PREP: 15 MINUTES; COOK: 6 HRS., 30 MINUTES This recipe is fast and easy--your family will love it. I found it in SOUTHERN LIVING. You can probably substitute your favorite beans as well at the tomatoes. Green chilies are not manditory but it certainly adds a touch of spice. It's a very nice one-dish meal.

1 1/2 teaspoons salt, divided
1 1/2 teaspoons black pepper, divided
1 (14 1/2 ounce) can diced tomatoes, drained
1 (10 ounce) can diced tomatoes with mild green chilies, undrained
1 large sweet onion, cut into several pieces
1 tablespoon chili powder
1 (2 1/2 lb) roast beef, trimmed (eye-of-round is great)
2 tablespoons olive oil or 2 tablespoons vegetable oil
2 (16 ounce) cans pinto beans, drained
1 (15 ounce) can black beans, drained
pickled jalapeno pepper, sliced (optional)

Steps:

  • COMBINE: 1 teaspoon salt, 1 teaspoon black pepper, both cans of tomatoes , onion and 1 tablespoon chili powder in a medium bowl.
  • SPRINKLE roast with 1/2 teaspoon salt and 1/2 teaspoon black pepper and brown on all sides in a large Dutch oven over medium-high heat. Place roast in a 5-1/2 quart slow cooker and pour tomato mixture over it. Cover and cook on HIGH for 5 to 6 hours or until meat shreds easily.
  • REMOVE roast and cut into large chunks; keep warm.
  • SKIM fat from juices in slow cooker. Mash 1-1/2 cans (about 2-3/4 cups) pinto beans; add to slow cooker. Stir in black beans and remaining 1/2 can pinto beans. Add roast beef chunks into slow cooker and cook on HIGH for about 20 minutes. Place a jalapeno pepper slice on each serving, if desired.

3 lb beef roast
8 small white potatoes, cut in half
1 lb baby carrots
2 c salsa
1 large bell pepper
1 Tbsp fresh chopped cilantro
1 clove garlic, minced
2 Tbsp flour

Steps:

  • 1. Cut the potatoes in half. Place them in a 4 quart slow cooker.
  • 2. Seed the bell pepper and cut into thin strips.
  • 3. Coat the roast with the flour and place it on top of the potatoes.
  • 4. Sprinkle with salt and pepper to taste.
  • 5. Place the bell pepper strips over the top
  • 6. Arrange the carrots around the roast.Sprinkle with the minced garlic.
  • 7. Pour the salsa over the top.
  • 8. Cover and cook on high for 4 to 5 hours, or until roast is done.
  • 9. The last hour of cooking, add the cilantro.

3 -4 lbs beef chuck or 3 -4 lbs boneless bottom round roast
2 teaspoons salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
1 garlic clove, minced
2 tablespoons oil
1 cup beef broth
1 cup chopped onion
1/2 cup bottled chili sauce

Steps:

  • Mix together salt, pepper, paprika and garlic and rub into roast.
  • Cover and chill to marinate (overnight, if possible).
  • Brown well on both sides in oil, then place in crock pot and add beef broth and onions.
  • Cook 6 to 8 hours on low or until tender.
  • Add chili sauce the last hour of cooking.

4-5 Texas sized T-bone steaks
1/2 gallon water
1 onion,sliced
4-5 celery ribs,semi chunked
6-8 white potatoes cubed
1 tsp parsley flakes
1/2 tsp marjoram leaves
1/2 tsp thyme leaves
1-2 tbs crushed garlic
1 can whole tomatos
1-3 dashs of liquid smoke
1-3 dashs hot sauce
3-4 tbl flour to use as a thickening agent

Steps:

  • place all ingredients into the 12qt stock pot except for the flour. heat on the oven at med heat for bout 2 hours or until the meat is tender. when meat is tender...then mix flour with a little watter,whisk till pasted up. add to the pot roast and lower the heat to med until thickened.serve hot with a side of buttered biscuits or TEXAS toast...enjoy

How to make Texas Bodacious Pot Roast

Ingredients
2 Tbsp. Central Market Grapeseed Oil
3 lb. boneless beef chuck or shoulder roast
2 Tbsp. Adams Reserve Garlic and Peppercorn Sear 'N Crust Rub
3 sprigs fresh rosemary
1 c. each: diced onion and celery
1 btl. Texas on the Plate Bodacious Red Soppin' Sauce
1 can H-E-B Fire-Roasted Diced Tomatoes
1 small bag baby carrots

Steps:

  • Heat oven to 325°F. Heat oil in a large, oven-safe pot or Dutch oven over medium-high heat.
  • Coat roast with Adams seasoning rub and sear on all sides. Add rosemary, onions, celery, soppin' sauce and tomatoes (including juice). Cover with a tight fitting lid or aluminum foil.
  • Bake in oven 2 1/2 hours. Add carrots, cover, and return to oven for 30 - 45 minutes or until roast is very tender. Remove from oven and let roast rest 5 or 10 minutes before slicing or shredding, as desired. Serve with carrots and pan juices.
