Steps:

  • Bring water to a boil in a kettle; remove from heat. Add tea bags and steep for 5 minutes; remove tea bags.
  • Stir sugar into tea until dissolved. Cool to room temperature.
  • Fill 4 glasses with ice; pour tea into each glass until almost full. Stir 1 tablespoon sweetened condensed milk into each glass. Float 1 tablespoon half-and-half atop the iced tea.

⅔ cup white sugar, or to taste

Steps:

  • Place tea leaves in a tea filter bag and secure.
  • Pour water into a pot and bring to a boil. Add tea bag and sugar. Return to a boil and stir until sugar has dissolved, about 3 minutes. Remove from heat and allow tea to steep for 30 minutes.
  • Discard tea bag. Let tea cool to room temperature. Refrigerate for 3 to 4 hours, or overnight.
  • Fill 2 glasses 2/3 full of chilled tea. Slowly pour 1/4 cup coconut milk into each glass.

Steps:

This homemade Thai iced tea gets its complex flavor from black tea, rooibos tea, star anise and cloves, and its sweetness from condensed milk. Adapted from the cookbook "Bangkok" by Leela Punyaratabandhu, this version is hardly typical: Most Thai iced tea sold on the streets of Bangkok - or in Thai restaurants stateside - contains an immoderate amount of sweetened condensed milk and uses a store-bought mix, which contains food coloring. The tea blend used here is intense on its own, but mellowed by ice and milk. Chill the tea fully before pouring it over ice so its flavors don't get diluted.

4 tablespoons loose red rooibos tea leaves (or the contents of 10 rooibos tea bags)
3 tablespoons loose black tea leaves (or the contents of 7 black tea bags)
3 tablespoons granulated sugar
10 star anise pods, broken into pieces or roughly chopped
10 whole cloves
1/2 cup half-and-half
1/2 cup sweetened condensed milk
1 tablespoon vanilla extract
Ice, for serving

Steps:

  • Add 4 cups water to a medium saucepan. Cover with a lid and bring to a boil. Remove from the heat. Add rooibos tea, black tea, sugar, star anise and cloves; cover and let steep, 10 minutes. Strain tea, pressing on tea leaves and spices to extract as much liquid as possible, then discarding solids. Refrigerate tea until chilled, at least 1 hour.
  • In a measuring glass, stir together the half-and-half, condensed milk and vanilla extract.
  • Fill a pint glass with ice. Add 3/4 cup tea mixture and top with about 2½ tablespoons condensed milk mixture. Serve immediately.

Steps:

  • In a kettle, bring the water to a boil. Place the tea in a teapot or glass container. Pour the water over the tea and let steep until bright orange in color, 3 to 5 minutes. Strain into a clean container, such as a pitcher (or, if in tea bags, remove the bags). Add sugar and stir to dissolve. Let cool to room temperature, then cover and refrigerate until ready to serve.

1 teaspoon orange blossom water
1 vanilla pod (or 1 tablespoon vanilla extract)
1 pinch ground cloves
1 pinch ground cinnamon
1/2 cup loose chinese black tea leaves
1 cup granulated sugar
3 drops red food coloring (optional)
half-and-half or sweetened condensed milk

Steps:

  • Bring 1/2 gallon of cold water to a boil. Add 8 finely crushed star anise pods, 1 teaspoon orange blossom water, the scrapings of 1 vanilla pod or 1 tablespoon vanilla extract, a pinch each of ground cloves and ground cinnamon, and 1/2 cup Chinese black tea leaves.
  • Boil for 3 to 5 minutes, stirring occasionally. Remove from the heat and stir in 1 cup sugar and a few drops of red food coloring (optional, though traditional). Cover, steeping until tepid.
  • Strain & place in the refriderator for a few hours to really chill.
  • Pour the tea over plenty of crushed ice. Top with half-and-half or sweetened condensed milk.

