1 (6 ounce) package STOVE TOP Stuffing Mix for Turkey
4 cups chopped leftover roasted turkey
2 cups frozen mixed vegetables (carrots, corn, green beans, peas), thawed
¾ cup KRAFT Mayo Real Mayonnaise or MIRACLE WHIP Dressing
3 cups leftover mashed potatoes
1 cup KRAFT Shredded Cheddar Cheese
⅛ teaspoon paprika

Steps:

  • Heat oven to 375 degrees F.
  • Prepare stuffing as directed on package; spread onto bottom of 13x9-inch baking dish sprayed with cooking spray.
  • Combine turkey, mixed vegetables and mayo; spoon over stuffing.
  • Mix potatoes and cheese; spread over turkey mixture. Sprinkle with paprika.
  • Bake 30 to 40 min. or until heated through.

1 (6 ounce) package dry bread stuffing mix
1 (16 ounce) container sour cream
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of celery soup
1 (1 ounce) package dry onion soup mix
2 (14.5 ounce) cans French-style green beans, drained
2 cups cooked, chopped turkey meat

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Prepare stuffing according to package directions.
  • In a medium bowl, mix the sour cream, cream of mushroom soup, cream of celery soup and dry onion soup mix.
  • Spread the green beans in a 9x13 inch dish. Top with a layer of turkey. Pour the soup mixture over the turkey. Top with stuffing.
  • Bake in the preheated oven 30 minutes, or until browned and bubbly.

What to do with those leftovers? Here is what I did today being 2 days after Thanksgiving 2009. Results were fantastic and all eaten up! The key is to use your leftover ingredients and cans of food you did not use that were brought to prepare the feast. For me that was evaporated milk and chicken broth. Use what you have for vegetables. If I had yams, I would have definatly used that for a topping too.

4 cups of diced cooked turkey
14 ounces chicken broth
1 cup evaporated milk
1 cup corn
1/4 cup broccoli
1/4 cup diced onion
1/4 cup cauliflower
margarine or butter
1/4 cup flour
salt
pepper
mashed potatoes

Steps:

  • Put margarine or butter in non stick skillet and melt. Add flour and whisk till smooth. Add onion and saute. Add broth and milk and bring to a bubble. Add vegetables, turkey, salt and pepper to the skillet mixture.
  • Take mixture and transfer to a large pie or small casserole dish.
  • Add mashed potatoes to either a large gallon size baggie, cut edge of one end to create a tip or to a pastry bag and use a nice large sized tip.
  • Squeeze out the mashed potatoes onto the top of mixture creating small tear drops all across the entire top.
  • Put dish in oven on broil. Take out once the tips of the potatoes are browned.
  • Let cool for 15 minutes.
  • Enjoy!

8 ounces elbow macaroni, cooked, drained and rinsed in cold water
10 ounces broccoli, cooked, in pieces
1/4 lb ham, cut into strips
1 lb cooked turkey, cut into bite sized pieces
2 medium mushrooms, sliced
1/2 small red onion, diced
1/3 cup butter
1/3 cup flour
14 ounces turkey broth or 14 ounces chicken broth
1 cup cream
2 ounces swiss cheese, shredded
salt & pepper
1/3 cup breadcrumbs
1/4 cup grated parmesan cheese

Steps:

  • Place pasta on bottom of greased 2 quart baking dish. Layer broccoli over pasta. Cover with ham, turkey, and mushrooms.
  • On stove top melt butter and add onion. Blend in flour and cook over medium for about 5 minutes. DO NOT BROWN.
  • Add broth and cream, stirring till smooth and thick. Add cheese, salt, and pepper. Heat till cheese melts.
  • Pour over casserole.
  • Sprinkle top with bread crumbs and parmesan cheese. Bake at 350 for 30 minutes or until brown and bubbly.
