RICE COOKER RICE PILAF

My husband loves this rice pilaf. Everytime I make rice he requests it. Hopefull you'll like it too! It takes a little extra preparation than a rice mix, but I think it's well worth it. You can also use wild rice, instead of white rice, but you'll need to add more liquid and it will take longer to cook.

1 1/2 cups white rice (I use jasmine, but any white rice will work)
2 cups chicken broth
1/4 cup slivered almonds
1 cup sliced mushrooms
1/2 small onion, diced
2 teaspoons margarine or 2 teaspoons butter
2 teaspoons minced garlic cloves

Steps:

  • In a small frying pan over medium heat, sautee the onion and garlic until onion is translucent. The garlic will cause the onion to scorch a bit, don't worry, it gives it flavor.
  • Add the rice, sauted onion and garlic, almonds, mushrooms, and chicken broth to a 4 cup capacity or larger rice cooker.
  • Stir briefly to distribute ingredients.
  • Set to cook. When done, let sit for 10 minutes.
  • Stir and enjoy!
  • Depending on your rice cooker, the bottom may get brown. I like it, it gives it some extra zip!

Enjoy these zesty chicken thighs that are slow cooked with chicken broth, herbs and Chinese spices for an Asian style dinner- serve with white rice.

8 bone-in chicken thighs (about 2 lb.), skin removed
2 garlic cloves, minced
1 cup chopped onions
2 medium stalks celery, sliced
2 teaspoons grated gingerroot
1 teaspoon Chinese five-spice powder
1/2 teaspoon salt
1/2 teaspoon grated lemon peel
2 (14-oz.) cans chicken broth
2 cups uncooked regular long-grain white rice
4 cups water
6 tablespoons sliced green onions
6 teaspoons chopped fresh cilantro

Steps:

  • Place chicken thighs in 3 1/2 to 4-quart slow cooker. Top with garlic, onions, celery, gingerroot, five-spice powder, salt and lemon peel. Add broth.
  • Cover; cook on low setting for 5 to 6 hours.
  • About 30 minutes before serving, cook rice in water as directed on package. With slotted spoon, remove chicken from slow cooker; cool until able to handle. Cut chicken from bones; return chicken to slow cooker. Discard bones.
  • To serve, divide rice evenly into individual large shallow soup bowls, spreading rice up sides of bowls. Add chicken and broth. Sprinkle each with 1 tablespoon green onions and 1 teaspoon cilantro.

1 cup raw rice
1/4 cup butter
16 ounces tomatoes, mashed
2 1/2 cups water
1 teaspoon marjoram
6 cups thin sliced celery

Steps:

  • Saute onion, rice, celery in butter.
  • Stir in rest ingredients, bring to a boil.
  • Then simmer 20 minute or until rice is cooked.

1 tablespoon lemongrass, peeled and finely chopped
1 teaspoon fresh ginger, peeled and finely chopped
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
1 cup brown basmati rice
2 3/4 cups low sodium chicken broth
1 teaspoon lime rind, grated
1/4 teaspoon salt
1/4 cup fresh cilantro, chopped
6 lime wedges

Steps:

  • Heat oil in large nonstick skillet over med high.
  • Add onion and next 4 ingredients; saute 3 min or til onion is tender.
  • Add rice; saute 1 minute.
  • Stir in broth, rind and salt; bring to a boil.
  • Cover, reduce heat and simmer 45 min or til rice is tender.
  • Remove from heat and let stand 10 minute.
  • Stir in cilantro.
  • Serve with lime wedges.

I think this recipe came from Canadian Living magazine, but am not sure. The whole meal (which is comprised of Recipe #239788, Recipe #239892, Recipe #239789 and Recipe #239791) embodies the Thai tradition of combining all the five tastes: sweet, hot, sour, salty and bitter in one meal.

1 cup jasmine rice
2 teaspoons vegetable oil
2 garlic cloves, minced
1 onion, chopped
1 teaspoon gingerroot, minced
3/4 cup coconut milk
1/2 teaspoon salt

Steps:

  • Rinse jasmine rice under cold running water until water runs clear. Let drain. Set aside.
  • In a saucepan, heat oil over medium heat; cook garlic, onion and gingerroot, stirring occasionally, for 5 minutes or until softened. Stir in coconut milk and 1-1/4 cups water; bring to boil.
  • Stir in rice; cover, reduce heat to low and simmer for about 20 minutes or until rice is tender and liquid is absorbed. Remove from heat; let stand, covered for 5 minutes. With a fork stir in salt.
