2 cups fresh strawberries
3 ⅛ cups all-purpose flour
2 cups white sugar
1 tablespoon ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
1 ¼ cups vegetable oil
4 eggs, beaten
1 ¼ cups chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter and flour two 9 x 5-inch loaf pans.
  • Slice strawberries and place in medium-sized bowl. Sprinkle lightly with sugar, and set aside while preparing batter.
  • Combine flour, sugar, cinnamon, salt and baking soda in large bowl; mix well. Blend oil and eggs into strawberries. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened. Stir in pecans. Divide batter into pans.
  • Bake in preheated oven until a tester inserted in the center comes out clean, 45 to 50 minutes (test each loaf separately). Let cool in pans on wire rack for 10 minutes. Turn loaves out of pans, and allow to cool before slicing.

1 cup butter
1 1/2 cups sugar
1 teaspoon vanilla
1/4 teaspoon lemon extract
4 eggs
1/2 cup sour cream
3 cups flour
1 teaspoon salt
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1 cup strawberry, chopped

Steps:

  • Preheat oven to 350 degrees and grease three 7 1/2 x 4 inch loaf pans.
  • In a medium bowl, cream the butter and the sugar.
  • Add vanilla and lemon.
  • Beat in eggs one at a time.
  • Beat in sour cream.
  • Whisk the flour, cream of tartar, and baking soda together in a large bowl and gently stir in strawberries. Make a well in the center.
  • Add wet ingrediants and stir just until combined ( DON'T over-mix, the bread will get tough )
  • Pour into prepared pans and bake 50-55 minutes or utill a toothpick inserted in the center comes out clean.

My husband and I are strawberry lovers, so each spring we pick about 30 quarts. This recipe makes two delicious loaves. One we eat right away; the other we freeze and pull out when family comes to visit.

Number Of Ingredients 9

3 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
1 egg plus 3 egg whites, lightly beaten
1-1/4 cups vegetable oil
2 cups chopped fresh or frozen strawberries
1-1/2 cups chopped walnuts

Steps:

  • In a large bowl, combine flour, baking soda, sugar, cinnamon and salt. Add egg, egg whites and oil; stir just until moistened. Fold in strawberries and nuts. Spoon into two greased 8x4-in. loaf pans. , Bake at 350° for 70 minutes or until bread tests done. Cool in pans 10 minutes before removing to a wire rack.
