1 onion, finely chopped
1 1/2 cups chopped celery
3 carrots, finely chopped
1/2 cup chopped fresh parsley
4 eggs
1 cup chicken stock
9 cups soft bread cubes
2 teaspoons salt
2 teaspoons dried sage
1 teaspoon ground sage
1 teaspoon dried thyme leaves
12 ounces raisins
1/2 teaspoon fresh ground black pepper

Steps:

  • Pre-heat oven to 375.
  • Saute onions, carrots and celery in 10"skillet until tender.
  • Mix all ingredients in a large mixing bowl.
  • Spray muffin tins with Pam.
  • Fill muffin tins with stuffing mix until just overflowing (will not rise in oven).
  • Bake for 25 minute or until crisp on top.

Here's a fun and tasty way to turn dinner into an on-the-go breakfast special or maybe breakfast for dinner.

nonstick cooking spray
4 cups crumbled leftover stuffing
1 cup chopped cooked turkey
¾ cup frozen corn kernels, thawed
1 tablespoon chicken broth, or as needed
12 (1/2 inch) cubes Cheddar cheese
5 large eggs eggs
2 tablespoons chicken broth
salt and freshly ground black pepper to taste
½ cup cranberry sauce

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray muffin tin cups with cooking spray.
  • Combine stuffing, turkey, and corn kernels in a large bowl, and stir gently. If mixture is particularly dry, add 1 tablespoon chicken broth, a little at a time, until mixture is moist, but not mushy. Loosely and equally portion stuffing mixture amongst the 12 muffin cups. Insert a Cheddar cheese cube into the center of each muffin cup.
  • Whisk eggs, 2 tablespoons chicken broth, salt, and pepper together in a cup. Divide egg mixture evenly among the cups. The egg mixture will not completely cover the stuffing, but it puffs up when baked.
  • Bake in the preheated oven until muffins are browned and slightly crisp on the top, 25 to 30 minutes.
  • Allow to cool for about 5 minutes before removing the muffins by running a knife around the edge of each cup. Serve warm with a dollop of cranberry sauce spooned on the top.

Take another bowl and add cranberries, applesauce, sweet potatoes, eggs, yogurt, milk and coconut; stir until the mixture gets blend well. Spray the nonstick spray into the pan and spoon the batter. ½ cup sweetened dried cranberries (such as Craisins®)
1 cup hot water, or as needed
1 cup whole wheat flour
1 cup white sugar
½ cup oat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 (15 ounce) can sweet potatoes, undrained
3 eggs
¼ cup coconut oil
½ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 6 jumbo muffin cups or line with paper liners.
  • Soak dried cranberries in a bowl of hot water until plump, about 10 minutes; drain.
  • Combine whole wheat flour, white sugar, oat flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a bowl. 1 1/2 cups cooked sweet potatoes, from a casserole
1 (7 1/2 ounce) package cornbread mix
1/2 cup milk (or substitute 1/4 cup heavy cream)
1 egg
1/4 cup vegetable oil

Steps:

  • Preheat oven to 400 degrees.
  • Combine sweet potato casserole, egg, milk and cornbread mix.
  • Let sit in bowl.
  • Oil muffin pans and place in preheated oven for about 5 minutes.
  • Remove muffin pan from oven and pour oil into batter.
  • Stir in oil really well.
  • Pour batter into muffin pan filling each one 1/2 of the way full.
  • Bake for about 15-20 minutes.

  • Place the ingredients for the oatmeal streusel topping in bowl and using your fingers work the ingredients together for a minute or 2 until they are nice and crumbly.
  • Mix all the ingredients for the muffins together in a large bowl until well combined
  • Scoop batter into muffin cups. Sprinkle oatmeal topping over batter and bake for 20-22 min. Leftover muffins freeze really well.

8 c cornbread stuffing
2 Tbsp olive oil
1 stick butter, softened
4 celery heart ribs
1 white onion
3 fuji apples
2 Tbsp poultry seasoning
1/4 c chopped parsley
3 c chicken stock
salt and peper

Steps:

  • 1. Preheat oven to 375 degrees F.
  • 2. Over medium high heat olive oil and 4 tablespoons butter. Add bay leaf, vegetables and apples. Add salt, pepper and poultry seasoning.
  • 3. As the veggies start to soften add stuffing and stock mixing well.
  • 4. Spray large muffin tray with olive oil non stick spray. Over fill each muffin and shape with a large spoon. Bake 10 to 15 minutes so that the muffins are set. Serve hot.
