TUNA FISH PATTIES

This is a great recipe I came up with to get rid of leftover bread. I generally use the contents of my vegetable drawer here so I kind of throw in whatever I have at the time, so you can use your own judgment. They taste really nice when eaten with sour cream or low-fat mayo or even on their own - though my husband prefers ketchup. I generally use this recipe as a guideline, so have fun with it!

3 slices hearty country bread
3 cups water
1 tablespoon olive oil
1 onion, chopped
¼ cup fresh spinach leaves
3 cloves garlic, chopped
2 (5 ounce) cans tuna, drained and flaked
6 mushrooms, diced
1 zucchini, diced
1 stalk celery, diced
2 eggs
1 tablespoon chopped fresh dill, or more to taste
1 teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon dried basil
¼ teaspoon oregano
1 tablespoon olive oil, or as needed

Steps:

  • Soak bread in water in a large shallow dish until softened completely; remove from dish and squeeze as much water from bread as possible.
  • Heat 1 tablespoon olive oil in a non-stick skillet over medium heat; cook and stir onion, spinach, and garlic in the hot oil until the onion softens, about 5 minutes.
  • Mix the onion mixture with softened bread, tuna, mushrooms, zucchini, celery, eggs, dill, salt, pepper, basil, and oregano in a large bowl until combined. Form the mixture into about 24 thin, palm-size patties.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat; cook the patties in the skillet until cooked through, 2 to 3 minutes per side.

2 tablespoons butter
3 tablespoons all-purpose flour
1 cup evaporated milk
1 pouch (6.4 ounces) light tuna in water
1/3 cup plus 1/2 cup dry bread crumbs, divided
1 green onion, finely chopped
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
Oil for frying

Steps:

  • In a small saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Remove from heat. Transfer to a small bowl; cool., Stir in tuna, 1/3 cup bread crumbs, green onion, lemon juice, salt and pepper. Refrigerate, covered, at least 30 minutes., Place remaining 1/2 cup bread crumbs in a shallow bowl. Drop 1/3 cup tuna mixture into crumbs. Gently coat and shape into a 1/2-in.-thick patty. Repeat. In a large skillet, heat oil over medium heat. Add tuna patties in batches; cook until golden brown, 2-3 minutes on each side. Drain on paper towels., Freeze option: Freeze cooled tuna patties in freezer containers, separating layers with waxed paper. To use, reheat tuna patties on a baking sheet in a preheated 325° oven until heated through.

These patties are delicious on top of salad greens and drizzled with some Kewpie mayonnaise, or in a burger. I made them for the first time without measuring, so I've guessed the amounts. Feel free to adjust to taste!

400 g tuna
3 eggs
1/2 cup Rice Crumbs (or bread crumbs)
1 teaspoon green curry paste
1 tablespoon ketjap manis (sweet soy sauce)
1 tablespoon light soy sauce
3 -4 tablespoons sweet chili sauce
1/2 teaspoon fish sauce
1 finely shredded kaffir lime leaf

Steps:

  • Mix ingredients together in a large bowl.
  • Form into patties (if the mixture is too runny, add extra crumbs. If too dry, add an extra egg or a little water).
  • Fry until golden brown on each side.

½ cup dry bread crumbs
¼ cup finely chopped green onion
¼ cup grated carrot
1 tablespoon minced fresh ginger root
1 tablespoon chopped fresh cilantro
1 teaspoon sesame oil
1 tablespoon ketchup
1 tablespoon lite soy sauce
½ teaspoon ground cumin
¼ teaspoon salt
¼ teaspoon black pepper
1 egg, beaten
6 hamburger buns
6 lettuce leaves - rinsed and dried
2 medium tomatoes, sliced

Steps:

  • In a bowl, thoroughly mix minced tuna, bread crumbs, green onion, carrot, ginger, cilantro, sesame oil, ketchup, soy sauce, cumin, salt, pepper, and egg. Cover, and refrigerate for 30 minutes.
  • Preheat oven broiler.
  • Form tuna mixture into 6 patties, and place in a broiler pan on top oven rack. Cook, uncovered, 4 minutes per side, or until easily flaked with a fork. Serve on hamburger buns with lettuce and tomato.

