1/4 cup plus 1 tablespoon all-purpose flour, divided
1 teaspoon salt
4 tilapia fillets (4 ounces each)
2 tablespoons plus 2 teaspoons butter, divided
1/3 cup reduced-sodium chicken broth
2 tablespoons white wine or additional reduced-sodium chicken broth
1-1/2 teaspoons lemon juice
1-1/2 teaspoons minced fresh parsley
2 cups hot cooked rice
1/4 cup sliced almonds, toasted

Steps:

  • In a shallow bowl, combine 1/4 cup flour and salt. Dip fillets in flour mixture. , In a large nonstick skillet, cook fillets in 2 tablespoons butter over medium-high heat until fish just begins to flake with a fork, 4-5 minutes on each side. Remove and keep warm., In the same skillet, melt remaining 2 teaspoons butter. Stir in remaining 1 tablespoon flour until smooth; gradually whisk in broth, wine and lemon juice. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in parsley. Serve fish and sauce with rice; garnish with almonds.

8 (4 ounce) tilapia fillets
1 tablespoon chopped fresh parsley
2 teaspoons lemon-pepper seasoning
½ cup salted butter, melted
⅛ cup dry bread crumbs

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a broiler pan with aluminum foil.
  • Place fillets on the prepared pan. Stir parsley and lemon-pepper seasoning into the melted butter in a small bowl. Baste fillets with the butter mixture using a turkey baster, using the entire mixture. Sprinkle fillets with bread crumbs.
  • Broil in the preheated oven until the thickest part of the fish flakes easily with a fork, 7 to 9 minutes.
  • Remove fish from the pan and place it on a platter. Remove the foil very carefully from the pan, taking care not to spill the excess butter sauce, and pour over the fish. Serve immediately.

1/4 cup fresh lemon juice
1 1/2 teaspoons drained green peppercorns in brine, lightly crushed
1 teaspoon butter
1 teaspoon vegetable oil
12 ounces tilapia fillets or 12 ounces sole fillets
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 cup all-purpose flour
2 teaspoons butter
lemon wedge (optional)

Steps:

  • Combine first 3 ingredients.
  • Melt 1 teaspoon of butter with oil in a large nonstick skillet over low heat.

6 tablespoons extra-virgin olive oil
3 cloves garlic, thinly sliced

Grated zest and juice of 1 lemon, plus wedges for serving
1 tablespoon unsalted butter

Steps:

  • Pat the tilapia dry with paper towels, then season with 1/2 teaspoon salt and a few grinds of pepper. Spread the flour on a plate; dredge the tilapia in the flour, tapping off the excess.
