For chile lime butter
1/2 stick (1/4 cup) unsalted butter, softened
1 tablespoon finely chopped shallot
1 teaspoon finely grated fresh lime zest
2 teaspoons fresh lime juice
1 teaspoon minced fresh Thai or serrano chile (preferably red), including seeds
1/2 teaspoon salt
For fish
6 (5- to 6-oz) pieces skinless tilapia fillet or farm-raised striped bass fillets with skin
1/2 teaspoon salt
2 tablespoons vegetable oil

Steps:

  • Make chile lime butter:
  • Stir together butter, shallot, zest, lime juice, chile, and salt in a bowl.
  • Prepare fish:
  • If using striped bass, score skin in 3 or 4 places with a thin sharp knife to prevent fish from curling (do not cut through flesh). Pat fish dry and sprinkle with salt. Heat 1 tablespoon oil in a 12-inch nonstick skillet over moderately high heat until just smoking, then sauté 3 pieces of fish, turning over once with a spatula, until golden and just cooked through, 4 to 5 minutes, and transfer to a plate. Sauté remaining fish in remaining tablespoon oil in same manner.
  • Serve each piece of fish with a dollop of chile lime butter.

½ cup all-purpose flour
1 tablespoon olive oil
2 tablespoons unsalted butter, melted

Steps:

  • Rinse tilapia fillets in cold water and pat dry with paper towels. Season both sides of each fillet with salt and pepper. Place the flour in a shallow dish; gently press each fillet into the flour to coat and shake off the excess flour.
  • Heat the olive oil in a skillet over medium-high heat; cook the tilapia in the hot oil until the fish flakes easily with a fork, about 4 minutes per side. Brush the melted butter onto the tilapia in the last minute before removing from the skillet. Serve immediately.

1 -1 1/3 lb tilapia fillet, about 1/2 inch thick
3 tablespoons all-purpose flour
salt and pepper
1 clove garlic, minced or pressed
1/2 cup dry white wine
1 tablespoon lime juice
1/2 tablespoon butter
1 tablespoon olive oil
3 green onions, chopped

Steps:

  • Rinse the fish and pat dry.
  • Put the flour on a plate and season it with salt and pepper.
  • Dredge the fillets in the flour, patting to remove excess.
  • In a small bowl, combine the garlic, wine, lime juice and butter, then set aside.
  • Heat the oil in a 10 to 12-inch frying pan over medium-high heat.
  • Add the fillets without overlapping (you may need to cook in 2 batches).
  • Cook until golden on the bottom, about 3 minutes.
  • Turn the fillets over and cook until opaque through the thickest part, 1 to 2 minutes more.
  • Transfer the fish to a platter and keep warm (cover with foil or place in a 200 degree oven).
  • Add the wine mixture to pan and boil, scraping up cooked bits, until reduced by half, 2 to 3 minutes.
  • Stir in the onions and heat on low about 30 seconds.
  • Pour the sauce over the fish and serve.

¼ cup honey
3 tablespoons lime juice
2 cloves garlic, minced
1 pound tilapia fillets
salt and pepper to taste
1 butternut squash - peeled, seeded and sliced
1 bunch fresh asparagus spears, trimmed and chopped
poultry seasoning
½ cup mozzarella cheese

Steps:

  • In a large bowl, mix the honey, lime juice, and garlic. Season tilapia with salt and pepper, place in the bowl, and marinate 1 hour in the refrigerator.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Arrange the squash and asparagus in the baking dish. Place tilapia on top of vegetables, and season with poultry seasoning. Discard remaining marinade.

1 teaspoon silly crazy salt (I don't know what Silly Salt is) or 1 teaspoon garlic salt (I don't know what Silly Salt is)

1 lime, juice of

This recipe was somewhat of an accident for me. My mom had prepared some homemade garlic butter for some reason and I mistakenly used it instead of regular butter to saute some Tilapia filets. I usually put lemon on my fish, but we were out, so I used lime juice instead. Everyone really liked it, so I make it all the time now. Even my very picky husband requests it! It's easy to adjust this recipe to feed more or less people.

8 tilapia fillets (4-6 oz each)
4 tablespoons butter (do not substitute with margarine)
1 tablespoon garlic powder
1/4 cup lime juice

Steps:

  • Melt the butter in a large skillet over medium heat.
  • Add tilapia fillets (thawed if frozen) to the pan.
  • Sprinkle the fish with garlic powder (use more or less depending on your tastes).
  • Pour lime juice over fish (use more or less depending on your tastes).
  • Saute the tilapia until the fillets are opaque and easily flake with a fork (I usually turn once during cooking).
