Spicy Three-Cheese Bacon Bites image

Perfect for a cocktail party, this cheesy appetizer is a quick and easy way to serve a crowd.

1 loaf (18 inch) baguette French bread, cut into 36 (1/2-inch) slices
1 tablespoon olive oil
1 cup crumbled crisply cooked bacon
1 cup shredded deli rotisserie chicken
1 cup shredded mozzarella cheese (4 oz)
1 cup shredded pepper Jack cheese (4 oz)
1/2 cup chopped red bell pepper
1 package (8 oz) cream cheese, softened
2 to 3 chipotle chiles in adobo sauce (from 7-oz can), finely chopped
3 tablespoons finely chopped chives

Steps:

  • Heat oven to 400°F. Line cookie sheet with cooking parchment paper. Place bread slices with sides touching in single layer on parchment paper. Brush with oil.
  • Bake 5 to 7 minutes or until bread is toasted. Meanwhile, in medium bowl, stir together remaining ingredients except 1 tablespoon of the chives.
  • Spoon mixture on toasted bread slices; sprinkle with remaining 1 tablespoon chives.
  • Bake 10 to 12 minutes or until cheese is melted and golden brown. Cool 5 minutes. Slide parchment and bread onto wooden cutting board or serving platter so guests can pull them apart. Serve warm.

18 Rhodes™ Dinner Rolls or 12 Rhodes Texas™ Rolls, thawed but still cold
12 bacon strips, cooked and crumbled
1 cup (4 ounces) shredded mozzarella cheese
1/2 cup shredded Asiago cheese
1/2 cup grated Parmesan cheese
1/2 cup thinly chopped green onions
1/4 cup Italian salad dressing
1 garlic clove, minced

Steps:

  • Cut rolls into 4 equal pieces and place in a large bowl. Add all remaining ingredients; gently toss until well combined. Place in a 10-in. round casserole or baking dish that has been coated with cooking spray. Cover with plastic wrap coated with cooking spray; let rise until doubled. , Remove plastic wrap. Bake at 350° for 25-30 minutes. If necessary, cover with foil the last 10 minutes of baking to prevent over browning.

18 Rhodes White Dinner Rolls or 12 Rhodes Texas Rolls, thawed but still cold
12 strips bacon
1 cup grated mozzarella cheese
1/2 , grated asiago cheese
1/2 cup grated Parmesan cheese
1/2 cup , diced green onion
1 clove garlic, minced
1/4 cup italian herb dressing

Steps:

  • Cut rolls into 4 equal pieces and drop in a large bowl. Cook bacon and cut into small pieces. Add bacon and remaining ingredients to cut up rolls. Toss together until well combined. Place in a sprayed 10-inch round casserole dish or baking pan. Cover with sprayed plastic wrap and let rise until double. Remove wrap and bake at 350°F for 25-30 minutes. Cover with foil last 10 minutes of baking, if necessary, to prevent over browning.
