Time 1h10m

Yield 6 servings

Number Of Ingredients 17

4 ounces Kona coffee beans
4 ounces dried porcini mushrooms
3 pounds elk tenderloin
4 heirloom tomatoes, sliced
1 teaspoon canola oil
1/4 cup chopped onion
1 cup chopped cherries
1/4 cup cherry wine
1/4 cup stock, chicken or beef
1/4 cup grated nutmeg
1/4 cup allspice
1 tablespoon brown sugar
6 slices pancetta
2 ounces garlic butter
6 onion rolls, halved
6 ounces goat cheese
3 ounces arugula

Steps:

  • Preheat a grill and smoker to medium.
  • Grind the coffee and dried mushrooms in a spice grinder, then rub it into the elk tenderloin. Grill the tenderloin over medium heat until medium-rare, and an instant-read thermometer registers 130 to 140 degrees F in the center, about 10 minutes. Set aside in a warming oven.
  • While the tenderloin is cooking, put the tomatoes on a sizzler or metal plate in a smoker for 10 minutes. Set aside.
  • Chutney: Put a saucepan over medium-low heat, and add the canola oil, onions, cherries, wine, stock, nutmeg, allspice and sugar. Cook for 30 minutes.
  • Grill the pancetta for about 5 minutes per side, brushing with garlic butter.
  • To assemble: Put an onion roll on each serving plate. Spread enough goat cheese on both halves to cover slightly. Slice the elk and put some on each roll bottom. Top each with a slice of pancetta, some arugula and heirloom tomato slices. Top with a dollop of chutney and cover with the top halves of the roll.

Time 3h

Yield 4 servings

Number Of Ingredients 15

1 ribeye cap steak (3 to 5 pounds) or 2 to 3 flank steaks, trimmed
Steak Marinade, optional, recipe follows
Kosher salt and freshly ground black pepper
3 Spanish onions, peeled
1 pound cremini mushrooms, rinsed and patted dry
1/2 cup olive oil, plus more for drizzling
4 ciabatta rolls or 1 loaf ciabatta, split
1/2 cup mayonnaise
1/2 cup Dijon mustard
1/2 pound Gruyere, sliced
1/2 cup Worcestershire sauce
1/2 cup olive oil
6 cloves garlic, minced
Leaves from 2 sprigs fresh rosemary, chopped finely
1 red finger chile (fresh cayenne pepper), minced

Steps:

  • If marinating the steak, place it in a casserole dish. Pour the Steak Marinade over the steak and turn to coat completely. Cover and refrigerate for a few hours or overnight.
  • When ready to cook, remove the steak from the marinade, if using, and allow the steak to come to room temperature. Preheat a grill pan or outdoor grill to high. Season the steak with salt and black pepper. Grill the steak to the desired doneness, 10 to 15 minutes for medium rare (an instant-read thermometer inserted into the thickest part of the steak should register 130 degrees F). Place the meat on a cutting board and allow to rest at least 5 minutes.
  • While the steak cooks and rests, slice the onions thinly into half moons. Slice the mushrooms very thinly. Heat a large skillet over high heat. Add 1/2 cup of oil. Once the oil is hot, add the onions and cook, stirring frequently, until lightly caramelized. Add the mushrooms. Turn the heat down to medium and continue to cook until the liquid from the mushrooms has evaporated, about 10 minutes. Season with salt and pepper.
  • Drizzle a little oil on the cut sides of the ciabatta and toast on the grill.
  • Stir the mayonnaise and mustard together in a small bowl. Set aside.
  • To assemble the sandwiches, thinly slice the steak against the grain. Place a dollop of the mayonnaise mixture on both halves of the toasted ciabatta loaf or rolls and spread evenly. Layer the sliced Gruyere on the top half of the ciabatta. (If you want melted cheese, place the Gruyere-topped ciabatta under a preheated broiler for a minute or two.) Layer the sliced steak on the bottom half of bread. Next, top the steak with the mushrooms and onions. Close the sandwich with the top half of ciabatta, slice and serve.
  • Combine the Worcestershire, oil, garlic, rosemary and chile in a large bowl and mix well.

Yield 4

Number Of Ingredients 12

4 hard rolls, split
½ cup mayonnaise
3 cloves garlic, minced
1 tablespoon Parmesan cheese
3 tablespoons olive oil
2 pounds round steak, thinly sliced
1 large onion, sliced and quartered
1 pinch coarse sea salt
½ teaspoon Worcestershire sauce
⅛ teaspoon liquid smoke
8 (1 ounce) slices provolone cheese
½ teaspoon Italian seasoning

Steps:

  • Preheat an oven to 500 degrees F (260 degrees C). Split the rolls open and toast them on a baking sheet in the oven while it is preheating. Mix together the mayonnaise, garlic, and Parmesan cheese in a small bowl. Refrigerate until ready to use. Remove the rolls from the oven when toasted as desired.
  • Heat olive oil in a large skillet over medium-high heat. Carefully place the sliced steak and onions in the pan and season with sea salt, Worcestershire sauce, and liquid smoke. Cook and stir until the steak is browned and the onion is tender, about 10 minutes.
  • Generously spread the prepared garlic-Parmesan mayonnaise on both halves of the toasted rolls. Divide the steak and onion mixture evenly among the bottom halves of the rolls, piling them high. Top each with 2 slices provolone cheese and sprinkle with Italian seasoning. Place the tops on the sandwiches.
  • Bake the sandwiches on a baking sheet in the preheated oven until the cheese is melted, about 5 minutes.

Steps:

  • If marinating the steak, place it in a casserole dish. Pour the Steak Marinade over the steak and turn to coat completely. Cover and marinate for a few hours or overnight.

Place the meat on a cutting board and allow to rest at least 5 minutes.
  • Meanwhile, slice the onions thinly into half moons. Heat a large skillet over high heat. Add 1/2 cup of olive oil. Once the oil is hot, add the onions and cook, stirring, until softened. • Drizzle a little oil on the cut sides of the ciabatta and toast on the grill.
  • To assemble the sandwiches, toss the arugula in a small bowl with a little olive oil and salt. Thinly slice the steak against the grain. Place a dollop of the sun-dried tomato mixture on both halves of the toasted ciabatta loaf or rolls. Layer the steak over the tomato. Next, top the steak with the caramelized onions and some arugula. Close the sandwich with the top half of ciabatta, slice and serve.
