I looked all over for a Mac and Cheese recipe that I could make for Thanksgiving. This will be my first time cooking something to share with the family that isn't a dessert item (I'm much more of a baker than a cook). When I came across this recipe, I wondered why I didn't think of Paula Deen first. She may say some suspect things to people, but you can't deny that her food is delicious! 2 cups elbow macaroni Dried, 4 Cups Cooked
1/3 cup cheddar cheese Grated
1/3 cup swiss cheese Grated
1/3 cup jack cheese Grated
1/3 cup colby cheese Grated
1/3 cup muenster cheese Grated
1/3 cup gouda cheese Grated
1/2 cup sour cream
4 tablespoons butter cut into pieces
3 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup milk
non-stick cooking spray

Steps:

  • Preheat oven to 350 degrees F.
  • In a large pot, bring water to boil. Season water with salt and cook macaroni until al dente (An Italian phrase meaning "to the tooth," used to describe pasta or other food that is cooked only until it offers a slight resistance when bitten into, but which is not soft or overdone), about 10 minutes.
  • Drain pasta and place in a large bowl and while pasta is still hot add all the cheese.
  • In a separate medium bowl, using a whisk, combine the sour cream, butter, eggs, salt, pepper, and milk and add to the macaroni mixture.
  • Spray casserole dish with nonstick and pour macaroni mixture into the dish.
  • Bake for 30 to 45 minutes or until golden brown. Top with additional cheese, if desired.

4 cups cooked drained elbow macaroni

½ lb bacon, sliced
5 cloves garlic, minced
2 cups panko breadcrumbs
½ cup fresh chives, chopped
½ cup fresh parsley, chopped
4 tablespoons butter
¼ cup flour
3 cups evaporated milk
salt, to taste
pepper, to taste
2 teaspoons dry mustard powder
½ teaspoon cayenne pepper
1 lb macaroni, cooked
½ cup cheddar cheese, cubed
½ cup gruyère cheese, shredded
½ cup colby jack cheese, cubed
½ cup smoked gouda cheese, shredded
½ cup provolone cheese, cubed
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a large pot over medium heat, cook the bacon crispy and the fat has rendered.
  • Add the garlic, bread crumbs, chives, and parsley. Stir and cook until the bread crumbs are toasted, about 5 minutes. Remove from the pot.
  • In the same pot on medium heat, melt the butter. Sprinkle in the flour and stir until combined.
  • Add the evaporated milk and bring to a simmer. Season with salt, pepper, mustard powder, and cayenne. Whisk to incorporate and smooth any lumps. The sauce should be thick enough to coat the back of the spoon.
  • Add the pasta to the sauce and stir to combine.
  • Add the cheddar, Gruyère, Colby Jack, Gouda, and provolone cheese, then fold the cheeses into the pasta. If it seems too dry, add more milk to your liking.
  • Transfer the mixture to a baking dish and top with the shredded mozzarella and cheddar.
  • Bake for 45 minutes, or until the mac 'n' cheese is bubbly, melted, and golden brown on top.
  • Serve with a sprinkle of the bread crumb mixture for added flavor!

6 tablespoons butter
6 tablespoons flour
2 tablespoons McCormick® Mustard, Ground
1½ teaspoons McCormick® Black Pepper, Coarse Ground
1 teaspoon McCormick® Garlic Powder
1 teaspoon salt
4 cups milk
6 cups shredded sharp Cheddar cheese
1½ cups panko bread crumbs
1 teaspoon McCormick® Paprika

Steps:

  • 1. Preheat oven to 400°F. Cook macaroni in large saucepan as directed on package for al dente pasta. Rinse under cold water; drain well.
