3-Cheese Macaroni and Cheese image

Number Of Ingredients 12

1 tablespoon salt, plus more for pasta water
1 pound large elbow macaroni
6 tablespoons butter
6 tablespoons all-purpose flour
3 cups milk
1 cup heavy cream
1 tablespoon freshly ground black pepper
1 pound white Cheddar, shredded
4 ounces Romano, shredded
4 ounces Asiago, shredded
2 cups bread crumbs (suggested: panko (Japanese) available at most markets)
2 tablespoons chopped fresh parsley, for garnish

Steps:

  • Preheat oven to 325 degrees F.
  • In large pot filled with water add 3 pinches of salt and the macaroni and place over high heat. Bring to a boil and let cook until al dente, about 8 minutes. Drain. Set aside.
  • In a large saucepan, melt butter. Sprinkle flour over butter and cook 2 to 3 minutes on medium heat, whisking until a roux or paste forms. Add cold milk and whisk vigorously until dissolved. Cook sauce on medium-low heat until thick and bubbly. Add heavy cream, all cheeses, 1 tablespoon of salt, and 1 tablespoon pepper. Cook until cheeses are fully melted, stirring occasionally.
  • Add cooked macaroni to cheese mixture and mix thoroughly. Place macaroni mixture in a 13 by 9 baking dish and top with breadcrumbs. Place in the oven and bake for 12 to 15 minutes or until golden brown. Top with fresh parsley and serve.

We are a family of garlic-lovers however I don't recommend using more than 1 teaspoon fresh garlic as it will overpower the cheese mixture, or omit the garlic totally. These make great appetizers to serve at a get together, to save time you can prepare the cheese mixture up to a day in advance, cover and refrigerate, and you can fill the crescent rolls, slice and chill for up to 2 hours in advance. Recipe may be doubled if desired.

1 cup finely crumbled blue cheese
1/2 cup shredded monterey jack cheese
4 tablespoons cream cheese, softened
2 tablespoons mayonnaise
1 teaspoon minced fresh garlic or 1/4 teaspoon garlic powder
2 teaspoons minced jalapeno peppers (can use more)
2 (8 ounce) cans refrigerated crescent dinner rolls

Steps:

  • Heat oven to 375 degrees.
  • Prepare a lightly greased baking sheet/s.
  • Mix all ingredients (except the crescent rolls) together in a bowl until blended.
  • Separate 2 cans of dough into 4 long rectangles, firmly press perforations together to seal.
  • Spread/divide the cheese mixture evenly over the 4 rectangles.
  • Starting at the short side roll up each rectangle then pinch edges to seal.
  • Cut each roll into 8 slices.
  • Place cut side down on the baking sheet/s.
  • Bake for 12-15 minutes or until lightly golden brown.
  • Immediately remove from baking sheet.
  • Cool 3-4 minutes then serve warm.
  • Delicious!

1/2 c montery jack cheese shredded
4 Tbsp softened cream cheese
2 Tbsp mayo
1 tsp minced garlic
2 tsp minced jalapeno peppers, can use more
2-8 oz can(s) refrigerated crescent rolls

Steps:

  • 1. Heat oven to 375 prepare a lightly greased cookie sheet Mix all ingredients (except crescent rolls) together in a bowl until blended. Seperate 2 cans of dough into 4 long rectangles, firmly press perforations together to seal. 1 pound ground beef
2/3 cup chopped onion
2 cups water
2 cans (6 ounces each) tomato paste
1 tablespoon beef bouillon granules
1-1/2 teaspoons dried oregano
1 carton (15 ounces) ricotta cheese
2 cups shredded part-skim mozzarella cheese, divided
1/2 cup grated Parmesan cheese
1 large egg, lightly beaten
24 jumbo pasta shells, cooked and drained

Steps:

  • In a large skillet, cook beef and onion over medium heat until the meat is no longer pink, breaking meat into crumbles; drain. Stir in the water, tomato paste, bouillon and oregano. Cover and simmer for 30 minutes. , Meanwhile, in a large bowl, combine the ricotta cheese, 1 cup mozzarella, Parmesan cheese and egg. Stuff shells with the cheese mixture., Arrange shells in a greased shallow 3-qt. or 13x9-in. baking dish. Spoon meat sauce over shells. Cover and bake at 350° for 30 minutes. Uncover; sprinkle with remaining mozzarella cheese. Bake until cheese is melted, 3-5 minutes longer. Freeze option: After assembling, sprinkle casserole with remaining mozzarella cheese. Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary until heated through and a thermometer inserted in center reads 165°.

2 slices wheat, rye or sourdough bread
2 tablespoons softened cream cheese
2 tablespoons butter, softened
2 slices white cheese (brick, Monterey Jack or Swiss)
2 slices yellow cheese (cheddar, pepper or taco)
1 red onion slice
1 tomato slice

Steps:

  • Spread cream cheese on one side of both slices of bread; spread butter on the other side. On cream cheese side of one slice, layer white cheese, yellow cheese, onion and tomato. Top with remaining slice of bread, cream cheese side down. , In a small skillet over medium heat, toast sandwich for 2-3 minutes on each side or until bread is lightly browned.
