SWEDISH CARDAMOM BREAD image

Yield 1-2-or-4 loaf

Number Of Ingredients 10

1 t. -- 1T -- 2T -- yeast
3T -- 6T -- 3/4 c-- lukewarm water
1/2 -- 1 -- 2 c -- sugar
3/4 -- 1 1/2 -- 3c -- warm milk
1/4 -- 1/2 -- 2c -- butter
1/2t -- 1t. -- 2t -- salt
1 -- 2 --4 -- egg, beaten
3+ --6+ --12 -- c flour
8-10 -- 20 -- 40 -- cardamom seeds, crushed or
1 to 4 t. ground cardamom

Steps:

  • 1. In a small bowl mix yeast, water, small amount of the sugar, pinch of ginger. 2. In food processor, add rest of sugar, milk, butter, salt and egg. Add flour to make thin batter. Add yeast mixture. Add flour gradually to make a soft dough. 3. Knead 1 miniute in processor or about 5 minutes by hand. Place in large bowl, let rise for about two hours, until doubled. 4. Punch down. On floured board, cut into three pieces. Roll each piece into a long rope (about 17"). 5. Braid the three together, pinching the ends. Put on a large, flat sheet pan (buttered). Let rise until doubled. 6. Pre-heat oven to 325. Rub bread with egg wash and sprinkle well with cinnamon sugar. 7. Bake for 35 to 40 minutes. Done at an internal temperature of 200 degrees. Don't over cook.
