2 ½ pounds ground turkey
1 ½ cups chicken-flavor stuffing mix
2 eggs
⅓ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together turkey, stuffing, eggs, and milk in a large bowl. Mixture will be lumpy. Spread mixture in 9x5 inch loaf pan.
  • Bake for 1 hour until temperature reads 165 degrees F in center of loaf.

1 cup seasoned stuffing mix
1/2 cup milk
1 large egg
1 onion
1 celery
1 carrot
2 teaspoons rosemary
2 teaspoons sage
1/2 teaspoon salt

1/2 cup cranberries (canned)
1/2 cup ketchup
1/8 teaspoon hot sauce
1 teaspoon rosemary
1 teaspoon sage

Steps:

  • to make the meatloaf:.
  • In a bowl, combine seasoned stuffing, milk, eggs; stir then add diced onions, diced celery, shredded carrots, chopped sage, rosemary, salt, and black pepper; then add ground turkey and mix.
  • Form the shape of a turkey (its body, wings, legs) on a parchment-lined baking sheet.
  • to make the sauce:.
  • In a small bowl, combine the canned cranberries, ketchup, hot sauce, chopped rosemary and sage.
  • Apply a thick coating of the sauce over the turkey-shaped meatloaf.
  • Bake 375°F for 50 minutes.
  • Garnish/decorate with anything Thanksgiving-like such as lemons, sage leaves, whole rosemary, fresh or frozen cranberries.

This recipe is a great alternative to traditional meatloaf. It's delicious using veggies and ground turkey to compliment one another. The white gravy adds a sense of the holiday season with its wonderful aroma and flavor. Please be aware, measurements are estimates as I use the Italian-style 'to taste' method of cooking. Go with what feels right!

2 pounds ground turkey
2 eggs, beaten slightly
1 onion, coarsely chopped
¾ cup regular rolled oats
½ cup fresh green beans, chopped
½ cup fresh cranberries, chopped
1 teaspoon dried rosemary
1 teaspoon bay leaf, crumbled
salt and ground black pepper to taste
¼ pound thinly sliced pancetta
2 tablespoons butter
2 tablespoons all-purpose flour
1 clove garlic, minced
1 teaspoon ground cinnamon
1 teaspoon freshly grated nutmeg
1 cup milk
½ cup chicken broth
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x9 inch square baking dish.
  • Mix the ground turkey with the eggs, onion, rolled oats, green beans, cranberries, rosemary, and bay leaf in a large bowl. Use your hands to thoroughly blend the ingredients. Season to taste with salt and pepper. Spread the ground turkey mixture over the bottom of the prepared dish. Top with a layer of pancetta.
  • Bake the meatloaf in preheated oven for 45 minutes to 1 hour. Check for doneness when juices run clear, and an internal thermometer inserted into the meatloaf reaches 160 degrees F (70 degrees C).
  • Meanwhile, to make the gravy, melt the butter in a pan over medium heat. Stir in the flour, and cook for 1 to 2 minutes until the mixture becomes paste-like and light brown. Stir in the garlic, cinnamon, and nutmeg. Gradually whisk in the milk and chicken broth, bringing the mixture to a boil. Lower the heat to medium, and continue cooking and whisking until desired thickness is reached. Season to taste with salt and pepper. Serve spooned over sliced meatloaf.

2 tablespoons butter
¼ cup chopped onion
½ cup chopped celery, with leaves
1 Granny Smith apple - peeled, cored and chopped
¾ cup dry bread crumbs
½ cup shredded Romano cheese
2 eggs
¼ cup milk
1 teaspoon poultry seasoning
1 ½ pounds ground turkey

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch loaf pan.
  • Melt the butter in a skillet over medium heat, and cook and stir the onion, celery, and apple until the onion is translucent and the apple is softened, 5 to 8 minutes. Let the mixture cool.
  • In a bowl, mix the cooked apple mixture with the bread crumbs, Romano cheese, eggs, milk, and poultry seasoning until well combined, and lightly stir in the ground turkey. Do not over mix or the meatloaf will be tough.
  • Spoon the mixture into the prepared pan, and bake in the preheated oven until the loaf is cooked through to the center, about 45 minutes.

My brother-in-law made this for my hubby's birthday celebration and knocked our socks off. This recipe combines the flavors of Thanksgiving mixed into a loaf and baked to perfection.

3 pounds ground turkey, or more to taste
1 (16 ounce) can whole berry cranberry sauce, divided
1 (14 ounce) package herb-seasoned stuffing mix (such as Pepperidge Farm®)
4 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix ground turkey, 2/3 of the cranberry sauce, stuffing mix, and eggs together in a bowl until well-combined. Press turkey mixture into a loaf pan. Spoon remaining cranberry sauce over the top.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 170 degrees F (75 degrees C).

2 1/2 lbs ground turkey
2 gala apples, peeled and diced small
1 tablespoon lemon juice
3 -4 celery ribs, finely chopped, along with celery leaves
1 medium onion, finely chopped
1 1/2 teaspoons poultry seasoning
1 1/2 teaspoons sage
salt & pepper
2 cups seasoned stuffing mix
2 cups chicken stock
2 large eggs
1 -2 tablespoon olive oil

Steps:

  • In a large bowl add apples & lemon juice, toss together. Add turkey, celery, onion, seasonings and eggs.
  • In a med. bowl, add the stock to the stuffing mix. Stir letting the stuffing soak up the liquid, then add it to the bowl with turkey. Mix everyting together well, then turn it out onto parchment lined baking sheet and shape into loaves (should make 3). Coat loaves with olive oil and transfer to oven and roast until brown and cooked through. 1 hour.
  • Bake at: 350 degrees/Convection oven or 375 degrees/Regular oven.
  • Enjoy !
