Rabbit Cacciatore image

An easy recipe for an Italian flavored American rabbit.

Number Of Ingredients 13

2 - rabbits,cut up
15 ounce(s) sliced mushrooms
1 medium onion, sliced
15 ounce(s) tomato sauce
1/4 cup(s) flour
- garlic salt, to taste
- black pepper
2 tablespoon(s) vegetable oil
1/2 teaspoon(s) oregano, dried
1/4 teaspoon(s) ground garlic
1 medium green pepper, sliced into strips
1 - rib of celery, chopped
1 1/2 ounce(s) ripe, sliced black olives

Steps:

  • Shake the rabbit pieces in a bag with flour, salt and pepper. In a large skillet saute the pieces in oil until golden brown.
  • Add the remaining ingredients, except for the olives. Cover and simmer over low heat about 1 hr., or until the rabbit is tender.
  • Stir in black olives simmer 10 mins. more. Serve with rice or noodles if desired.
