This Broccoli Slaw is one of my favorite side dishes. It is quick and easy to make and undeniably delicious. This Broccoli Slaw recipe is packed with delicious flavors like crunchy cashews, fresh apples, sweet craisins and savory bacon that are all wrapped in a dressing that is equally creamy and tangy.

1 package (12 oz shredded broccoli slaw mix, or shredded fresh broccoli)
1 cup chopped sweet red apples
1/2 cup roughly chopped salted cashews
1/4 cup craisins
1/4 cup crispy crumbled bacon
1/4 cup mayonnaise
1 tbsp red wine vinegar

Steps:

  • In a small bowl, whisk together the mayonnaise and vinegar.
  • Place the craisins in a bowl of hot water for 5 minutes or until they plump up, then drain.
  • In a large bowl, combine the broccoli slaw, apple, nuts, bacon and craisins. Then fold in the dressing and mix until everything is evenly coated.
  • Serve immediately. If you are not serving right away, save the bacon to put in right before serving and chill until you are ready to serve then stir in the bacon.

2/3 cup dried currants or dried cranberries
1/4 cup apple cider vinegar
1 tablespoon honey
Kosher salt and freshly ground black pepper
1/2 cup olive oil
1 large head broccoli (14.7 ounces or 416 grams), cut into 6 large pieces, including stems (3 cups)
1/4 small head red cabbage (271 grams or 9.6 ounces), cut into thirds (about 1 3/4 cups)
1/2 cup toasted sliced almonds
1/2 small red onion (67 grams or 2.4 ounces), thinly sliced
1/2 cup fresh cilantro, chopped, plus leaves for garnish
1/2 cup fresh flat leaf parsley, chopped, plus leaves for garnish

Steps:

  • Place the currants in a medium bowl and cover with boiling water. Let sit until soft and plump, about 5 minutes. Drain and set aside.
  • Meanwhile, mix the vinegar, honey, 1/4 teaspoon salt and a few grinds of pepper in a large bowl. Drizzle in the olive oil, whisking constantly, until emulsified.
  • Shred the broccoli florets and stems and red cabbage using the shredding disc of a food processor (see Cook's Note). Add to the bowl with the dressing and fold in the currants, almonds, onions, cilantro, parsley, 3/4 teaspoon salt and a few grinds of black pepper. Transfer to a serving bowl and garnish with more cilantro and parsley leaves, if desired.

This is a fast, easy, and very tasty broccoli salad made with broccoli slaw. I use light products where possible, but you can certainly use whatever you have on hand. This recipe is just the start! You can also add diced apples or crumbled bacon. This is also a great dish to make ahead of time. I'd say it's at its best after at least a day.

1 12-oz. bag broccoli slaw mix
1 c. small broccoli florets (from 1 crown)
1 c. matchstick carrots
1 c. shredded red cabbage
1 c. sliced green onions
1 c. raisins
1/2 c. roasted salted sunflower kernels, plus more for serving

Steps:

  • For the dressing: Whisk together the mayonnaise, vinegar, honey, salt, and pepper in a large bowl until smooth.
  • For the slaw: Add the broccoli slaw, broccoli florets, carrots, cabbage, green onions, raisins, and sunflower kernels to the dressing; stir to combine. Cover and refrigerate 1 hour or overnight.
  • Top with more sunflower kernels just before serving, if you like.
