Quick and easy sautéed tilapia fillets topped with a garlic butter herb sauce flavored with Dijon and prosciutto.

1/4 cup unsalted butter, softened
1 1/2 tablespoons chopped flat-leaf parsley
1 large garlic clove, peeled and minced
2 teaspoons minced shallots
1/2 teaspoon Dijon mustard
1 1/2 tablespoons minced prosciutto
2 tablespoons freshly squeezed lemon juice
Salt, to taste
Freshly ground pepper, to taste
1 tablespoon canola oil
4 (5 to 6 ounce) skinless tilapia fillets
Lemon wedges for serving

Steps:

  • Mix butter with parsley, garlic, shallots, Dijon mustard, prosciutto, and lemon juice. Add a pinch of salt and pepper then stir until evenly mixed. Set aside.
  • Heat oil in a large non-stick skillet over medium-high heat. Season the tilapia fillets with salt and pepper. When oil is shimmering, add fish fillets top side down and until fish is almost cooked through and the underside is deep golden brown, about 4 minutes. Turn fillets over.
  • Using a small offset spatula, spread butter mixture over the top of each fillet, evenly dividing butter among the fillets. Cook for 1-2 minutes more or until fish is just cooked through and butter mixture has melted into the fish. Serve immediately.

4 boneless skinless tilapia filets
1/2 cup flour, seasoned with salt and pepper
1 tbsp. chopped fresh shallots
1/4 cup dry white wine
1/4 cup heavy cream
2 tbsp. boursin cheese
1 tbsp chopped fresh parsley

Steps:

  • 1. Melt butter in large sauté pan over medium heat. Dredge fillets in seasoned flour and sauté on first side for 4 minutes or until browned. Turn and cook for another 3 minutes or until fillets flake evenly with a fork. Put fillets on plate and hold in a warm oven. Add shallots and wine to sauté pan and cook for 2 minutes, or until volume of liquid is reduce by half. Add cream, bring sauce to a boil and turn off heat. Steps:

  • In a shallow bowl, combine 1/4 cup flour and salt. Dip fillets in flour mixture. , In a large nonstick skillet, cook fillets in 2 tablespoons butter over medium-high heat until fish just begins to flake with a fork, 4-5 minutes on each side. Remove and keep warm., In the same skillet, melt remaining 2 teaspoons butter. Stir in remaining 1 tablespoon flour until smooth; gradually whisk in broth, wine and lemon juice. butter flavored cooking spray
4 teaspoons margarine, melted
2 tablespoons lemon juice
2 tablespoons chopped fresh dill weed
1 tablespoon lemon-pepper seasoning

5 tablespoons lemon juice, or to taste
2 tablespoons chopped fresh dill weed

Steps:

  • Preheat the oven to 375 degrees F (175 degrees C).

1/2 cup all-purpose flour
2 tablespoons extra virgin olive oil
3 tablespoons butter
1/4 cup balsamic vinegar

Steps:

  • Salt and pepper the fish and dredge in the flour. Shake off any extra flour.
  • Heat olive oil over medium-high heat.

2 tbsp cornflour
2 tbsp sunflower oil
4 spring onions , sliced
2 garlic cloves , crushed
small piece fresh ginger , finely chopped
2 tbsp soy sauce
1 tbsp brown sugar
juice 1 lime , plus 1 lime chopped into wedges, to serve
1 red chilli , deseeded and sliced
handful Thai basil leaves or coriander leaves
