TAMRA'S MICROWAVE TILAPIA

1 pound tilapia fillets
1 tablespoon butter
1 garlic clove, minced
1 teaspoon chopped fresh tarragon
¼ cup apple cider vinegar

Steps:

  • In a microwavable baking dish, arrange tilapia fillets in a single layer. Dot with pieces of butter, and minced garlic. Sprinkle over fresh tarragon. Cover with waxed paper and microwave on high for 2 minutes.
  • Turn fillets over, recover, and continue to microwave on high for a further 2 minutes. Remove immediately, sprinkle with apple cider vinegar, and serve.

ASIAN GLAZED TILAPIA

This recipe comes from a local restaurant. I finally begged and begged and the chef gave me the ingredient list. I had been experimenting with several recipes using a marinade of soy sauce and balsamic vinegar trying to recreate my favorite menu item, but the fish was always over powered. Not so with this combination. The sauce lends the fish a sweet flavor, but doesn't overwhelm. I made it for my friends and they all agreed it was one of the best seafood dishes they've ever eaten. Sorry, but I didn't have a chance to snap any photos. I served the fish over Asian rice straw noodles - I think any light noodle would work nicely. I tossed the noodles with a few tablespoons of the glaze used on the fish, and paired with sautéed zucchini and yellow squash which were julienned for a pretty side dish. I hope you give this a try. It's really quick, easy, and impressive.

4 lbs fresh tilapia fillets, frozen can be used as well (about 4 - 6 filets)
1 -2 teaspoon salt
1 -2 teaspoon pepper
1 tablespoon olive oil (this is not an exact measurement, just coat your pan enough to keep the fish from sticking)
4 tablespoons hoisin sauce
4 tablespoons soy sauce (I use low sodium)

Steps:

  • Sprinkle each side of the fish with salt and pepper.
  • Coat a sautée pan with Olive Oil or your favorite cooking oil. I find that a non-stick pan works best for cooking this delicate fish.
  • Prepare the glaze by mixing equal parts Hoisin with Soy sauce. The hoisin is thicker and sweeter giving balance to the soy. You won't need that much for glazing the fish so you can use the remainder to toss in with your noodles if you want.
  • Brush the tops of each of the fish with the glaze and lay that side down on the pan allowing the glaze to form a seared on crust.
  • Brush the other side of the fish with glaze before flipping.
  • Each side takes about 4-6 minutes depending on how thick your filet is. I had big meaty ones so total cooking time was about 15 minutes. If you are unsure whether they are done, make a small cut into the the thickest part of the fish. If the cut is easy to make and the fish flakes, then it's done. If it's hard to pierce with a fork or seems tough, give it a few more minutes. You may have to flip the fish in order to keep it from burning if you are cooking thicker pieces and need the extra time. You may also want to cover the pan with a lid and let the steam help you out.
  • Serve on a bed of asian noodles or alone. It's sure to be a crowd pleaser for those that enjoy seafood, and even those who don't!

I have to put this recipe somewhere before it gets thrown away!! It was in the paper as a "Quick Meal". I just love tilapia!! Feel free to add more garlic or ginger to this sauce....the more the merrier, right?

1/4 cup soy sauce
2 tablespoons sugar
3 large garlic cloves, minced (about a Tbs.)
1 lime, juice of (2 Tbs or so)
1 teaspoon fresh ginger, minced
1/4 teaspoon crushed red pepper flakes
1 lb tilapia fillet (or other thin mild fish)

Steps:

  • Combine the soy sauce, sugar, garlic, lime juice, ginger and red pepper flakes in a wide, shallow baking pan that will hold all of the fish in a single layer.
  • Stir briefly to dissolve the sugar.
  • Add the tilapia, then turn it over so that it's coated all over with the marinade.
  • Set aside for 20 min or so.
  • Heat the broiler to high, and move the oven rack to position closest to heat.
  • Slide the pan into the oven, and broil the fish for 5 minute Keep the oven door ajar so the broiler element stays lit.
  • Turn the pan around (back to front), and broil for 5 more minute.
  • If the juices in the pan appear to burn, add a little water to the dry spot to prevent burning.
  • The fish should be opaque and flaky.
  • Spoon the sauce over the fish when serving.

Dead easy fish, always tasty and good! The flavours are Vietnamese/Thai/Balinese. You can add any other favourite asian flavours to the marinade, get creative! Australian measurements used (1 T = 20mls)You can use lemon juice if you have to but lime is really much nicer. If you have some, add a chopped kaffir lime leaf. I leave the peanut butter out on mine but my husband loves it.

2 (150 g) fish fillets (about 150g each I like to use Basa catfish or barramundi)
2 garlic, cloves crushed
2 teaspoons minced gingerroot
2 teaspoons chili paste (like sambal oelek- can also use fresh, alter to taste)
2 teaspoons chopped coriander (cilantro)
1 tablespoon lime juice
salt
1 tablespoon peanut butter (this will make enough for 2 fish, halve if only one of you wants peanut butter) (optional)

Steps:

  • Mix all marinade ingredients except peanut butter in a small bowl or cup. Taste to check for seasoning.
  • If you are adding the peanut butter, add it to the mix and stir to create a thick paste.
  • Spread over frozen or fresh fish fillets.
  • Put fillets onto a plate with a microwave cover or place them in a shallow covered container (but make sure a little of the steam can escape). If fish are frozen, cook on high for at least 6-7 minutes (depending on thickness of fish). If thawed, about 4-5 minutes should be sufficient. This will change depending on your microwave so do check the fish by checking the colour in the centre of the fillet (it should be opaque).
  • Serve with rice and a crisp salad.

1 (8 ounce) can crushed pineapple, drained
2 tablespoons soy sauce
2 tablespoons chopped green onions

Steps:

  • Place fish fillets in a 8x8-inch glass baking dish.
  • In a small bowl, combine pineapple, soy sauce and green onion.
  • Pour over fish.
  • Cover fish with saran wrap; venting on one corner of the dish.
  • Microwave on High 6 to 8 minutes or until fish flakes easily with a fork.

This is quick and easy (done in the microwave) and very tasty. Serve with steamed rice and broccoli. (cook rice before putting fish in microwave, as it only takes 5 minutes).

SAUCE
4 Tbsp orange juice
2 Tbsp soy sauce
2 Tbsp hoisin sauce
2 tsp sesame oil
1/2 tsp ground ginger
2 tsp minced garlic
FISH
4 tilapia fillets
2 Tbsp thinly sliced green onions

Steps:

  • 1. SAUCE: In a small bowl, whisk together all of the sauce ingredients.
  • 2. Coat a 9 x 9-inch glass baking pan with non-stick cooking spray. Place fillets in pan side by side and pour sauce over them, tipping pan to distribute the sauce all around. Sprinkle green onions over fish. -
  • 3. Cover pan with plastic wrap (leave one corner open to vent). Microwave on high for 5 minutes. (If you microwave doesn't have a revolving plate, turn pan a quarter turn halfway through cooking time.)
  • 4. Remove plastic wrap and serve, putting a little of the sauce on each fillet.
