I have heard the resort name, 'The Greenbriar', all my life..it is a very elegant, romantic, and Victorian style resort located in White Sulphur Springs, WVA. Number Of Ingredients 11

1 c olive oil or canola oil or any oil used on salads (salad oils)
1 c finely chopped celery
1 c finely chopped green pepper
2 c finely chopped onion
2 Tbsp minced garlic
13 c crushed tomatoes
1 c tomato puree
1 tsp sweet basil, crushed
1 bay leaf
1 Tbsp sugar
salt and pepper to taste

Steps:

  • 1. Saute onions, celery and green pepper in salad oil, stirring frequently. Add garlic, cook 2 minutes longer.
  • 2. Add tomatoes, puree and seasonings.
  • 3. Simmer uncovered about 2 hours.
  • 4. After it has simmered, fill clean sterilized jars to within 1 inch of top of jar. Put on cap, screw the band 'fingertip' tight. Too tight and air bubbles may not be able to escape while boiling or canning.
  • 5. Process for 45 minutes for quart jars, and 35 minutes for pint jars, in a water bath. Process 35 minutes for pints. Process 45 minutes for quarts. Remove from canner. Let cool in draft-free area (cover with towels to be sure) Check lids to be sure they are sealed. (Press center of lid with your finger. If it moves and makes a "click", the jar is not sealed.)
  • 6. Note: Ground beef, mushrooms, etc., can be added at time of use.
  • 7. Note: if you do not wish to can this sauce, it can also be frozen for up to six months inside freezer.

This is a recipe my grandma made for years and she never wrote it down until I was learning how to make it. It is a sweet meat sauce. I love it and just wanted to share it with everyone else. Let me know what you think. This recipe makes a lot of sauce. I usually put 4 cups in a resealable plastic bag and freeze for later use.

3 pounds ground beef, or more to taste
1 large onion, chopped, or more to taste
2 (16 ounce) cans tomato sauce, or more to taste
2 (6 ounce) cans tomato paste
ground black pepper to taste
1 (16 ounce) can tomato puree, or more to taste
½ cup ketchup
1 cup brown sugar
1 tablespoon prepared yellow mustard
1 tablespoon celery salt
1 tablespoon onion salt
1 tablespoon garlic salt
½ cup grated Parmesan cheese

Steps:

  • Cook and stir ground beef and onion in a large pot until beef is no longer pink, about 10 minutes. Drain excess grease.
  • Pour tomato sauce and tomato paste into the pot; season with pepper. Stir in tomato puree and ketchup. Add brown sugar, mustard, celery salt, onion salt, and garlic salt, stirring after each addition.
  • Simmer sauce over medium-low heat, stirring frequently, until flavors combine, 30 to 45 minutes. Sprinkle in Parmesan cheese during the last 5 minutes of cooking.

1 bushel of sweet bell peppers
salad oil to cook peppers with
1 gal hunts tomato sauce
2 clove garlic, minced
1 tsp sweet basil
2 bay leaves
1/2 tsp ground cloves

Steps:

  • 1. Remove seed and veins from peppers and cut into strips.
  • 2. Fry peppers in batches in oil until about half cooked.
  • 3. Drain peppers from oil and set aside.
  • 4. Combine ingredients and bring to a boil.
  • 5. Add peppers and cook until tender (about 2 hours on low simmer).
  • 6. After it has simmered, fill clean sterilized jars to within 1 inch of top of jar. Put on cap, screw the band 'fingertip' tight. If too tight, then air cannot escape the jars while boiling or canning process.
  • 7. Process in water bath: Add filled and sealed jars in simmering water inside canner, and then bring up water temperature to a steady rolling boil. Make sure the water level is at least one inch over top of jars too. Also, add lid over canner while processing. Process 35 minutes for pints. Process 45 minutes for quarts. Remove from canner. Let cool in draft-free area (cover with towels to be sure). Let sit for 24 hours to cool down before storing. Check lids to be sure they are sealed. (Press center of lid with your finger. If it moves and makes a "click", the jar is not sealed.)

This is my Sicilian great-grandmother's recipe. I've never tasted better. Serve with meatballs and Italian sausage; it's also terrific as a marinara sauce.

3 cloves garlic, minced
1 tablespoon white sugar
2 tablespoons red wine vinegar
2 teaspoons dried oregano
1 pinch crushed red pepper flakes

Steps:

  • In a large skillet combine the crushed tomatoes, tomato paste, tomato sauce, garlic, sugar, vinegar, oregano and red pepper flakes. Stir all together and simmer over low heat for at least 30 minutes (for the best flavor). Stir frequently to prevent burning.

Pasta with White Clam Sauce (pg. 343 in The Original New York Times Cookbook by Craig Claiborne) This recipe was the favorite of my wife's father. When people asked about it, he always told them that it was "Dad's World Famous Spaghetti", and in our family, the name stuck.

1/4 cup butter
1 large garlic clove (finely chopped)
2 tablespoons flour
2 cups clam juice (fresh or canned)
1 1/2 teaspoons dried thyme leaves
1/4 cup parsley, minced
2 cups clams, minced (fresh or canned)
salt & freshly ground black pepper (to taste)

Steps:

  • In a saucepan, heat the butter, add the garlic, and cook for one minute over moderate heat.
  • With a wire whisk, stir in the flour.
  • While stirring, add the clam juice.
  • Add the parsley, salt, pepper, and thyme.
  • Simmer gently for ten minutes.
  • Add the minced clams and heat through.
  • Serve over linguine or spaghetti.

1 pound spaghetti
2 pounds lean ground beef
1 onion, minced
1 (6 ounce) can tomato paste
2 (10.75 ounce) cans condensed tomato soup
2 ½ cups water

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large skillet over medium heat, cook ground beef with onion until meat is brown. Drain. Return meat mixture to pan with tomato paste, tomato soup and water. Cook, stirring, until heated through and thickened, 5 to 15 minutes. Serve over cooked pasta.
