2 eggs
1 (8 ounce) carton sour cream
1/4 cup milk
1/2 cup fine dry breadcrumb
1/3 cup onion, finely chopped
2 tablespoons parsley, snipped
1 tablespoon Worcestershire sauce
1 tablespoon dijon-style mustard
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 lbs lean ground beef
1 (3/4 ounce) package brown gravy mix
mashed potatoes

Steps:

  • In a large bowl combine eggs, 1/2 cup of the sour cream, and milk; stir in bread crumbs, onion, parsley, Worcestershire sauce, mustard, salt and pepper. Add beef; mix throughly.
  • Pat into a 9x5x3-inch loaf pan.
  • Bake uncovered, in a 350°F oven for about 1 1/4 hours. Let cool 10 minutes remove from pan.
  • Meanwhile for gravy, in medium saucepan stir together the remaining sour cream and the dry gravy mix. Add water as called for on package. Cook according to package directions.
  • Slice meatloaf and serve with mashed potatoes and gravy.

He had his own cooking show on PBS and his recipes were fantastic! Hearty Meatloaf with a creamy gravy that is fantastic over the loaf and of course the mashed potatoes! Freezes WELL and is great the next day! *MY notes: I find using 1/3 beef, 1/3 ground turkey & 1/3 ground pork works really well here too **

  • Let cool 10 minutes; remove from pan.
  • Meanwhile, for the gravy, in medium pan stir together the remaining sour cream and dry gravy mix.
  • Add water as called for on pkg.
  • Cook according to pkg directions,.
  • Slice meat loaf and serve wih the mashed potatoes and gravy.

Now I'm not a meatloaf person at all, but I saw this picture in a magazine this month and it looked incredible. I figure what the heck, I'll give it a try. I changed a few things but I'm converted - it was fantastic, gourmet according to the BF. The worst thing was I forgot to take a picture. I made it with Redskin Mashed Potatoes #126500

3 lbs ground beef (80/20)
1 cup fresh basil, chopped
2 tomatoes, chopped
1 lb bacon, chopped into one inch pieces
2 large yellow onions
3/4 cup panko breadcrumbs
2 eggs
salt and pepper
olive oil (for frying)
parmesan cheese
1/2 onion, sliced
4 slices bacon, chopped in one pieces
1/4 cup flour
1 cup water
1 cup milk

Steps:

  • Preheat oven to 375.
  • Chop 2 onions and and 1 lb of the bacon in a large pan and a little olive oil. Cook the bacon and onions until the bacon is crisp.
  • Chop up the tomatoes and put to the side.
  • Chop up the basil. I rolled and cut into small ribbons.
  • Drain onions and bacon but save the liquid to use as gravy.
  • With a spoon mix the meat, basil, tomatoes, eggs, cooked bacon, and cooked onion, and bread crumbs in a large bowl. Adding salt and pepper to taste.
  • Fill a 9"x13" baking pan with the meatloaf mixture. Then I sprinkled some parmesan cheese and panko bread crumbs on top adnd bake for 35 minutes, until the meat is brown all the way through.
  • Then take the other half onion and slice and fry with bacon until crispy.
  • Remove from the pan, leaving the grease and adding the grease saved previously, should be about 1/4 cup.
  • Gradually add the flour mixing together well.
  • Add water gradually and then milk.
  • Add salt and pepper to taste, cooking to desired thickness.
  • I served a square of meatloaf with a scoop of mashed potatoes and then some of the fried onions and then some gravy.

