Makeover Chocolate Texas Sheet Cake image

From the magazine, "Taste of Home, Recipe Makeovers" Vol. 4, 2006. One of my most favorite cakes, but healthier for us. When doing a search, I could not find one here. Note: I like to spread the frosting on the cake while it is still a little warm. You should know that the test kitchen used Land O'Lakes light stick butter and Splenda blend.

1/2 cup butter, cubed
1 cup water
1/4 cup baking cocoa
1 cup all-purpose flour
1 cup cake flour
1 cup Splenda Sugar Blend for Baking
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs, lightlly beaten
1/2 cup reduced-fat sour cream
1/2 cup unsweetened applesauce
1/2 cup reduced-fat butter, softened
3 cups confectioners' sugar
1/4 cup baking cocoa
1 teaspoon vanilla extract
2 -3 tablespoons nonfat milk

Steps:

  • Sheet Cake:.
  • In a saucepan, bring the butter, water and cocoa to a boil. Remove from the heat.
  • Combine the flours, Splenda blend, baking soda and salt; stir into the butter mixture, blending well.
  • Combine the eggs, sour cream and applesauce; stir into butter mixture until blended.
  • Transfer to a 15-in x 10-in x 1-in baking pan coated with nonstick spray.
  • Bake at 350 degrees for 18-25 minutes or until a toothpick inserted near the center comes out clean.
  • Cool on a wire rack.
  • Frosting:.
  • In a large bowl, beat butter and confectioners' sugar.
  • Add cocoa, vanilla and enough milk to achieve desired consistency.
  • Spread over cake.

1 (18 1/4 ounce) package white cake mix
1 cup buttermilk
1/3 cup butter, melted
4 egg whites
1/4 teaspoon almond extract
1 cup chopped pecans
1/2 cup butter
1 cup light brown sugar
1/2 cup buttermilk
2 cups powdered sugar
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract

Steps:

  • Beat together the first 5 ingredients at low speed with an electric mixer 2 minutes or until blended. Pour batter into a greased 15x10 inch jelly roll pan.
  • Bake at 350°F for 15-20 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 2 hours. Make Caramel Pecan frosting and pour immediately over cooled cake in pan, and spread quickly to cover cake.
  • FROSTING:.
  • Place chopped pecans in a single layer in a shallow pan. Bake at 350°F for 6 minutes or until lightly toasted.
  • Bring butter and brown sugar to a boil in a 3 1/2 quart saucepan over medium heat, whisking constantly (about 2 minutes). Remove from heat and slowly whisk in buttermilk.
  • Return mixture to heat, and bring to a boil. Pour into bowl of a heavy duty electric stand mixer. Gradually add powdered sugar, vanilla extract and almond extracts,beating at medium-high speed until smooth(about 1 minute). Stir in pecans. Use immediately.

2 tablespoons skim milk
1/2 cup sliced almonds, toasted

Steps:

  • In a large saucepan, bring butter and water just to a boil. Immediately remove from heat; stir in flour, sugar, eggs, sour cream, applesauce, salt, baking powder, extract and baking soda until smooth.
  • Pour into a 15X10X1 inch baking pan coated with nonstick spray. Bake at 375 for 15-20 minutes or until golden brown and a toothpick comes out clean. Cool on a wire rack for 20 minutes.
  • For frosting, in a small mixing bowl, beat butter and extract until smooth. Gradually beat in powdered sugar. Add milk; beat until smooth. Spread over warm cake; sprinkle with almonds. Cool completely.

2 teaspoons all-purpose flour
2 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup water
1/2 cup butter
1/4 cup unsweetened cocoa
1/2 cup buttermilk
1 teaspoon vanilla extract
2 large eggs
6 tablespoons butter
1/3 cup nonfat milk
1/4 cup unsweetened cocoa
3 cups powdered sugar
1/4 cup chopped pecans, toasted
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 375 degrees.
  • To prepare cake, coat a sheet pan with cooking spray and dust with the 2 teaspoons flour.
  • Combine 2 cups flour, granulated sugar, baking soda, cinnamon, and salt in a large bowl. Stir well with a whisk.
  • Combine water, 1/2 cup butter, and 1/4 cup cocoa in a small saucepan. Bring to a boil, stirring frequently. Remove from heat, pour into flour mixture. Beat with a mixer at medium speed until well blended. Add buttermilk, 1 teaspoon vanilla extract, and eggs. Beat well.
  • *If you do not have buttermilk, you can substitute nonfat milk and mayonnaise. In a half cup measuring cup, fill halfway with milk and then spoon in mayonnaise until full.
  • Pour batter into prepared pan and bake at 375 degrees for 17 minutes or until a wooden toothpick inserted in center comes out clean. Place on a wire rack.
  • To prepare icing, combine 6 tablespoons butter, milk, and 1/4 cup cocoa in a medium saucepan. Bring to a boil, stirring constantly. Remove from heat. Gradually stir in powdered sugar, pecans, and 2 teaspoons vanilla extract. Spread over hot cake. Cool completely on wire rack.
  • You can also make this cake in a 13x9 baking pan. Bake at 375 degrees for 22 minutes.