There are several recipes in the data base for Thai Iced Tea, but none like this one. Nancie McDermott was credited for this recipe found at "Quick & Easy Thai: 70 Everyday Recipes". From her intro: "Sold in 1 lb cellophane-wrapped packets in Asian markets, this finely chopped black tea is spiced w/cinnamon, star anise & vanilla, & then tinged w/a bit of food coloring to create its gorgeous terra-cotta hue. Like Thai coffee, Thai tea is traditionally sweetened well w/sugar as it brews & crowned w/a generous splash of evaporated milk or half-&-half just before serving. You can brew Thai tea in a teapot, drip coffeemaker or French press (making it very strong & adding sugar while the tea is still very hot). Time has been estimated & does not include cool & chill time. Enjoy!

Steps:

  • 1. Preheat oven to 350°F. Use butter wrapper to grease an 8-inch loaf pan, 8-inch square cake pan, or 8-inch round cake pan.
  • 2. Brew tea with 3/4 cup boiling water, covered, for 10 minutes. Strain tea leaves and discard. In a mixing bowl, combine butter and freshly brewed tea until butter is completely melted. Whisk vanilla, half of the sweetened condensed milk, and the eggs. Mixture should be bright orange and very creamy. Gently stir in salt, flour, and baking powder. Pour into prepared pan and bake for 35-45 minutes or until a toothpick inserted into the center comes out clean. Allow cake to cool for 20 minutes.
  • 3. While cake cools, make the glaze. Whisk together remaining sweetened condensed milk and powdered sugar until a thick, creamy mixture forms.
  • 4. To serve cake, run a knife along the edge of the cooled cake to gently loosen it from its pan. Turn cake out onto a plate and drizzle glaze over the top, allowing it to run down the sides of the cake.
  • 5. Cake can either be served immediately or chilled and served cold.

1 cup evaporated milk
3/4 cup sweetened condensed milk
1/4 cup sugar
1/4 cup of loose Thai tea leaves in a tea sock
5 large egg yolks

Steps:

  • In a medium sauce pan, stir together the heavy cream, evaporated milk, sweetened condensed milk, sugar, and tea. Place over moderate heat and warm until almost simmering. Turn off the heat, cover the pan, and let the mixture steep for at least 1 hour. The longer you steep, the stronger the tea flavor-I prefer a more pronounced tea flavor so I let mine steep for about 2 hours. Carefully squeeze the liquid from the tea sock then discard the tea. Over moderately low heat, warm the tea-infused milk mixture until almost simmering. Meanwhile, in a small bowl, whisk together 5 large egg yolks. Just before the mixture starts to simmer, turn off the heat. Slowly pour about 1 cup of the hot milk mixture into the egg yolks, whisking as you pour. Repeat one or two more times to temper the egg yolks then pour the egg and milk mixture back into the pan with the remaining milk and place over moderate heat. Cook the mixture, stirring constantly and scraping the bottom of the pan as you stir, until the mixture thickens. To test if it's ready, let the mixture coat the back of a wooden spoon, then use your finger to draw a thick line across the spoon-if the mixture holds the line, it's ready. Pour the ice cream through a fine-mesh strainer into a clean bowl and chill completely. Once cold, process the ice cream according to the manufacturer's instructions. Freeze until solid.

  • To make individual serving: pour 6-8 ounces into a glass. Add 1 tablespoon of Nestle creamer ( I add it while the tea is still slightly warm) and sweeten to taste. Stir to mix.
  • Pour in ice cubes.

Number Of Ingredients 7

1 (16-ounce) bottle unsweetened iced tea (recommended: Lipton)
1/4 cup vanilla chai latte mix (recommended: Pacific Chai)
1/4 cup sweetened condensed milk
8 drops yellow food coloring
4 drops red food coloring
2 shots Irish whiskey and cream based liqueur, optional (recommended: Bailey's Irish Cream)
Ice cubes

Steps:

  • Heat tea in a pot on the stove until hot, but not boiling. Add sweetened condensed milk and chai latte mix. Stir until latte mix is dissolved. Stir in remaining ingredients and let cool to room temperature. Stir in Irish whiskey and cream-based liqueur, if desired.
  • Fill highball or iced tea glass with ice. Pour tea over ice.