3 strips bacon
2 eggs
1/4 cup ketchup
2 tablespoons sour cream
3/4 cup plain breadcrumbs
2 tablespoons minced yellow onion
2 cloves garlic, minced
Kosher and freshly ground black pepper
Kosher and freshly ground black pepper
2 Italian sausages, casings removed (mild or spicy)
1 pound 80/20 ground beef
Mustard and Sour Cream Gravy, recipe follows
2 tablespoons butter
1/2 onion, minced
1 tablespoon all-purpose flour
1 cup beef stock
3 tablespoons sour cream
1 tablespoon Dijon mustard
1/2 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Line the glass loaf pan with the bacon, centering the strips lengthwise in the pan, letting the ends hang over the short edge.
  • Lightly beat the eggs in a large bowl. Add the ketchup and sour cream and mix. Add the breadcrumbs, onions and garlic, stirring to incorporate, and sprinkle with salt and pepper. Mix in the sausage, breaking it up to season the egg mixture evenly. Mix in the ground beef, using your hands to mix gently but thoroughly. Press the meatloaf mixture firmly into the loaf pan with the bacon, shaping the meat into a loaf shape. Unmold the meatloaf by turning the pan upside-down, and tapping the bottom to release the meatloaf. Tuck the bacon under the loaf, and place it bacon-side up on a foiled or parchment-lined baking sheet. Bake until the meat registers 160 degrees F, 50 minutes. Let rest 10 minutes before slicing. Serve with Mustard and Sour Cream Gravy.
  • In a saucepan, heat the butter over medium heat, add the onions and saute until the onions are soft, about 6 minutes. Sprinkle the flour on top of the onions and cook for 1 minute, stirring. Turn up the heat to medium-high and whisk in the stock and 1/2 cup water. Cook at a simmer, whisking frequently, until the gravy begins to thicken. Turn off the heat and whisk in the sour cream, and then the mustard and Worcestershire sauce. Taste before adding salt and pepper. Serve on the meatloaf.

Years ago I wanted to try something different in my meatloaf and decided to add the rice. My family and I loved it, and have been eating it ever since. I have several that I make, but this one is one of my FAVORITES!

1 1/2 lbs lean ground beef
1 medium onion, chopped fine
1 cup Italian seasoned breadcrumbs
2 eggs
1/2 cup milk
1 cup rice, uncooked
3 cups water
1 cup ketchup, divided
1 cup tomato sauce, divided
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350°F.
  • Put beef and onions together in a lg. bowl. Mix well.
  • Add bread crumbs, eggs, and milk, and mix well.
  • Add rice and water, and mix well. (It will be soupy. It won't be like that when it's done).
  • Add 1/2 cups ketchup, and 1/2 cups tomato sauce, salt and pepper, and mix well. I use my hands to mix it together. It doesn't look so good before being cooked, but it is when it is cooked!
  • Put mixture in a 9x13-inch casserole dish, shaping into a loaf.
  • In a bowl, mix the remaining ketchup and tomato sauce together. Pour over top of meatloaf.
  • Bake in 350°F oven, for 1 hour and 15 minutes or until no longer pink in the middle.
  • Let sit for a few minutes before serving.

1 egg
1 cup sour cream
2 tablespoons Worcestershire sauce
1 (1 ounce) package dry onion soup mix
½ cup grated Parmesan cheese
1 ½ cups Italian-style dried bread crumbs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine the beef, egg, sour cream and Worcestershire sauce. Mix in soup mix, cheese, and bread crumbs. Form mixture into a loaf, and place in a 9x5 inch loaf pan. Cover with foil.
  • Bake at 375 degrees F (190 degrees C) for 45 minutes. Remove foil and continue baking for another 10 to 15 minutes. Let stand 5 to 10 minutes before serving for easier slicing.

This recipe was given to me by a coworker many years ago. Since then, this is about the only meatloaf I make. It usually gets lots of yums and pleases the family. I have given this recipe out so many times, and always get comments on how good and easy it is. I love to serve this with mashed potatoes or mashed garlic potatoes.

1 1/2 lbs lean ground beef
1 cup Pepperidge Farm Herb Stuffing
1 cup tomato sauce or 1 cup left over spaghetti sauce
1 egg, beaten
1/2 cup white onion, finely chop
1/4 cup green pepper, finely chop
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon garlic powder
salt
pepper
1/2 cup barbecue sauce
2 tablespoons brown sugar
1 dash nutmeg

Steps:

  • In a large bowl combine beef, stuffing, tomato sauce, egg, onion, green pepper, oregano, basil, garlic powder, salt and pepper.
  • With hands blend mixture well and form into a firm loaf.
  • Place in center of greased baking dish.
  • Bake in preheated 350 degree oven for 30minutes.
  • Meanwhile, combine BBQ sauce, brown sugar and nutmeg. Stir well.
  • Pour mixture over top of meatloaf.
  • Continue baking meatloaf for an additional 30 minutes.
  • Remove from oven and let set for 5minutes before slicing and serving.
