1 pound chicken thighs (or breasts cut into one inch pieces)
1 Tablespoon olive oil
1/4 cup bourbon*
1/2 cup soy sauce
1/4 cup brown sugar
3 garlic cloves (minced)
1 teaspoon cornstarch
1 tablespoon water
sliced green onions (for garnish)

Steps:

  • In a medium sized skillet over medium high heat add the olive oil and chicken. Cook until brown and no longer pink.
  • In a small bowl whisk together bourbon, soy sauce, brown sugar, and garlic. Whisk together cornstarch and water and add to the sauce.
  • Pour the sauce over the chicken and simmer for 3-4 minutes until the sauce thickens up. Serve over rice and garnish with chopped green onions if desired.

2 lb. boneless skinless chicken thighs
1/2 tsp. kosher salt
1/4 tsp. black pepper
2 tbsp. cornstarch
1/4 c. vegetable oil
3 cloves garlic, chopped
1 tbsp. grated fresh ginger
1 c. + 1 tbsp. chicken stock, divided
1/2 c. apple juice
1/4 c. bourbon
1/2 c. soy sauce
1/2 c. packed brown sugar
2 tbsp. apple cider vinegar
1/4 tsp. crushed red pepper flakes
1 1/2 tsp. cornstarch
White rice, for serving
1 tbsp. toasted sesame seeds
2 scallions, thinly sliced

Steps:

  • Cut the chicken into bite-sized pieces. Toss the chicken with the salt, pepper, and cornstarch in a large bowl until coated.
  • Heat the vegetable oil in a large nonstick skillet over medium-high heat until very hot. Add half of the chicken in a single layer and cook, turning, until well browned, crispy and cooked through, about 6 minutes. Use a slotted spoon to transfer the chicken to a plate. Repeat with the remaining chicken and transfer to the same plate.
  • Return the skillet to medium heat. Add the garlic and ginger to the skillet and cook for about 1 minute. Add the 1 cup of chicken stock, apple juice, bourbon, soy sauce, brown sugar, apple cider vinegar and crushed red chili flakes. Whisk until combined. Bring to a simmer, stirring occasionally, then cook until reduced by about half.
  • Whisk together the remaining 1 tablespoon of chicken stock and the cornstarch in a small bowl. Add to the skillet and whisk well to combine. Bring to a boil, then let simmer for 1 minute to thicken. Add the chicken to the skillet and cook for 1 to 2 more minutes to warm through and coat with the sauce.
  • Serve over white rice, topped with sesame seeds and scallions.

I searched and finally found this recipe on the internet. It is a copycat of the Bourbon Chicken sold in Chinese carry-outs in my hometown. This recipe is so good that my sons gobble it up leaving me just a spoonful. Their excuse was they thought I had eaten. Editor's Note: Named Bourbon Chicken because it was supposedly created by a Chinese cook who worked in a restaurant on Bourbon Street.

2 lbs boneless chicken breasts, cut into bite-size pieces
1 -2 tablespoon olive oil
1 garlic clove, crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce

Steps:

  • Editor's Note: Named Bourbon Chicken because it was supposedly created by a Chinese cook who worked in a restaurant on Bourbon Street.
  • Heat oil in a large skillet.
  • Add chicken pieces and cook until lightly browned.
  • Remove chicken.
  • Add remaining ingredients, heating over medium Heat until well mixed and dissolved.
  • Add chicken and bring to a hard boil.
  • Reduce heat and simmer for 20 minutes.
  • Serve over hot rice and ENJOY.

This chicken tastes just like the stuff that the food court guys are trying to get you to sample all the time!! Its really easy to prepare if you can get boneless chicken thighs and make sure that you use a good bourbon! Remember--if you wouldn't drink it, do not cook with it!

2 lbs boneless chicken thighs
1/4 cup soy sauce
2 tablespoons rice vinegar
1/4 cup Bourbon
1/4 cup brown sugar
1 scallion
1 teaspoon powdered ginger
2 garlic cloves
2 tablespoons peanut oil

Steps:

  • Coarsely chop the scallion and mix all but the chicken and peanut oil together in a bowl and whisk until well blended. set aside.
  • Dice chicken thighs into bite sized pieces and sauté in very hot pan or WOK with the peanut oil until lightly browned on the outside.
  • Add liquid mixture to the chicken and reduce heat to medium.
  • Cook this UNCOVERED until liquid is reduced to a glaze on the chicken bites and chicken is fully cooked.
  • Serve with your choice of side dish. Fried rice or Lo Mein noodles work well.

Bourbon Chicken is traditionally a Southern dish, and after moving to Pennsylvania from Oklahoma, I really missed this. I searched for a recipe I liked, but I couldn't find one, so this is my own delicious version, spiced up with ginger, fruit juice, red pepper, and a little Southern Comfort! Serve over rice.

4 tablespoons olive oil
3 pounds skinless, boneless chicken breast halves - cut into 1 inch pieces
1 cup water
1 cup packed light brown sugar
¾ cup apple-grape-cherry juice
⅔ cup soy sauce
¼ cup ketchup
¼ cup peach-flavored bourbon liqueur (such as Southern Comfort ®)
2 tablespoons apple cider vinegar
2 cloves garlic, minced
1 tablespoon dried minced onion
¾ teaspoon crushed red pepper flakes, or to taste
½ teaspoon ground ginger
¼ cup apple-grape-cherry juice
2 tablespoons cornstarch

Steps:

  • Heat the oil in a large heavy pan or Dutch oven, and brown the chicken pieces until lightly golden on all sides, about 10 minutes. Transfer the chicken to a bowl.
  • In the same dutch oven, whisk the water, brown sugar, 3/4 cup of fruit juice cocktail, soy sauce, ketchup, bourbon liqueur, apple cider vinegar, garlic, dried onion, red pepper flakes, and ground ginger into the Dutch oven. Bring the sauce to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon.
  • Stir the chicken back into the sauce, and bring to a full boil over medium-high heat. Reduce the heat to medium-low, and simmer until the sauce is reduced and thickened and the chicken pieces are no longer pink in the middle, about 20 minutes.
  • Remove the chicken pieces to a bowl with a slotted spoon. Stir together 1/4 cup of fruit juice cocktail with the cornstarch until smooth, and whisk the cornstarch mixture into the sauce, stirring constantly to avoid lumps. Bring the sauce back to a simmer, let thicken for about 1 minute, and return the chicken pieces to the sauce. Stir to combine, and serve.