I decided to make tuna patties the other night, even though I never liked them as a kid. I decided to add some of my favorite ingredients to them to see if they would enhance the flavor of the patties. They were wonderful!!!! :-) ENJOY! )prep time does not include time to boil potato. Sometimes I use leftover mashed potatoes to make these! doesnt hurt!)

Number Of Ingredients 12

1 (6 ounce) can tuna
1 small potato, boiled and mashed
1/2 cup chopped onion
1 egg
1/4 cup breadcrumbs
1/4 teaspoon parsley
1/3 teaspoon cayenne pepper (I use more sometimes, but it really depends on how much you enjoy cayenne pepper!)
1/3 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon olive oil, to saute onion
1 tablespoon olive oil, for cooking patties

Steps:

  • Boil potato until soft (as you would for mashed pots.); Mash.
  • Saute chopped onion for 2-3 minutes.
  • add onion to mashed potato.
  • Add cayenne pepper to the mashed potato as well; mix thoroughly.
  • Open can of tuna and drain liquid.
  • Put tuna in a medium bowl.
  • Add potato and stir until mixed through.
  • add egg and mix through again.
  • Add the bread crumbs, parsley, garlic powder, salt, and pepper and mix well with hands (its really the best way to get all of the ingredients mixed VERY well.) If you feel that the mixture is too moist (due to size differences in eggs), you may add some more breadcrumbs (a small amount!), but BE CAREFUL!
  • Do not make mixture too dry as you may encounter breakage while cooking patties!
  • Put olive oil in a nice sized frying pan, and rub olive oil over the pan with cloth; heat on medium-high.
  • Form patties (2-3, depending on how large or small you wish to make them).
  • Put patties in the heated pan and cook 6-8 minutes on each side, depending on how large you made each patty.
  • If you made 3 patties, 6 mins per size should be just fine.
  • Brown nicely on both sides!
  • You may need to add a little more oil while cooking, but do not add too much!
  • Enjoy alone or on a bun.
  • I eat mine on a bun with ketchup!

3 tablespoons grated Parmesan cheese
10 tablespoons Italian-seasoned bread crumbs

Steps:

  • Beat eggs and lemon juice in a bowl; stir in Parmesan cheese and bread crumbs to make a paste. Fold in tuna and onion until well-mixed. Season with black pepper. Shape tuna mixture into eight 1-inch-thick patties.

SPICY TUNA & CHICKPEA PATTIES

Using canned chickpeas instead of potatoes means these spicy patties are really quick to make

150g tub low fat natural yogurt
a good handful of fresh coriander , roughly chopped
2x cans chickpea , drained and rinsed
400g can tuna in brine, drained
1 small onion , finely chopped
1 plump garlic clove , crushed
2 tbsp lemon juice
1 tsp cumin seeds
½ tsp crushed dried chilli
2 tbsp plain flour
4 tsp vegetable oil
12 cherry tomatoes , halved

Steps:

  • Mix the yogurt with half the coriander in a small bowl. Cover and chill until needed.
  • Tip the chickpeas into a food processor. Blitz for a just a few seconds so they keep some of their texture. Transfer to a large bowl. Flake in the tuna and mix in the onion, garlic, lemon juice, cumin, chilli and rest of the coriander. Season, then gently stir to mix all the ingredients. Shape into 12 patties with your hands. Dust with flour.
  • Heat half the oil in a large frying pan. Cook 6 patties for 5-6 minutes, turning over after 3 minutes. Keep them warm while you cook the rest.
  • Put the tomatoes in the pan. Cook over a high heat for 30-40 seconds until warmed through and starting to soften. Serve with the patties (3 per person) and the coriander dip.
