Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Lay 4 sheets of aluminum foil on a work surface.
- Place 1 tilapia fillet in the center of each piece of foil, and top with 1/2 tablespoon butter. Sprinkle each fillet with dill, garlic powder, pepper, and salt. Fold foil over top and roll up edges to create a sealed packet. Place packets on a baking sheet.
- Bake in the preheated oven until fish flakes easily with a fork, about 20 minutes.

- 1. Preheat the oven to 400 degrees F. Whisk together the white wine, olive oil, lemon zest and juice, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl.
- 2. Place each tilapia fillet on a separate 14-by-12-inch piece of nonstick foil. Drizzle one-quarter of the white wine mixture over each fish fillet and top with one-quarter of the tomatoes, capers and thyme. Fold the foil up over each piece of fish and seal to create a packet. Put the packets on a sheet pan and bake until the fish becomes fragrant, 20 to 25 minutes depending on the thickness of the fillets; let cool for 3 minutes. Open the packets, sprinkle 1/2 teaspoon salt evenly over the fillets and serve.
GRILLED TILAPIA IN FOIL PACKETS
Steps:
- Season tilapia with salt and pepper. Place olive oil and garlic in a bowl or resealable bag and add seasoned tilapia. Marinate in the refrigerator for at least 15 minutes.
- Place each tilapia fillet onto its own aluminum foil square. Use the fish to smear the tin foil with olive oil. Spoon diced tomatoes, onion, and jalapeno evenly over fillets. Top with bell pepper and cilantro. Fold packets up like envelopes.
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Cook fillets on the preheated grill until easily flaked with a fork, about 10 minutes, flipping halfway through cooking time.

- Preheat an outdoor grill for high heat and lightly oil the grate.
- Cut a piece of heavy duty aluminum foil large enough to make an airy foil pouch to hold tilapia fillets.
- Place fillets on top of the foil and season with dill, salt, and pepper. Place chives on top of fillets, followed by butter. Seal up pouches loosely.
- Cook fillets on the preheated grill until they flake easily with a fork, 10 to 15 minutes.

- 1. Preheat the oven to 400 degrees F. Lay out four long sheets of aluminum foil. Divide the zucchini between two foil pieces. Lay one fish fillet on top of each pile of zucchini. Season with salt and pepper. 2. Scatter the onion and tomatoes over the fillets. Lay thyme over the top. Drizzle with lemon juice and olive oil. 3. Fold in the sides of the foil and close. Place each package in another sheet of foil and double wrap. Set directly on the oven rack and bake for 20-25 minutes, until the fish is cooked through. Transfer to plates to serve.

- Preheat the oven to 450 degrees F.
- Lay each fillet out on its own piece of foil. The foil should be a few inches longer than the fillet. Drizzle each fillet with the olive oil.
- Combine the garlic, tomatoes, shallots, thyme and some salt and pepper in a small bowl. Top each fillet with the tomato mixture. Fold over the fillet and roll up the edges to create a seal. Place on a baking sheet and bake for 15 to 20 minutes. Serve removed from the foil with veggies on the top and any sauce drizzled over the fish.
