Don't be scared! I named these after the King, because like my cupcake recipe, Recipe #226520 these were inspired by Elvis' favorite sandwich. Banana and peanut butter. Bananas that have already turned black work best. Try these dipped in chocolate. Or whipped cream. Or jelly. Or...well you get the idea!

Number Of Ingredients 11

1 cup flour
1/2 cup brown sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/3 cup buttermilk
1/4 cup peanut butter
2 small very ripe bananas
2 eggs
1 1/2 teaspoons vanilla
peanut oil (for frying)

Steps:

  • Combine flour, brown sugar, baking powder, baking soda and salt.
  • In a separate bowl, combine buttermilk, peanut butter, banana, eggs and vanilla.
  • Slowly add the dry ingredients into the peanut butter mixture.
  • Working in batches, drop by spoonfuls into hot oil. Don't overcrowd. Fry until browned all all sides, turning as necessary.
  • Drain on paper towels and keep warm until ready to serve.

4 tablespoons all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
6 tablespoons onions, chopped
1 egg, beaten
2 cups water, boiling
1 cup salad oil

Steps:

  • Combine dry ingredients, onion, and egg.
  • add boiling water, stirring constantly until mixture is smooth.
  • Add more water if necessary.
  • Drop by spoonfuls into deep, hot oil.
  • Cook until golden brown.

Number Of Ingredients 8

1 cup yellow cornmeal
1/4 cup all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1 large egg, room temperature, lightly beaten
3/4 cup 2% milk
1 small onion, finely chopped
Oil for deep-fat frying

Steps:

  • In a large bowl, combine the cornmeal, flour, baking powder and salt. Whisk the egg, milk and onion; add to dry ingredients just until combined. , In a cast-iron Dutch oven or an electric skillet, heat oil to 365°. Drop batter by tablespoonfuls into oil. Fry until golden brown, 2 to 2-1/2 minutes. Drain on paper towels. Serve warm.
