken. You can also make this with chicken breasts (I would not be afraid to toss in frozen ones since they take less time to cook.) You can switch up the spices, the veggies. If you put carrots or potatoes in you may want to par boil them a bit or shave them whisper thin.

Time 1h

Number Of Ingredients 9

8 oz green beans (about 2 handsful)
1/2 c sliced onion
2 cloves garlic, minced
olive oil, salt and pepper
1/4 tsp dried thyme leaves
2 splashed dry vermouth
1/4 tsp dried thyme leaves
4 boneless, skinless chicken thighs
1/2 tsp dried tarragon leaves

Steps:

  • 1. Cut two 18x13 inch pieces of parchment paper
  • 2. place a parchment piece on one end of a baking sheet
  • 3. place 1/2 of the green beans center of the paper. Top beans with onion and garlic. Drizzel with oilive oil then salt and pepper veggies, sprinkle 1/8th teaspoon of thyme and give it a splash of vermouth. TOp the veggies with 2 thighs, dress them with a drizzle of oil, a pinch of salt and pepper and 1/8 thyme and 1/4 dried tarragon.
  • 4. draw up the two long ends and fold them three times. Don't fold too close to the chicken. It need room to puff. Fold each end 3-4 times, pressing to seal.
  • 5. If you want you can crimp the packets with the crimped folds done in a traditional papillote packet.
  • 6. Repeat with the remaining parchment and ingredients. Place on the baking sheet next to the first one. Place on a shelf in the bottom 1/3 of the oven that is preheated to 400 degrees. Bake 35-40 minutes. Remove packet to dinner plate an carefully slit puffed up puff to release the steam and get to the delicious goodness inside.
