One of our favorite tilapia recipes! This quick and easy one-pan meal is cooks the tilapia with onions, garlic, diced tomatoes, mushrooms, and olives.

1 tablespoon extra virgin olive oil
1 small onion, 1/4 inch slices, sliced lengthwise
1 clove garlic, minced (1 teaspoon)
1 14-ounce can crushed tomatoes, undrained
1 cup sliced cremini or button mushrooms
3/4 cup green pimento-stuffed olives, coarsely chopped
1 Tbsp chopped fresh oregano or 1/2 teaspoon dried oregano, crushed
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
4 tilapia fillets (6 to 8 ounces each)

Steps:

  • Make the sauce: Add the canned tomatoes and their juices. Add the sliced mushrooms, chopped olives, oregano, salt and pepper. Bring to a simmer.
  • Serve: Use a wide spatula to lift the fillets from the pan to a serving plate. Spoon sauce over fish. Serve with rice, and/or crusty bread. Original recipe from Better Homes and Gardens.

Tilapia with Balsamic Browned Butter and Creamy Farfalle with Bacon, Tomato and Peas image

1 pound farfalle, bow ties
3 tablespoons extra-virgin olive oil, divided
5 slices center cut bacon, chopped
1 medium onion, chopped
2 to 3 grated garlic cloves
1 bay leaf
12 white mushrooms, thinly sliced
1 can San Marzano tomatoes
4 (6 to 8-ounce) tilapia fillets
Salt and freshly ground black pepper
1/2 cup all-purpose flour
1 (10-ounce) box frozen peas
1/4 cup mascarpone cheese
3 tablespoons butter
1/4 cup balsamic vinegar
1/2 cup basil leaves, shredded or torn

Steps:

  • Heat a pot of water to a boil, salt the water and cook pasta to al dente.
  • Heat a deep large skillet with 1 tablespoon extra-virgin olive oil over medium-high heat. Add bacon and crisp 3 to 4 minutes. Add onions, garlic, bay leaf and mushrooms, season with salt and pepper and cook until tender but not browned, 5 minutes. Add tomatoes, crush them up with a wooden spoon and simmer 15 minutes on low heat.
  • Season the fish with salt and pepper. Dust fish with flour and shake off excess.
  • Heat 2 tablespoons extra-virgin olive oil in a large skillet over medium high heat. Cook fish 4 minutes on each side.
  • While fish cooks, stir peas into sauce, return to bubble and stir in mascarpone cheese. Adjust seasoning.
  • Remove fish from skillet to a platter and cover loosely with foil to keep warm. Reduce heat to medium and add butter to pan. Brown butter, 2 to 3 minutes, stir in balsamic and simmer 1 to 2 minutes to reduce by half. Pour the brown butter and vinegar over fish.
  • Drain pasta, toss with sauce and wilt basil into pasta.
  • Serve fish with pasta alongside.

This dish is quick, easy, and even better, it's healthy! Served on a bed of rice with the sauce arranged artistically around the plate, it looks absolutely stunning.

4 (4 ounce) fillets tilapia
butter flavored cooking spray
4 teaspoons margarine, melted
2 tablespoons lemon juice
2 tablespoons chopped fresh dill weed
1 tablespoon lemon-pepper seasoning
4 teaspoons cream cheese
5 tablespoons lemon juice, or to taste
2 tablespoons chopped fresh dill weed

Steps:

  • Preheat the oven to 375 degrees F (175 degrees C).
  • Grease a baking sheet with cooking spray. Place the tilapia fillets on the sheet, and coat them lightly with cooking spray. Spoon the melted margarine over each fillet, then drizzle with 2 tablespoons of lemon juice. Season with lemon pepper and 2 tablespoons of dill.
  • Bake for 15 minutes in the preheated oven, or until the fish is opaque and flakes easily.
  • While the fish is baking, combine the cream cheese, 5 tablespoons of lemon juice and 2 tablespoons of dill in a small bowl. Heat in the microwave for 1 minute and 10 seconds, then stir to blend.
  • Place fillets onto serving plates, and spoon sauce around them in a decorative fashion.

I found this recipe on a cooking blog that I frequently read, and it's so good. This dish is so easy because everything is prepared in one skillet, on the stovetop. The fish comes out with tons of flavor, and all the flavors complement each other very well. Any mild, white fish can be subtituted for the tilapia, too. Sometimes, I drain the tomatoes and add 1/4 c. white wine to the sauce. My picture shows this with Recipe #69063, and crusty bread might be good with this too.

1 tablespoon olive oil
1 small onion, cut into thin wedges
1 garlic clove, minced
1 (14 ounce) can diced tomatoes, undrained (fire-roasted is nice, if you can find it)
8 ounces cremini mushrooms, sliced
3/4 cup green olives, pimiento-stuffed, coarsely chopped
1 teaspoon dried oregano, crushed
1/8 teaspoon fresh ground pepper
4 (6 -8 ounce) tilapia fillets

Steps:

  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the onions and cook until tender, about 2-3 minutes.
  • Add the garlic and cook until fragrant, about a minute more.
  • Add tomatoes, mushrooms, olives, oregano, and pepper. Bring sauce to boiling.
  • Gently place the fish fillets in the pan and scoop some of the sauce over the fillets. Return to boiling.
  • Reduce the heat and cover. Simmer for 8 to 10 minutes or until fish flakes easily when tested with a fork.
  • With a wide spatula, lift fish from skillet to a serving dish. Spoon the sauce over fish, and serve.
