GOURMET BLT WITH CHEDDAR AND AVOCADO

The gourmet BLT with cheddar and avocado is the grown up sandwich of your dreams. Tons of contrasting colors, flavors, and textures make a relatively simple sandwich a true gourmet delight.

4 slices excellent quality bread, sliced fairly thick, lightly toasted
softened butter
mayonnaise, Duke's, or your favorite
aged white cheddar, sliced about 1/8" thick
6-8 slices thick-cut bacon, cooked to your liking
4 leaves leaf lettuce, washed and patted dry
1 perfectly ripe heirloom tomatoes at room temperature, sliced 1/4" thick
1 avocado, sliced in /4" slices
kosher salt and freshly ground black pepper

Steps:

  • Spread each piece of toasted bread with a thin layer of butter and then a generous layer of mayonnaise.
  • Place the white cheddar on the 2 slices of bread that will be the bottoms. Arrange them so they cover the bread as completely as possible.
  • Place the bacon on the cheese so you'll be sure to get bacon in every bite. The bacon I used was really huge--about 1 1/2 oz per slice, pre-cooked weight. If you're using grocery store bacon, you may need more slices. And you can also do the bacon weave before cooking to ensure bacon in every bite.
  • Arrange the leaf lettuce on top of the bacon followed by 3 slices of tomato.
  • Salt and pepper the tomato and then shingle on the avocado slices, 1/2 avocado per sandwich. Lightly salt and pepper the avocado and top with the top slice of bread. Press down lightly.
  • Enjoy!

Number Of Ingredients 12

Eight 3/4-inch-thick slices heirloom tomato
1 teaspoon fleur de sel sea salt, plus more for seasoning
1 teaspoon freshly ground black pepper, plus more for seasoning
2 tablespoons red wine vinegar
2 tablespoons extra-virgin olive oil
12 slices Applewood smoked bacon, cut 1/4-inch thick from slab bacon
1/2 cup julienne strips red onion
2 tablespoons mayonnaise
Four 1/2-inch-thick slices country bread, toasted
1 avocado, cut into 1/4-inch-thick slices
2 cups butter lettuce leaves
2 tablespoons tarragon leaves

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the tomato slices on a tray or large plate. Sprinkle with fleur de sel and black pepper. Drizzle the vinegar and oil over the tomatoes. Allow to sit for 15 minutes.
  • Lay the bacon on a baking sheet, and season with a generous amount of black pepper. Brush some of the juices from the seasoned tomatoes onto the bacon and top with the red onions. Roast the bacon until it is golden brown and the fat has rendered, about 20 minutes.
  • Spread 1 1/2 teaspoons mayonnaise on each slice of country toast. Top each with 3 slices of bacon and the onions. Reserve the bacon drippings. Season the avocado with salt and pepper, and place on top of the bacon. Follow with 2 marinated tomato slices on each sandwich.
  • In a separate bowl, lightly toss the lettuce and tarragon with a small amount of the drippings from the bacon and season as needed with salt and pepper. Top the sandwiches with the salad and serve warm.

CLASSIC BLT SANDWICH

This is a sandwich that I crave a lot. I am just posting it because I couldn't find it posted already on the Zaar...I couldn't believe that! My ex-DH wondered how I make these, so I decided to post it and send him the recipe. Nothing fancy -- just the real, simple, unabridged version. UPDATE: After reading Peg629's review, I have tried it that way, with one slice of toast spread with yellow mustard, and I must say it really, really makes an exceptional BLT! Such a subtle difference, yet genuinely makes a superior BLT, in my opinion! (Thank you Peg629 for that awesome suggestion!)

1/2 lb bacon (approx. 12 slices)
8 slices white bread
8 leaves iceberg lettuce, fresh and full
8 slices of ripened tomatoes
8 tablespoons Hellmann's mayonnaise

Steps:

  • Cook bacon until crispy, then drain on paper towels.
  • Toast the 8 slices of bread.
  • Spread 1 tablespoon mayo on each slice of toasted bread. (More or less, to taste).
  • Add 1 slice of lettuce to 4 pieces of mayo-spreaded toast.
  • Add 2 slices of tomato on top of lettuce.
  • Arrange 3 slices of bacon evenly on top of tomato. (Break bacon slices in half to fit, if needed.).
  • Add 1 slice of lettuce on top of bacon.
  • Put the remaining 4 pieces of mayo-spreaded toast on top to finish the sandwiches.
  • Enjoy!
  • NOTE: I also like to butter the toast slices before adding the mayo -- higher in fat, but tastier, in my opinion!

I adapted this tasty meal from a recipe I saw in my local newspaper. The peppery rocket and salty bacon go wonderfully together, and it looks quite pretty on a plate.

4 slices thick crusty bread
4 -6 strips bacon
2 tomatoes
1 avocado
1 lemon
1 tablespoon pesto sauce or 1 tablespoon freshly chopped basil
1 cup rocket lettuce
1 handful snow peas
1 handful string bean, trimmed and chopped
butter, for spreading
1/2 cup shredded white cheddar cheese or 1/2 cup mozzarella cheese

Steps:

  • Fry bacon until cooked, and then cut into smaller, bite sized, pieces.
  • Meanwhile, bring a small pot of water to the boil.
  • When water is ready, throw in tomatoes for 15 seconds.
  • Scoop them out of pot and put into waiting bowl of cold water.
  • Peel skins off and dice.
  • Put peas and beans into pot of boiling water and cook for 1 minute.
  • You want them to remain crunchy.
  • Mash the avocado in a bowl.
  • Add basil and lemon.
  • Butter the bread and spread avocado thickly on slice.
  • Then top with a bit of rocket, a few diced tomatoes, bacon, peas, beans and finally the cheese.
  • Grill for 2-4 minutes until cheese is bubbling and bread is crusty.
